北(bei)京鴨(ya)(ya)是(shi)世界著名(ming)的(de)優良肉用鴨(ya)(ya)標準品種(zhong)。具有生長發(fa)育快、育肥性能(neng)好的(de)特(te)點,是(shi)聞名(ming)中(zhong)外(wai)“北(bei)京烤鴨(ya)(ya)”的(de)制作(zuo)原(yuan)料。原(yuan)產于(yu)北(bei)京西(xi)郊(jiao)玉泉山一(yi)帶(dai),現已遍布(bu)世界各地(di),在國際(ji)養鴨(ya)(ya)業中(zhong)占有重要地(di)位。
國內北京(jing)鴨(ya)肉用性能尚低于(yu)國外(wai)先(xian)進(jin)水平,其中早期(qi)生產速度差距(ju)較大,其他(ta)如成活(huo)率、孵(fu)化(hua)率及胸肉率等(deng)均有差距(ju)。
品種特征
鳥(niao)綱雁形目鴨科動物(wu)。由綠頭鴨馴化(hua)而(er)來,是家鴨的(de)優良(liang)品種之(zhi)一。
北(bei)(bei)京(jing)(jing)鴨(ya)原產(chan)于(yu)北(bei)(bei)京(jing)(jing)玉泉(quan)山一帶(dai),因此而(er)得名(ming)。它(ta)的(de)馴養歷史至少有(you)200~300年(nian)。羽毛純白色,嘴、腿和(he)蹼呈橘(ju)紅色,頭和(he)喙較(jiao)短(duan),頸長(chang),體質健壯,生(sheng)長(chang)快(kuai),剛出生(sheng)時體重(zhong)約56克。60天就(jiu)可達2~2.5千(qian)克。雄鴨(ya)可長(chang)到3~4千(qian)克。雌鴨(ya)成熟早,一般長(chang)到6~7個月(yue)就(jiu)開始產(chan)卵。年(nian)產(chan)卵70~120枚。北(bei)(bei)京(jing)(jing)鴨(ya)肉肥味(wei)美,馳名(ming)中(zhong)外的(de)北(bei)(bei)京(jing)(jing)烤(kao)鴨(ya),就(jiu)是用(yong)北(bei)(bei)京(jing)(jing)鴨(ya)烤(kao)制而(er)成的(de)。北(bei)(bei)京(jing)(jing)鴨(ya)已傳入外國,世界各國都有(you)分布。
北京鴨(ya)(ya)體(ti)型碩(shuo)大(da)豐(feng)滿(man),挺拔美觀。頭較(jiao)大(da)。喙(hui)(hui)中等(deng)(deng)大(da)小。眼大(da)而(er)(er)明亮。頸粗、中等(deng)(deng)長。體(ti)軀長方,前(qian)部(bu)昂起(qi),與(yu)地面(mian)約(yue)是(shi)30°角(jiao),背(bei)寬平,胸部(bu)豐(feng)滿(man),胸骨(gu)長而(er)(er)直(zhi).兩翅較(jiao)小而(er)(er)緊附于(yu)體(ti)軀。尾(wei)短而(er)(er)上翹,公鴨(ya)(ya)有(you)4根卷起(qi)的(de)性(xing)羽(yu)。產蛋(dan)母(mu)鴨(ya)(ya)因輸卵管發達(da)而(er)(er)腹部(bu)豐(feng)滿(man),顯得后(hou)(hou)軀大(da)于(yu)前(qian)軀,腿(tui)短粗,蹼(pu)寬厚。全(quan)身羽(yu)毛豐(feng)滿(man),羽(yu)色(se)純白并(bing)帶有(you)奶油光澤;喙(hui)(hui)、脛、蹼(pu)橙(cheng)黃(huang)色(se)或橘紅色(se);虹彩藍灰色(se)。初生雛(chu)鴨(ya)(ya)絨羽(yu)金(jin)黃(huang)色(se),稱為“鴨(ya)(ya)黃(huang)”,隨口(kou)齡(ling)(ling)增加顏色(se)逐漸(jian)變淺,至金(jin)周齡(ling)(ling)前(qian)后(hou)(hou)變成白色(se);至60日齡(ling)(ling)羽(yu)毛長齊(qi),喙(hui)(hui) 、進發、蹼(pu)橘紅色(se)。

