制作方式
燒(shao)鍋(guo)子(zi)(zi)一(yi)(yi)般選(xuan)用(yong)(yong)亡好(hao)小(xiao)麥面(mian)(mian)(mian)(mian)制作,若(ruo)用(yong)(yong)秦(qin)王川砂(sha)地小(xiao)麥面(mian)(mian)(mian)(mian),則(ze)風味(wei)更(geng)佳(jia)。做燒(shao)鍋(guo)子(zi)(zi)先用(yong)(yong)溫水(shui)把(ba)一(yi)(yi)塊發面(mian)(mian)(mian)(mian)浸泡(pao)成(cheng)(cheng)糊(hu),倒(dao)進(jin)面(mian)(mian)(mian)(mian)里(li),然后加水(shui)攪和(he)(he),把(ba)面(mian)(mian)(mian)(mian)揉和(he)(he)均勻,軟(ruan)硬適度后,置于(yu)盆中(zhong),捂蓋嚴實(shi),放置溫暖的(de)(de)(de)(de)炕頭(tou)或陽光下,使其發酵。待面(mian)(mian)(mian)(mian)發好(hao),再摻和(he)(he)少量(liang)干面(mian)(mian)(mian)(mian),兌(dui)人(ren)(ren)適量(liang)的(de)(de)(de)(de)蓬灰(hui)(或堿(jian))水(shui),揉勻,去其酸味(wei)。揉好(hao)后,切成(cheng)(cheng)大小(xiao)適宜的(de)(de)(de)(de)面(mian)(mian)(mian)(mian)團(tuan),揉和(he)(he)成(cheng)(cheng)形,裝進(jin)燒(shao)鍋(guo),在(zai)(zai)(zai)上面(mian)(mian)(mian)(mian)打菱形刀花(hua)(hua),蓋上頂蓋,埋進(jin)燒(shao)旺的(de)(de)(de)(de)火堆(dui)內。煨火堆(dui)的(de)(de)(de)(de)燃料多(duo)(duo)為(wei)騾馬糞,以羊糞最(zui)佳(jia)。20多(duo)(duo)分鐘起鍋(guo),一(yi)(yi)個(ge)(ge)皮色黃亮,外(wai)脆里(li)暄的(de)(de)(de)(de)燒(shao)鍋(guo)子(zi)(zi)便做成(cheng)(cheng)了。這(zhe)是制作最(zui)簡(jian)易、最(zui)常吃(chi)的(de)(de)(de)(de)一(yi)(yi)種。若(ruo)專為(wei)串(chuan)親戚、探月子(zi)(zi)、看(kan)病人(ren)(ren)做的(de)(de)(de)(de)燒(shao)鍋(guo)子(zi)(zi)就更(geng)為(wei)講究,要(yao)在(zai)(zai)(zai)發面(mian)(mian)(mian)(mian)中(zhong)兌(dui)和(he)(he)花(hua)(hua)椒和(he)(he)小(xiao)茴香(xiang)(xiang)水(shui),把(ba)發面(mian)(mian)(mian)(mian)搟薄(bo),在(zai)(zai)(zai)上面(mian)(mian)(mian)(mian)涂抹清油,撒上苦豆或花(hua)(hua)椒葉末(mo),卷(juan)成(cheng)(cheng)小(xiao)口杯粗細(xi)的(de)(de)(de)(de)圓柱體(ti),橫切成(cheng)(cheng)三寸許的(de)(de)(de)(de)小(xiao)段(duan),之(zhi)后用(yong)(yong)六個(ge)(ge)面(mian)(mian)(mian)(mian)段(duan)豎(shu)立組連成(cheng)(cheng)一(yi)(yi)體(ti),裝人(ren)(ren)燒(shao)鍋(guo)內燒(shao)烤(kao)。這(zhe)樣做出的(de)(de)(de)(de)燒(shao)鍋(guo)子(zi)(zi),猶如重瓣蓮花(hua)(hua),好(hao)看(kan)好(hao)吃(chi),味(wei)道更(geng)為(wei)醇(chun)香(xiang)(xiang)濃郁。若(ruo)看(kan)月子(zi)(zi),娘家(jia)人(ren)(ren)和(he)(he)親戚們一(yi)(yi)定不會忘記(ji)在(zai)(zai)(zai)面(mian)(mian)(mian)(mian)里(li)加兌(dui)紅花(hua)(hua)水(shui),卷(juan)上紅花(hua)(hua)絲兒。“月婆子(zi)(zi)”吃(chi)了這(zhe)香(xiang)(xiang)味(wei)十(shi)足的(de)(de)(de)(de)燒(shao)鍋(guo)子(zi)(zi),不但可(ke)以補(bu)養身子(zi)(zi),而(er)且可(ke)以化瘀、活血、通經。故而(er)永登(deng)有“發白(bai)面(mian)(mian)(mian)(mian)、摘紅花(hua)(hua),做個(ge)(ge)燒(shao)鍋(guo)子(zi)(zi)去姐姐家(jia)。姐姐家(jia)里(li)干什么?姐姐生(sheng)了外(wai)甥娃……”的(de)(de)(de)(de)童(tong)謠。
制作容器
加工燒鍋子的工具為高約(yue)5寸(cun),直(zhi)徑6寸(cun)許的上(shang)(shang)(shang)下兩合鑄鐵小鍋,上(shang)(shang)(shang)蓋頂部拱形,外有提紐,下底平展,合縫間有重沿(yan)“子扣”,疊蓋十分(fen)嚴實,灰土纖塵(chen)不(bu)能鉆(zhan)人(ren)里面(mian)(mian)。舊時(shi)(shi),一些農(nong)家買(mai)不(bu)起鑄鐵燒鍋,聰明(ming)的農(nong)婦,就用(yong)(yong)一片光滑的小石板做底,上(shang)(shang)(shang)面(mian)(mian)涂抹(mo)清(qing)油,放上(shang)(shang)(shang)面(mian)(mian)團,上(shang)(shang)(shang)面(mian)(mian)扣一個小砂鍋,同樣可以燒烤出味美可口(kou)的燒鍋子來,用(yong)(yong)石板沙鍋烤燒鍋子的時(shi)(shi)代早已過去,如(ru)今(jin)永登(deng)農(nong)家除(chu)普(pu)遍使用(yong)(yong)鑄鐵鍋外,時(shi)(shi)下興用(yong)(yong)傳熱(re)(re)快、導熱(re)(re)均勻的鋁制燒鍋。鋁鍋用(yong)(yong)起來省燃料、省時(shi)(shi)間,更(geng)受農(nong)民歡迎。
