蘇(su)軾在(zai)(zai)宋神(shen)宗元(yuan)(yuan)豐年(nian)間,被貶黃(huang)(huang)州。在(zai)(zai)這(zhe)里,他(ta)除(chu)“赤壁之游樂乎”外(wai),也常(chang)去隔江相望的(de)(de)(de)西(xi)山(shan)(shan)游覽。一(yi)天,西(xi)山(shan)(shan)的(de)(de)(de)靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)和(he)(he)(he)尚們為(wei)(wei)款待(dai)這(zhe)位峨嵋名(ming)(ming)士,特地制作(zuo)了(le)(le)一(yi)種油炸餅(bing)(bing)(bing)(bing)(bing),請他(ta)吃。蘇(su)軾見此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)呈淡黃(huang)(huang)色(se),且玲瓏剔透,簡直如象(xiang)牙雕(diao)成(cheng)似的(de)(de)(de)。觀賞良久(jiu),然后才放進嘴里。香(xiang)(xiang)甜酥脆,口味(wei)極(ji)佳。連(lian)忙問和(he)(he)(he)尚為(wei)(wei)何(he)這(zhe)般好吃?和(he)(he)(he)尚答曰(yue):因寺(si)內(nei)有四(si)眼泉(quan)(quan)(quan),泉(quan)(quan)(quan)水極(ji)佳,此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)是(shi)汲了(le)(le)四(si)泉(quan)(quan)(quan)之水調(diao)制而(er)(er)成(cheng),所以好吃。東(dong)(dong)(dong)坡(po)(po)(po)(po)聽罷,連(lian)連(lian)叫絕(jue),并要和(he)(he)(he)尚取來(lai)文(wen)房四(si)寶,當場對(dui)(dui)餅(bing)(bing)(bing)(bing)(bing)揮毫(hao),畫(hua)了(le)(le)一(yi)餅(bing)(bing)(bing)(bing)(bing),并寫(xie)上(shang)“東(dong)(dong)(dong)坡(po)(po)(po)(po)居(ju)士”四(si)字。畫(hua)餅(bing)(bing)(bing)(bing)(bing)與(yu)真餅(bing)(bing)(bing)(bing)(bing)一(yi)模一(yi)樣。從(cong)此(ci)(ci),這(zhe)餅(bing)(bing)(bing)(bing)(bing)便被叫作(zuo)“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”了(le)(le)。由(you)于蘇(su)東(dong)(dong)(dong)坡(po)(po)(po)(po)也常(chang)去黃(huang)(huang)州赤壁附(fu)近(jin)的(de)(de)(de)承(cheng)天寺(si)、定惠院,東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)亦成(cheng)為(wei)(wei)這(zhe)一(yi)帶和(he)(he)(he)尚道(dao)(dao)士的(de)(de)(de)齋品。到(dao)(dao)了(le)(le)明(ming)清(qing)時期,東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)便傳(chuan)(chuan)到(dao)(dao)社會上(shang),成(cheng)為(wei)(wei)黃(huang)(huang)州府的(de)(de)(de)地方名(ming)(ming)產(chan),一(yi)直流傳(chuan)(chuan)至今。東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)之名(ming)(ming)的(de)(de)(de)由(you)來(lai),要從(cong)蘇(su)軾(蘇(su)東(dong)(dong)(dong)坡(po)(po)(po)(po))謫居(ju)黃(huang)(huang)州,常(chang)泛(fan)舟南度游覽西(xi)山(shan)(shan),并寺(si)僧交往(wang)甚密。寺(si)僧用菩(pu)薩(sa)泉(quan)(quan)(quan)水合面(mian)炸餅(bing)(bing)(bing)(bing)(bing)相待(dai)蘇(su)東(dong)(dong)(dong)坡(po)(po)(po)(po)后,頓覺香(xiang)(xiang)甜酥脆,喜(xi)曰(yue):“爾后復來(lai),仍(reng)以此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)餉吾為(wei)(wei)幸(xing)!”自此(ci)(ci),寺(si)僧與(yu)邑(yi)人(ren)便以“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”命名(ming)(ming)。雅(ya)人(ren)佳點,流傳(chuan)(chuan)至今。清(qing)同治(zhi)三(san)年(nian)(1864年(nian)),兩湖總督官文(wen)游西(xi)山(shan)(shan)品茗嘗餅(bing)(bing)(bing)(bing)(bing),笑問寺(si)僧“此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)何(he)名(ming)(ming)”?寺(si)僧對(dui)(dui)曰(yue)“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”。