肥肝性能
北(bei)京鴨(ya)(ya)(ya)有較好的(de)(de)(de)(de)肥(fei)(fei)(fei)(fei)肝性(xing)能(neng),是國(guo)外(wai)生產肥(fei)(fei)(fei)(fei)肝的(de)(de)(de)(de)主要鴨(ya)(ya)(ya)種(zhong),用80~90日齡(ling)北(bei)京鴨(ya)(ya)(ya)或北(bei)京鴨(ya)(ya)(ya)與瘤頭鴨(ya)(ya)(ya)雜交的(de)(de)(de)(de)雜種(zhong)鴨(ya)(ya)(ya),填(tian)飼 2~3周(zhou),每只可產肥(fei)(fei)(fei)(fei)肝 300~400 g,而且(qie)(qie)填(tian)肥(fei)(fei)(fei)(fei)鴨(ya)(ya)(ya)的(de)(de)(de)(de)增重快,可達到肝、肉雙收(shou)的(de)(de)(de)(de)目的(de)(de)(de)(de)。我國(guo)從1980年(nian)開(kai)始用北(bei)京鴨(ya)(ya)(ya)試填(tian)肥(fei)(fei)(fei)(fei)胖(pang),1980年(nian)上(shang)海市青浦縣(xian)徐涇肥(fei)(fei)(fei)(fei)肝場用北(bei)京鴨(ya)(ya)(ya)生產肥(fei)(fei)(fei)(fei)肝10余。3、產蛋(dan)性(xing)能(neng)北(bei)京鴨(ya)(ya)(ya)不(bu)僅(jin)具有優良肉用性(xing)能(neng),而且(qie)(qie)具有很高的(de)(de)(de)(de)產蛋(dan)性(xing)能(neng)。60年(nian)代(dai)以前,曾(ceng)直認為北(bei)京鴨(ya)(ya)(ya)的(de)(de)(de)(de)年(nian)產蛋(dan)量為 180個,蛋(dan)重為90g以上(shang)。
養殖場(chang)人工強(qiang)制換羽(yu)是我國北(bei)京鴨(ya)(ya)(ya)生產(chan)(chan)的傳(chuan)統(tong)種(zhong)鴨(ya)(ya)(ya)管理技(ji)術。種(zhong)鴨(ya)(ya)(ya)在第一(yi)個產(chan)(chan)蛋(dan)(dan)期(qi)末(mo),即產(chan)(chan)蛋(dan)(dan)9~10個月(yue)以(yi)后,產(chan)(chan)蛋(dan)(dan)率(lv)。種(zhong)蛋(dan)(dan)質(zhi)量和受精率(lv)均開(kai)(kai)始(shi)下降(jiang)。此時,通過短期(qi)限制飼(si)喂、飲水和照明等措(cuo)施,迫(po)使(shi)母鴨(ya)(ya)(ya)停產(chan)(chan)換羽(yu),并于40~50d內(nei)恢復產(chan)(chan)蛋(dan)(dan),利用第二個產(chan)(chan)蛋(dan)(dan)期(qi)。經過人工強(qiang)制換羽(yu)的鴨(ya)(ya)(ya)群復產(chan)(chan)整齊一(yi)致,保(bao)持較(jiao)高(gao)的產(chan)(chan)蛋(dan)(dan)率(lv)、種(zhong)蛋(dan)(dan)受精率(lv)和孵化率(lv)。一(yi)般第二個產(chan)(chan)蛋(dan)(dan)期(qi)多(duo)為6個月(yue)左右。在兩個產(chan)(chan)蛋(dan)(dan)期(qi)內(nei),每(mei)只母鴨(ya)(ya)(ya)可產(chan)(chan)蛋(dan)(dan)280~290個。60年代以(yi)來,國外肉鴨(ya)(ya)(ya)生產(chan)(chan)中亦(yi)開(kai)(kai)始(shi)采用人工強(qiang)制換羽(yu),而我國的北(bei)京鴨(ya)(ya)(ya)場(chang)中有許(xu)多(duo)卻改為僅利用種(zhong)鴨(ya)(ya)(ya)的頭一(yi)個產(chan)(chan)蛋(dan)(dan)年,80年代初,有些(xie)鴨(ya)(ya)(ya)場(chang)又開(kai)(kai)始(shi)采用人工強(qiang)制換羽(yu)。
