徽(hui)(hui)州多山,宜種苞(bao)蘆(玉米(mi))。苞(bao)蘆磨(mo)成粉,用(yong)開水燙后揉成面(mian)團,用(yong)豬板油(you)加鮮(xian)菜和腌雪里蕻為餡。取(qu)一份玉米(mi)面(mian)團放(fang)入(ru)一份餡心(xin),做成小圓餅(bing)形,入(ru)平鍋燒熟。餅(bing)被烙(luo)得兩面(mian)金黃,外皮焦脆(cui),有(you)玉米(mi)香,餡心(xin)油(you)潤而有(you)脂油(you)香,味鮮(xian)可口。徽(hui)(hui)州山區稱餅(bing)為馃(guo)(guo),稱玉米(mi)為苞(bao)蘆,此餅(bing)用(yong)玉米(mi)粉為皮面(mian),故名(ming)“苞(bao)蘆馃(guo)(guo)”。“苞(bao)蘆馃(guo)(guo)”吃了(le)最(zui)耐饑,故深受體力勞(lao)動者的歡迎。徽(hui)(hui)州山區有(you)民謠(yao)曰:“手捧苞(bao)蘆馃(guo)(guo),腳踩一爐火,除了(le)神(shen)仙(xian)就數我。”傳神(shen)地(di)道出了(le)山里人偏愛(ai)吃苞(bao)蘆馃(guo)(guo)的習俗(su)。
用(yong)山(shan)(shan)區的山(shan)(shan)苞(bao)蘆為主(zhu)原(yuan)料制成(cheng)。山(shan)(shan)苞(bao)蘆為山(shan)(shan)上(shang)(shang)種植(zhi)的一種玉米,生長(chang)期約(yue)140天(tian),其味甜(tian)清,營養(yang)成(cheng)份高。將山(shan)(shan)玉米磨成(cheng)細粉(fen),經細粉(fen)籮篩去皮(pi)層(ceng),和水攪拌煮成(cheng)糊狀(zhuang),冷卻凝固,再用(yong)特制的弓刨成(cheng)薄片,然后將薄片置于竹匾上(shang)(shang)曬干(gan)即成(cheng)。食(shi)用(yong)時(shi),將薄片投入(ru)滾油中炸,薄片舒(shu)展膨脹上(shang)(shang)浮,即可撈起。“苞(bao)蘆松(song)”清香松(song)脆,宜作(zuo)茶食(shi)及佐餐食(shi)品。
