制作方式
燒(shao)(shao)鍋子(zi)(zi)(zi)(zi)一(yi)般選用(yong)(yong)亡好(hao)(hao)小(xiao)麥面(mian)(mian)(mian)(mian)(mian)(mian)制作,若用(yong)(yong)秦(qin)王(wang)川(chuan)砂地小(xiao)麥面(mian)(mian)(mian)(mian)(mian)(mian),則風味(wei)(wei)更(geng)佳。做(zuo)燒(shao)(shao)鍋子(zi)(zi)(zi)(zi)先用(yong)(yong)溫水(shui)把(ba)(ba)一(yi)塊發(fa)面(mian)(mian)(mian)(mian)(mian)(mian)浸泡成(cheng)(cheng)(cheng)糊,倒進面(mian)(mian)(mian)(mian)(mian)(mian)里(li),然后(hou)加水(shui)攪和,把(ba)(ba)面(mian)(mian)(mian)(mian)(mian)(mian)揉(rou)(rou)和均勻,軟硬適(shi)度(du)后(hou),置(zhi)于盆(pen)中(zhong),捂(wu)蓋嚴實(shi),放置(zhi)溫暖的(de)(de)炕頭或陽光下,使其發(fa)酵。待面(mian)(mian)(mian)(mian)(mian)(mian)發(fa)好(hao)(hao),再摻(chan)和少(shao)量(liang)干面(mian)(mian)(mian)(mian)(mian)(mian),兌人(ren)適(shi)量(liang)的(de)(de)蓬灰(或堿)水(shui),揉(rou)(rou)勻,去其酸(suan)味(wei)(wei)。揉(rou)(rou)好(hao)(hao)后(hou),切成(cheng)(cheng)(cheng)大小(xiao)適(shi)宜的(de)(de)面(mian)(mian)(mian)(mian)(mian)(mian)團,揉(rou)(rou)和成(cheng)(cheng)(cheng)形,裝進燒(shao)(shao)鍋,在(zai)上(shang)(shang)面(mian)(mian)(mian)(mian)(mian)(mian)打菱形刀花(hua),蓋上(shang)(shang)頂蓋,埋進燒(shao)(shao)旺(wang)的(de)(de)火堆內(nei)。煨火堆的(de)(de)燃料(liao)多為(wei)騾馬糞,以(yi)(yi)羊(yang)糞最(zui)佳。20多分鐘起(qi)鍋,一(yi)個皮色黃亮(liang),外(wai)脆(cui)里(li)暄的(de)(de)燒(shao)(shao)鍋子(zi)(zi)(zi)(zi)便做(zuo)成(cheng)(cheng)(cheng)了(le)。這是(shi)制作最(zui)簡易、最(zui)常吃(chi)的(de)(de)一(yi)種。若專為(wei)串親戚(qi)、探(tan)月子(zi)(zi)(zi)(zi)、看(kan)病人(ren)做(zuo)的(de)(de)燒(shao)(shao)鍋子(zi)(zi)(zi)(zi)就(jiu)更(geng)為(wei)講(jiang)究,要(yao)在(zai)發(fa)面(mian)(mian)(mian)(mian)(mian)(mian)中(zhong)兌和花(hua)椒(jiao)和小(xiao)茴香(xiang)水(shui),把(ba)(ba)發(fa)面(mian)(mian)(mian)(mian)(mian)(mian)搟薄,在(zai)上(shang)(shang)面(mian)(mian)(mian)(mian)(mian)(mian)涂抹(mo)清油,撒上(shang)(shang)苦(ku)豆或花(hua)椒(jiao)葉末,卷成(cheng)(cheng)(cheng)小(xiao)口杯粗(cu)細(xi)的(de)(de)圓柱體,橫切成(cheng)(cheng)(cheng)三寸許的(de)(de)小(xiao)段,之后(hou)用(yong)(yong)六個面(mian)(mian)(mian)(mian)(mian)(mian)段豎(shu)立(li)組連(lian)成(cheng)(cheng)(cheng)一(yi)體,裝人(ren)燒(shao)(shao)鍋內(nei)燒(shao)(shao)烤。這樣做(zuo)出的(de)(de)燒(shao)(shao)鍋子(zi)(zi)(zi)(zi),猶如重瓣蓮花(hua),好(hao)(hao)看(kan)好(hao)(hao)吃(chi),味(wei)(wei)道更(geng)為(wei)醇(chun)香(xiang)濃郁。若看(kan)月子(zi)(zi)(zi)(zi),娘家人(ren)和親戚(qi)們一(yi)定不會忘記在(zai)面(mian)(mian)(mian)(mian)(mian)(mian)里(li)加兌紅(hong)花(hua)水(shui),卷上(shang)(shang)紅(hong)花(hua)絲兒。“月婆子(zi)(zi)(zi)(zi)”吃(chi)了(le)這香(xiang)味(wei)(wei)十足(zu)的(de)(de)燒(shao)(shao)鍋子(zi)(zi)(zi)(zi),不但可以(yi)(yi)補養身子(zi)(zi)(zi)(zi),而且可以(yi)(yi)化瘀(yu)、活血、通經。故而永登(deng)有“發(fa)白面(mian)(mian)(mian)(mian)(mian)(mian)、摘紅(hong)花(hua),做(zuo)個燒(shao)(shao)鍋子(zi)(zi)(zi)(zi)去姐(jie)姐(jie)家。姐(jie)姐(jie)家里(li)干什(shen)么?姐(jie)姐(jie)生了(le)外(wai)甥娃……”的(de)(de)童謠。
制作容器
加工燒(shao)(shao)鍋(guo)(guo)(guo)子(zi)(zi)的(de)工具為(wei)高約(yue)5寸(cun),直(zhi)徑6寸(cun)許的(de)上(shang)下(xia)兩合鑄鐵(tie)小(xiao)鍋(guo)(guo)(guo),上(shang)蓋(gai)頂部拱形,外有(you)(you)提紐(niu),下(xia)底平(ping)展,合縫(feng)間有(you)(you)重沿“子(zi)(zi)扣(kou)”,疊(die)蓋(gai)十(shi)分嚴(yan)實,灰土纖塵(chen)不能鉆人里面(mian)。舊時,一些農(nong)(nong)家買不起鑄鐵(tie)燒(shao)(shao)鍋(guo)(guo)(guo),聰明(ming)的(de)農(nong)(nong)婦,就(jiu)用(yong)(yong)一片光滑的(de)小(xiao)石板做底,上(shang)面(mian)涂抹(mo)清油,放上(shang)面(mian)團,上(shang)面(mian)扣(kou)一個小(xiao)砂鍋(guo)(guo)(guo),同(tong)樣可以燒(shao)(shao)烤出(chu)味美可口的(de)燒(shao)(shao)鍋(guo)(guo)(guo)子(zi)(zi)來(lai),用(yong)(yong)石板沙鍋(guo)(guo)(guo)烤燒(shao)(shao)鍋(guo)(guo)(guo)子(zi)(zi)的(de)時代(dai)早(zao)已過去,如今永登農(nong)(nong)家除(chu)普遍(bian)使用(yong)(yong)鑄鐵(tie)鍋(guo)(guo)(guo)外,時下(xia)興用(yong)(yong)傳熱快(kuai)、導熱均勻的(de)鋁制(zhi)燒(shao)(shao)鍋(guo)(guo)(guo)。鋁鍋(guo)(guo)(guo)用(yong)(yong)起來(lai)省燃料(liao)、省時間,更(geng)受農(nong)(nong)民歡迎。