蛋的品質
據1983年(nian)中國農業科學院畜牧研(yan)究所測定(ding),72周齡種鴨(ya)蛋(dan)(dan)351個,平均(jun)蛋(dan)(dan)重(zhong)為(wei) 103 g,蛋(dan)(dan)殼厚(hou)為(wei) 0.358 mm,蛋(dan)(dan)殼強度為(wei) 4.9 kg/cm2,蛋(dan)(dan)形指數(shu)為(wei) 1.41,哈(ha)氏單位。為(wei)73.1。
繁殖性能
性成(cheng)(cheng)熟期(qi)為(wei)150~180日齡(ling)。公母配(pei)種(zhong)比例(li)多為(wei)1:5。種(zhong)蛋受精(jing)率(lv)為(wei)90%以上。受精(jing)蛋孵化(hua)率(lv)為(wei)80 %左右。成(cheng)(cheng)活率(lv):1~28日齡(ling)雛鴨(ya)成(cheng)(cheng)活率(lv)為(wei)95%以上。一般生產(chan)場(chang)每只(zhi)母鴨(ya)可(ke)年生產(chan)(繁殖)80只(zhi)左右肉鴨(ya)或填鴨(ya)。育種(zhong)場(chang)的每只(zhi)母鴨(ya)年產(chan)肉鴨(ya)100只(zhi)以上。
生活習性
北京鴨(ya)(ya)性情溫馴(xun),膽小(xiao)怕驚(jing),非常合群(qun)。北京鴨(ya)(ya)作(zuo)為水禽,種(zhong)鴨(ya)(ya)交配一(yi)(yi)般選擇(ze)早晨(chen)或傍晚在廣闊(kuo)的水面進(jin)行。但在人工(gong)旱(han)養條(tiao)件下種(zhong)鴨(ya)(ya)也能交配,正(zheng)常情況下,成年種(zhong)鴨(ya)(ya)產蛋(dan)主要(yao)集(ji)中在午夜以(yi)(yi)后(hou)到(dao)黎明(ming)以(yi)(yi)前這段時間,此時夜深人靜(jing),沒有任何吵擾,最適合鴨(ya)(ya)類繁殖后(hou)代的特殊要(yao)求,北京鴨(ya)(ya)一(yi)(yi)般不在白天(tian)產蛋(dan)。

英“混血(xue)”鴨(ya)取(qu)代北京鴨(ya)
國(guo)家(jia)(jia)(jia)環保總局(ju)日前(qian)公布(bu)一份(fen)資(zi)(zi)(zi)料(liao)指出,中(zhong)(zhong)國(guo)本土物種遺傳(chuan)資(zi)(zi)(zi)源(yuan)流失狀況堪憂,由于本地物種資(zi)(zi)(zi)料(liao)保護意(yi)識(shi)落后(hou),中(zhong)(zhong)國(guo)正成為(wei)發達國(guo)家(jia)(jia)(jia)攫取遺傳(chuan)資(zi)(zi)(zi)源(yuan)的新目標。中(zhong)(zhong)國(guo)的野生大豆(dou)、奇異果甚至家(jia)(jia)(jia)禽都(dou)被發達國(guo)家(jia)(jia)(jia)拿走,“混血”改良后(hou)再(zai)重新用來(lai)搶(qiang)占中(zhong)(zhong)國(guo)市場(chang)。
