北京鴨(ya)是世界(jie)著名的(de)優良肉用鴨(ya)標準品種。具(ju)有生長發育快、育肥性(xing)能好的(de)特(te)點(dian),是聞名中(zhong)外“北京烤鴨(ya)”的(de)制作原(yuan)料(liao)。原(yuan)產于北京西郊玉泉山一帶,現已遍布世界(jie)各地,在國際養鴨(ya)業(ye)中(zhong)占(zhan)有重要地位。
國內北京(jing)鴨(ya)肉(rou)用性能(neng)尚低于國外(wai)先(xian)進(jin)水平,其中早期生產速(su)度差距(ju)較大,其他如成活率(lv)、孵(fu)化率(lv)及胸(xiong)肉(rou)率(lv)等均有(you)差距(ju)。
品種特征
鳥綱(gang)雁(yan)形目鴨(ya)科動(dong)物。由綠頭鴨(ya)馴化(hua)而來,是家鴨(ya)的優良品種之一(yi)。
北京鴨原產于北京玉泉山(shan)一(yi)帶(dai),因(yin)此而(er)得名。它的(de)馴養(yang)歷史至(zhi)少有200~300年(nian)。羽毛(mao)純(chun)白色,嘴(zui)、腿(tui)和蹼呈(cheng)橘紅色,頭和喙較短,頸(jing)長(chang),體(ti)質健(jian)壯,生長(chang)快,剛出(chu)生時(shi)體(ti)重約56克(ke)(ke)。60天就可達2~2.5千克(ke)(ke)。雄鴨可長(chang)到3~4千克(ke)(ke)。雌鴨成熟早,一(yi)般長(chang)到6~7個月(yue)就開始產卵(luan)(luan)。年(nian)產卵(luan)(luan)70~120枚。北京鴨肉(rou)肥味(wei)美,馳名中外(wai)的(de)北京烤鴨,就是用北京鴨烤制而(er)成的(de)。北京鴨已傳入外(wai)國,世界各國都有分(fen)布。
北京鴨體型碩大(da)豐(feng)滿(man),挺拔美觀。頭較大(da)。喙(hui)(hui)中等大(da)小。眼(yan)大(da)而明亮。頸粗、中等長(chang)。體軀(qu)(qu)長(chang)方(fang),前(qian)部(bu)昂起(qi)(qi),與地面約是30°角,背寬平,胸(xiong)部(bu)豐(feng)滿(man),胸(xiong)骨長(chang)而直.兩翅較小而緊附于體軀(qu)(qu)。尾(wei)短而上翹,公鴨有(you)4根卷(juan)起(qi)(qi)的性(xing)羽(yu)。產(chan)蛋母鴨因(yin)輸(shu)卵管(guan)發達而腹(fu)部(bu)豐(feng)滿(man),顯得后(hou)軀(qu)(qu)大(da)于前(qian)軀(qu)(qu),腿短粗,蹼(pu)寬厚。全(quan)身(shen)羽(yu)毛(mao)豐(feng)滿(man),羽(yu)色(se)純白并帶有(you)奶油(you)光澤;喙(hui)(hui)、脛(jing)、蹼(pu)橙黃(huang)色(se)或橘紅(hong)(hong)色(se);虹彩藍(lan)灰色(se)。初(chu)生(sheng)雛鴨絨羽(yu)金黃(huang)色(se),稱(cheng)為(wei)“鴨黃(huang)”,隨口齡增加顏色(se)逐漸變淺,至(zhi)金周(zhou)齡前(qian)后(hou)變成白色(se);至(zhi)60日齡羽(yu)毛(mao)長(chang)齊,喙(hui)(hui) 、進發、蹼(pu)橘紅(hong)(hong)色(se)。

肥肝性能
北(bei)(bei)京(jing)鴨有較好的(de)肥(fei)肝性(xing)(xing)能,是國外生(sheng)產(chan)肥(fei)肝的(de)主要(yao)鴨種,用80~90日齡北(bei)(bei)京(jing)鴨或北(bei)(bei)京(jing)鴨與瘤頭鴨雜交的(de)雜種鴨,填(tian)(tian)飼(si) 2~3周,每只(zhi)可產(chan)肥(fei)肝 300~400 g,而(er)且填(tian)(tian)肥(fei)鴨的(de)增重快,可達到肝、肉雙收的(de)目的(de)。我國從1980年(nian)開始(shi)用北(bei)(bei)京(jing)鴨試填(tian)(tian)肥(fei)胖,1980年(nian)上海(hai)市青浦縣徐(xu)涇(jing)肥(fei)肝場用北(bei)(bei)京(jing)鴨生(sheng)產(chan)肥(fei)肝10余。3、產(chan)蛋性(xing)(xing)能北(bei)(bei)京(jing)鴨不(bu)僅具有優良肉用性(xing)(xing)能,而(er)且具有很高的(de)產(chan)蛋性(xing)(xing)能。60年(nian)代以前,曾直認為(wei)(wei)北(bei)(bei)京(jing)鴨的(de)年(nian)產(chan)蛋量(liang)為(wei)(wei) 180個(ge),蛋重為(wei)(wei)90g以上。
