徽州(zhou)多(duo)山(shan),宜種苞(bao)(bao)蘆(玉(yu)米(mi))。苞(bao)(bao)蘆磨成(cheng)粉,用(yong)(yong)開水燙(tang)后(hou)揉成(cheng)面團(tuan),用(yong)(yong)豬板油加(jia)鮮菜和腌(a)雪里蕻為餡(xian)。取一(yi)份玉(yu)米(mi)面團(tuan)放(fang)入一(yi)份餡(xian)心,做(zuo)成(cheng)小圓餅(bing)形(xing),入平(ping)鍋燒熟。餅(bing)被烙得兩面金黃,外皮(pi)焦脆,有玉(yu)米(mi)香(xiang),餡(xian)心油潤而(er)有脂油香(xiang),味(wei)鮮可口。徽州(zhou)山(shan)區稱餅(bing)為馃(guo),稱玉(yu)米(mi)為苞(bao)(bao)蘆,此餅(bing)用(yong)(yong)玉(yu)米(mi)粉為皮(pi)面,故名“苞(bao)(bao)蘆馃(guo)”。“苞(bao)(bao)蘆馃(guo)”吃了(le)最耐饑(ji),故深(shen)受體力勞動者(zhe)的歡(huan)迎(ying)。徽州(zhou)山(shan)區有民謠曰:“手捧苞(bao)(bao)蘆馃(guo),腳踩(cai)一(yi)爐火,除了(le)神(shen)仙就數我。”傳神(shen)地道出了(le)山(shan)里人偏愛吃苞(bao)(bao)蘆馃(guo)的習(xi)俗。
用(yong)山(shan)區的(de)山(shan)苞(bao)蘆為(wei)主(zhu)原料制成(cheng)(cheng)。山(shan)苞(bao)蘆為(wei)山(shan)上(shang)種(zhong)植的(de)一種(zhong)玉米,生長期約140天,其味(wei)甜(tian)清(qing),營養成(cheng)(cheng)份高。將(jiang)山(shan)玉米磨(mo)成(cheng)(cheng)細粉,經細粉籮篩去皮層,和水攪拌煮成(cheng)(cheng)糊狀,冷卻凝固(gu),再用(yong)特制的(de)弓(gong)刨成(cheng)(cheng)薄片(pian),然后將(jiang)薄片(pian)置于竹匾上(shang)曬干即成(cheng)(cheng)。食用(yong)時,將(jiang)薄片(pian)投入滾(gun)油中炸,薄片(pian)舒展膨(peng)脹上(shang)浮(fu),即可撈起。“苞(bao)蘆松”清(qing)香松脆,宜作茶食及(ji)佐餐食品。