專家薛達元教授表示,中(zhong)國(guo)(guo)(guo)本土物種(zhong)流失最突出的(de)例子是(shi)“北(bei)京鴨(ya)”,該(gai)品種(zhong)在英(ying)國(guo)(guo)(guo)被(bei)雜交后繁育(yu)出來新良種(zhong)“櫻桃(tao)谷”鴨(ya),后來,英(ying)國(guo)(guo)(guo)繁育(yu)的(de)“櫻桃(tao)谷”鴨(ya)又重新被(bei)引(yin)種(zhong)到中(zhong)國(guo)(guo)(guo),占領中(zhong)國(guo)(guo)(guo)的(de)市場。現在,在中(zhong)國(guo)(guo)(guo)真正(zheng)的(de)“北(bei)京鴨(ya)”幾乎絕跡(ji),而重新由英(ying)國(guo)(guo)(guo)引(yin)進的(de)“櫻桃(tao)谷”鴨(ya),成(cheng)為北(bei)京烤鴨(ya)的(de)主(zhu)要原料(liao)。
北京鴨引入美國(guo)惹(re)轟(hong)動
北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya)的(de)(de)物(wu)種遺(yi)傳資源(yuan)最早從中國(guo)(guo)(guo)(guo)(guo)流傳至外(wai)國(guo)(guo)(guo)(guo)(guo)是在清朝,美國(guo)(guo)(guo)(guo)(guo)人(ren)(ren)(ren)詹姆斯·帕爾默(mo)于1873年(nian)從天津將北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya)運至美國(guo)(guo)(guo)(guo)(guo),從此北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya)的(de)(de)物(wu)種遺(yi)傳資料流出(chu)國(guo)(guo)(guo)(guo)(guo)外(wai)。同年(nian),英(ying)國(guo)(guo)(guo)(guo)(guo)人(ren)(ren)(ren)克(ke)爾又將北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya)的(de)(de)種蛋引入英(ying)國(guo)(guo)(guo)(guo)(guo),1875年(nian),英(ying)國(guo)(guo)(guo)(guo)(guo)人(ren)(ren)(ren)將填肥的(de)(de)北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya)海(hai)運至美國(guo)(guo)(guo)(guo)(guo),立刻引起美國(guo)(guo)(guo)(guo)(guo)市(shi)場的(de)(de)轟動。當時(shi)有文章寫道:(北(bei)(bei)京(jing)(jing)(jing)鴨(ya)(ya)(ya))樣品(pin)既出(chu),社會(hui)耳目(mu)為之一新(xin),紳(shen)士名媛,交與(yu)不置。購者(zhe)驟多,供給缺乏。一時(shi)價格騰貴(gui),每卵一枚,當金(jin)元一元之價,美國(guo)(guo)(guo)(guo)(guo)社會(hui),遂有鴨(ya)(ya)(ya)即(ji)金(jin)磚之榮(rong)稱(cheng)。
英國(guo)的(de)櫻桃(tao)谷(gu)鴨(ya),美國(guo)長(chang)島鴨(ya)等都是在(zai)北(bei)京鴨(ya)的(de)基礎上選育(yu)而成(cheng)的(de)。現(xian)(xian)在(zai)英國(guo)的(de)櫻桃(tao)谷(gu)鴨(ya),已(yi)經(jing)取代北(bei)京鴨(ya),成(cheng)為“北(bei)京烤鴨(ya)”的(de)主要原料。中國(guo)輸出(chu)北(bei)京鴨(ya)的(de)物種時(shi),沒有獲利,現(xian)(xian)在(zai)引進(jin)英國(guo)的(de)櫻桃(tao)谷(gu)鴨(ya)種,反(fan)而還必須(xu)用外匯購買,造(zao)成(cheng)巨大的(de)經(jing)濟損(sun)失。