養(yang)殖場人工(gong)強(qiang)制換(huan)羽(yu)(yu)是我(wo)(wo)國北京(jing)鴨(ya)(ya)(ya)生產(chan)(chan)(chan)(chan)(chan)的(de)傳統(tong)種(zhong)鴨(ya)(ya)(ya)管理技術。種(zhong)鴨(ya)(ya)(ya)在第一(yi)個(ge)(ge)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)期(qi)末(mo),即產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)9~10個(ge)(ge)月以后,產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)率。種(zhong)蛋(dan)(dan)(dan)(dan)(dan)質(zhi)量和受精率均開始下降。此時,通過短期(qi)限制飼(si)喂(wei)、飲水和照明等措施,迫使母(mu)鴨(ya)(ya)(ya)停產(chan)(chan)(chan)(chan)(chan)換(huan)羽(yu)(yu),并于(yu)40~50d內恢復產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan),利用(yong)第二個(ge)(ge)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)期(qi)。經過人工(gong)強(qiang)制換(huan)羽(yu)(yu)的(de)鴨(ya)(ya)(ya)群復產(chan)(chan)(chan)(chan)(chan)整齊一(yi)致,保持較高的(de)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)率、種(zhong)蛋(dan)(dan)(dan)(dan)(dan)受精率和孵化(hua)率。一(yi)般第二個(ge)(ge)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)期(qi)多(duo)為6個(ge)(ge)月左右(you)。在兩個(ge)(ge)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)期(qi)內,每只母(mu)鴨(ya)(ya)(ya)可(ke)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)280~290個(ge)(ge)。60年(nian)代以來,國外肉鴨(ya)(ya)(ya)生產(chan)(chan)(chan)(chan)(chan)中亦開始采用(yong)人工(gong)強(qiang)制換(huan)羽(yu)(yu),而我(wo)(wo)國的(de)北京(jing)鴨(ya)(ya)(ya)場中有(you)許多(duo)卻改為僅利用(yong)種(zhong)鴨(ya)(ya)(ya)的(de)頭一(yi)個(ge)(ge)產(chan)(chan)(chan)(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)年(nian),80年(nian)代初,有(you)些鴨(ya)(ya)(ya)場又(you)開始采用(yong)人工(gong)強(qiang)制換(huan)羽(yu)(yu)。
蛋的品質
據1983年中國農業科學院(yuan)畜(chu)牧(mu)研究所測定,72周齡種鴨蛋(dan)(dan)351個,平均蛋(dan)(dan)重為 103 g,蛋(dan)(dan)殼厚(hou)為 0.358 mm,蛋(dan)(dan)殼強度為 4.9 kg/cm2,蛋(dan)(dan)形指數為 1.41,哈氏單位。為73.1。
繁殖性能
性成(cheng)熟期為(wei)150~180日齡。公母(mu)(mu)配(pei)種(zhong)比例多(duo)為(wei)1:5。種(zhong)蛋(dan)受(shou)精率為(wei)90%以上(shang)。受(shou)精蛋(dan)孵化率為(wei)80 %左右(you)。成(cheng)活(huo)率:1~28日齡雛鴨(ya)成(cheng)活(huo)率為(wei)95%以上(shang)。一般生產場每(mei)(mei)只(zhi)母(mu)(mu)鴨(ya)可年生產(繁殖)80只(zhi)左右(you)肉(rou)鴨(ya)或填鴨(ya)。育(yu)種(zhong)場的每(mei)(mei)只(zhi)母(mu)(mu)鴨(ya)年產肉(rou)鴨(ya)100只(zhi)以上(shang)。
生活習性
