全家福
全(quan)家(jia)(jia)福是(shi)家(jia)(jia)宴的傳統(tong)頭道(dao)菜,以示闔家(jia)(jia)歡樂,幸福美滿。全(quan)家(jia)(jia)福的用料(liao)比較簡易。一般(ban)主料(liao)為:油(you)炸肉(rou)(rou)丸、蛋(dan)肉(rou)(rou)卷(juan)、水(shui)發(fa)炸肉(rou)(rou)皮、凈(jing)冬(dong)筍、水(shui)發(fa)豆筍、水(shui)發(fa)木耳、素肉(rou)(rou)片(pian)(pian)、熟肚片(pian)(pian)、堿發(fa)墨魚片(pian)(pian)、雞(ji)肫、雞(ji)肝等。輔(fu)(fu)料(liao)為:精鹽(yan)、味精、胡椒粉(fen)、蔥段、醬油(you)、水(shui)芡粉(fen)、鮮肉(rou)(rou)湯等。制作比較容易:將(jiang)上述主、輔(fu)(fu)料(liao)備(bei)辦周全(quan)以后(hou),先把(ba)冬(dong)筍放進沸水(shui)鍋中煮五分(fen)鐘(zhong)左右撈出(chu),解切成(cheng)(cheng)柳葉片(pian)(pian)狀,再把(ba)豆筍切成(cheng)(cheng)一寸(cun)長,然后(hou)將(jiang)木耳洗凈(jing)、撕開(kai),將(jiang)皮肉(rou)(rou)批刀(dao)成(cheng)(cheng)骨牌塊,雞(ji)肫和雞(ji)肝切成(cheng)(cheng)薄片(pian)(pian),墨魚切成(cheng)(cheng)一寸(cun)見方的片(pian)(pian)狀,把(ba)肉(rou)(rou)丸和蛋(dan)卷(juan)扣入蒸(zheng)(zheng)缽內蒸(zheng)(zheng)熟,上菜時取出(chu)復入大湯盆內。
