錦州道光(guang)(guang)廿五(wu)白(bai)酒(jiu),是沿襲(xi)肴古老的滿(man)族釀(niang)(niang)酒(jiu)技(ji)藝(yi)釀(niang)(niang)造(zao)(zao)的白(bai)酒(jiu)。生產道光(guang)(guang)廿五(wu)白(bai)酒(jiu)的遼寧道光(guang)(guang)廿五(wu)集團,前身(shen)是清(qing)代朝廷(ting)內務府,于(yu)清(qing)嘉慶六年1845年,在錦州糧莊頒(ban)發“龍票”(朝廷(ting)頒(ban)發的允許開(kai)燒鍋的大照),由(you)錦州羅(luo)臺子(zi)莊頭(tou)瓜爾佳漢姓高(gao)氏人高(gao)上林(lin),開(kai)辦的同盛金燒鍋,以釀(niang)(niang)造(zao)(zao)供清(qing)廷(ting)所用(yong)的滿(man)族風味(wei)燒酒(jiu)。
1950年(nian),同盛金燒(shao)鍋被人民政府接管,更名(ming)(ming)凌(ling)(ling)川(chuan)酒(jiu)(jiu)(jiu)(jiu)(jiu)廠,生(sheng)產(chan)的白(bai)酒(jiu)(jiu)(jiu)(jiu)(jiu)命名(ming)(ming)“凌(ling)(ling)川(chuan)白(bai)酒(jiu)(jiu)(jiu)(jiu)(jiu)”。凌(ling)(ling)川(chuan)白(bai)酒(jiu)(jiu)(jiu)(jiu)(jiu)的釀酒(jiu)(jiu)(jiu)(jiu)(jiu)工(gong)藝,仍嚴格沿襲同盛金燒(shao)鍋的滿族傳統制酒(jiu)(jiu)(jiu)(jiu)(jiu)工(gong)藝。1996年(nian)老廠搬遷時(shi),在老廠庫房的地基下,挖(wa)掘出土了(le)封存于(yu)道光(guang)25年(nian)1845俥、穴藏了(le)151年(nian)的同盛金燒(shao)鍋老酒(jiu)(jiu)(jiu)(jiu)(jiu),被命名(ming)(ming)為道光(guang)廿(nian)(nian)五(wu)白(bai)酒(jiu)(jiu)(jiu)(jiu)(jiu)。由(you)此,企業也更名(ming)(ming)為遼(liao)寧道光(guang)廿(nian)(nian)五(wu)集(ji)團。
從凌(ling)川白酒(jiu)(jiu)到道(dao)(dao)光廿(nian)(nian)五(wu)白酒(jiu)(jiu)的(de)生產,都一直嚴格(ge)地沿襲著滿族傳(chuan)統(tong)釀酒(jiu)(jiu)工藝,形(xing)成了道(dao)(dao)光廿(nian)(nian)五(wu)白酒(jiu)(jiu),酒(jiu)(jiu)色微(wei)黃,酒(jiu)(jiu)體(ti)醇厚,陳香(xiang)適口、回味無(wu)窮的(de)獨特風格(ge)。
道光(guang)廿(nian)五白(bai)(bai)酒(jiu)的(de)(de)生產,首先遵循滿(man)(man)族(zu)傳(chuan)(chuan)統(tong)釀酒(jiu)技藝的(de)(de)第(di)一要領:選擇了小凌河(he)谷錦州盆地豐(feng)沛、甘洌的(de)(de)水源。道光(guang)廿(nian)五白(bai)(bai)酒(jiu)的(de)(de)釀酒(jiu)原料,也是嚴格挑選滿(man)(man)族(zu)傳(chuan)(chuan)統(tong)釀酒(jiu)技藝所需的(de)(de)高梁、稗谷,薏(yi)米,輔料為(wei)谷皮。道光(guang)廿(nian)五白(bai)(bai)酒(jiu)的(de)(de)滿(man)(man)族(zu)傳(chuan)(chuan)統(tong)釀造技藝,是通過一代代有(you)著豐(feng)富的(de)(de)滿(man)(man)族(zu)釀酒(jiu)技藝的(de)(de)酒(jiu)師,通過言傳(chuan)(chuan)身教,艱辛(xin)而嚴格地保護并傳(chuan)(chuan)承著。