北(bei)京鴨(ya)性(xing)情(qing)(qing)溫馴,膽(dan)小怕驚,非(fei)常合群(qun)。北(bei)京鴨(ya)作為水禽,種鴨(ya)交配(pei)一般(ban)選擇早晨(chen)或傍晚在(zai)(zai)廣闊的水面進(jin)行(xing)。但(dan)在(zai)(zai)人(ren)工旱養條件下種鴨(ya)也(ye)能(neng)交配(pei),正常情(qing)(qing)況下,成年種鴨(ya)產蛋(dan)主要(yao)集中在(zai)(zai)午夜以后(hou)到黎明以前這(zhe)段時間,此時夜深人(ren)靜,沒(mei)有(you)任何(he)吵(chao)擾,最適合鴨(ya)類繁殖后(hou)代(dai)的特殊要(yao)求,北(bei)京鴨(ya)一般(ban)不(bu)在(zai)(zai)白(bai)天產蛋(dan)。

英“混血”鴨取代北京鴨
國(guo)(guo)家環保總局日前公(gong)布一份(fen)資(zi)料指出(chu),中國(guo)(guo)本(ben)土(tu)物種遺傳(chuan)資(zi)源(yuan)流失狀況(kuang)堪憂,由于(yu)本(ben)地物種資(zi)料保護意識(shi)落后(hou)(hou),中國(guo)(guo)正成為發達(da)國(guo)(guo)家攫(jue)取遺傳(chuan)資(zi)源(yuan)的(de)新目(mu)標。中國(guo)(guo)的(de)野生(sheng)大豆、奇異果甚至家禽(qin)都被發達(da)國(guo)(guo)家拿走,“混血”改良后(hou)(hou)再重新用來搶占中國(guo)(guo)市(shi)場。
專(zhuan)家薛達元(yuan)教授表示(shi),中(zhong)(zhong)國(guo)本(ben)土物種流失最突出的例子是“北(bei)京鴨”,該品(pin)種在英國(guo)被(bei)雜交后繁育(yu)出來新良種“櫻桃谷”鴨,后來,英國(guo)繁育(yu)的“櫻桃谷”鴨又重(zhong)新被(bei)引種到中(zhong)(zhong)國(guo),占領中(zhong)(zhong)國(guo)的市(shi)場。現(xian)在,在中(zhong)(zhong)國(guo)真正(zheng)的“北(bei)京鴨”幾乎絕跡,而重(zhong)新由英國(guo)引進(jin)的“櫻桃谷”鴨,成為北(bei)京烤鴨的主要原料。
北(bei)京鴨引入美國惹轟動
北(bei)(bei)(bei)京鴨(ya)(ya)(ya)的(de)(de)(de)物種(zhong)(zhong)(zhong)遺傳(chuan)資源最早從(cong)中國(guo)流傳(chuan)至外國(guo)是在清朝,美國(guo)人(ren)詹姆(mu)斯·帕爾默于(yu)1873年(nian)(nian)從(cong)天津將(jiang)北(bei)(bei)(bei)京鴨(ya)(ya)(ya)運至美國(guo),從(cong)此北(bei)(bei)(bei)京鴨(ya)(ya)(ya)的(de)(de)(de)物種(zhong)(zhong)(zhong)遺傳(chuan)資料(liao)流出(chu)國(guo)外。同年(nian)(nian),英(ying)國(guo)人(ren)克爾又將(jiang)北(bei)(bei)(bei)京鴨(ya)(ya)(ya)的(de)(de)(de)種(zhong)(zhong)(zhong)蛋(dan)引入英(ying)國(guo),1875年(nian)(nian),英(ying)國(guo)人(ren)將(jiang)填(tian)肥(fei)的(de)(de)(de)北(bei)(bei)(bei)京鴨(ya)(ya)(ya)海運至美國(guo),立刻引起美國(guo)市場的(de)(de)(de)轟(hong)動。當時有文章寫道:(北(bei)(bei)(bei)京鴨(ya)(ya)(ya))樣品既出(chu),社會(hui)耳目為之(zhi)一新,紳士名媛,交與(yu)不置。購(gou)者驟多,供給缺乏。一時價格騰貴,每卵一枚,當金(jin)元(yuan)一元(yuan)之(zhi)價,美國(guo)社會(hui),遂有鴨(ya)(ya)(ya)即金(jin)磚之(zhi)榮稱。
英(ying)國的櫻桃(tao)谷鴨(ya)(ya),美國長(chang)島鴨(ya)(ya)等(deng)都是在(zai)(zai)北京鴨(ya)(ya)的基礎上選育而(er)(er)成的。現在(zai)(zai)英(ying)國的櫻桃(tao)谷鴨(ya)(ya),已經取代北京鴨(ya)(ya),成為“北京烤鴨(ya)(ya)”的主要(yao)原(yuan)料。中(zhong)國輸出(chu)北京鴨(ya)(ya)的物種時,沒(mei)有獲利,現在(zai)(zai)引進英(ying)國的櫻桃(tao)谷鴨(ya)(ya)種,反而(er)(er)還(huan)必須用外匯(hui)購買,造(zao)成巨大的經濟損(sun)失。
