豆沙(sha)八寶飯(fan)是浙(zhe)江寧波的傳統(tong)名點,用糯米(mi)做成(cheng)的美(mei)食。由(you)糯米(mi)、豆沙(sha)、棗泥、果(guo)脯、蓮心、米(mi)仁、桂圓(yuan)、白糖、豬板油等原料(liao)配(pei)合制成(cheng)。它由(you)8種原料(liao)組成(cheng),不(bu)僅營養豐富(fu),延(yan)壽益(yi)年,且醇香甜(tian)蜜,別有風(feng)味。
糯(nuo)米補(bu)(bu)中(zhong)(zhong)(zhong)益氣(qi),豇豆(dou)有(you)“補(bu)(bu)腎豆(dou)”之(zhi)稱;棗泥有(you)調和百(bai)藥之(zhi)功效,對人(ren)的健康(kang)長壽極有(you)裨益;蓮(lian)心(xin)(xin)有(you)強心(xin)(xin)作用(yong)(yong),米仁有(you)健脾補(bu)(bu)肺的功效,桂圓則是人(ren)所共知(zhi)具有(you)補(bu)(bu)中(zhong)(zhong)(zhong)益氣(qi)作用(yong)(yong)。制作豆(dou)沙(sha)八(ba)(ba)寶飯工序十分(fen)(fen)講究。先要把豇頭掏洗(xi)干凈后(hou)(hou)煮熟搗爛去豆(dou)皮,加豬(zhu)油(you)(you)白糖,炒(chao)至水(shui)份將(jiang)干時備(bei)用(yong)(yong);把糯(nuo)米淘洗(xi)干凈后(hou)(hou)煮至軟(ruan)硬適中(zhong)(zhong)(zhong),趁(chen)熱拌上豬(zhu)油(you)(you)和糖。盛(sheng)八(ba)(ba)寶飯的碗內(nei)要先抹上一層冷凝的豬(zhu)油(you)(you),使之(zhi)勿粘于(yu)碗,然后(hou)(hou)排入各色花樣(yang),豆(dou)沙(sha)加在中(zhong)(zhong)(zhong)間,再覆上糯(nuo)米飯。這(zhe)樣(yang),豆(dou)沙(sha)八(ba)(ba)寶飯就做成了。在冰箱內(nei)可以放置數日而不變質。豆(dou)沙(sha)八(ba)(ba)寶飯在食用(yong)(yong)前,須蒸熟后(hou)(hou)扣在大(da)盆中(zhong)(zhong)(zhong),便可食用(yong)(yong)。其特點是,五(wu)彩(cai)繽紛(fen),綿糯(nuo)油(you)(you)潤,八(ba)(ba)寶多(duo)味、甜(tian)香可口。八(ba)(ba)寶飯還含有(you)多(duo)種(zhong)維生素、脂肪、糖類(lei)和無機鹽等營養成分(fen)(fen),是人(ren)們十分(fen)(fen)喜愛的點心(xin)(xin)。
將(jiang)糯(nuo)米(mi)蒸熟后,與白糖(tang)、豬油和開水(shui)和勻。
蜜(mi)棗等放(fang)入碗內時(shi),排列(lie)成圖案,中間豆沙及桂花,再鋪上(shang)糯米飯(fan),塌(ta)平,入上(shang)籠蒸一小(xiao)時(shi),食時(shi)鏟出。