官文(wen)即興書聯:“門泊戰船憶(yi)公瑾,吾來(lai)茶話續東(dong)(dong)(dong)坡(po)(po)(po)(po)”。北(bei)宋元(yuan)(yuan)豐三(san)年(nian)(公元(yuan)(yuan)1080年(nian))春(chun),著名(ming)(ming)文(wen)學家蘇(su)軾(號(hao)東(dong)(dong)(dong)坡(po)(po)(po)(po))謫居(ju)黃(huang)(huang)州時與(yu)安國寺(si)長老參(can)寥和(he)(he)(he)尚結成(cheng)莫逆之交。參(can)寥和(he)(he)(he)尚得悉蘇(su)軾喜(xi)吃油炙酥爽的(de)(de)(de)食品,于是(shi)制油酥餅(bing)(bing)(bing)(bing)(bing)以待(dai)蘇(su)軾。該餅(bing)(bing)(bing)(bing)(bing)的(de)(de)(de)作(zuo)法是(shi):先將面(mian)粉和(he)(he)(he)好,再團圈抹油餅(bing)(bing)(bing)(bing)(bing)牽成(cheng)線(xian)繞(rao)成(cheng)園餅(bing)(bing)(bing)(bing)(bing)形,放在(zai)(zai)香(xiang)(xiang)油鍋中炸至枯萎。吃時灑上(shang)白糖,香(xiang)(xiang)甜可口。但此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)不能(neng)久(jiu)存。后蘇(su)夫人(ren)設計的(de)(de)(de)“千層餅(bing)(bing)(bing)(bing)(bing)”,酥脆香(xiang)(xiang)甜,食而(er)(er)不膩,味(wei)道(dao)(dao)極(ji)美,易(yi)于久(jiu)存,由(you)于人(ren)們對(dui)(dui)蘇(su)軾的(de)(de)(de)懷(huai)念,就(jiu)稱此(ci)(ci)餅(bing)(bing)(bing)(bing)(bing)為(wei)(wei)“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”。西(xi)山(shan)(shan)古(gu)靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)制做(zuo)“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”,有著得天獨厚(hou)的(de)(de)(de)自然條件。該寺(si)有菩(pu)薩(sa)泉(quan)(quan)(quan)水,清(qing)流味(wei)甘,富含人(ren)體(ti)必(bi)須的(de)(de)(de)礦物質和(he)(he)(he)微量元(yuan)(yuan)素,用此(ci)(ci)泉(quan)(quan)(quan)水合面(mian)制餅(bing)(bing)(bing)(bing)(bing)可自然酥脆,不添香(xiang)(xiang)料而(er)(er)自有清(qing)香(xiang)(xiang),再加上(shang)寺(si)僧在(zai)(zai)制做(zuo)過程(cheng)中繼承(cheng)了(le)(le)傳(chuan)(chuan)統技(ji)藝,使“東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”至今仍(reng)保留(liu)了(le)(le)蘇(su)東(dong)(dong)(dong)坡(po)(po)(po)(po)時代的(de)(de)(de)特色(se)。黨(dang)和(he)(he)(he)國家領(ling)導人(ren)董必(bi)武、李先念、陳(chen)毅等(deng)(deng)曾(ceng)先后到(dao)(dao)西(xi)山(shan)(shan)古(gu)靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)品茗嘗餅(bing)(bing)(bing)(bing)(bing)。20世紀(ji)50年(nian)代初,古(gu)靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)方丈(zhang)融廣法師請本(ben)寺(si)素齋烹調(diao)高手(shou)融和(he)(he)(he)法師親制東(dong)(dong)(dong)坡(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)一(yi)盒(he),奉(feng)獻(xian)給毛主席(xi),時中共中央辦公廳曾(ceng)來(lai)函致謝(xie)。行銷(xiao)北(bei)京、上(shang)海、廣州、武漢(han)、黃(huang)(huang)石等(deng)(deng)全(quan)國各地。港、澳同胞和(he)(he)(he)日本(ben)貴賓(bin)親來(lai)品嘗,贊不絕(jue)口。
鄂(e)州(zhou)西(xi)山(shan)(shan),是(shi)孫(sun)權都鄂(e)時(shi)登壇(tan)即位的(de)(de)地方,有(you)勝(sheng)(sheng)景(jing)。西(xi)山(shan)(shan)古(gu)靈泉(quan)寺有(you)嘉餅,曰東(dong)坡餅,是(shi)蘇東(dong)坡貶黃州(zhou)時(shi)常(chang)過江(jiang)求食(shi)之物,并因而得名(ming)。西(xi)山(shan)(shan)勝(sheng)(sheng)景(jing),東(dong)坡嘉餅,久聞盛名(ming)。我們一(yi)(yi)面(mian)吃餅,一(yi)(yi)面(mian)聽關于(yu)東(dong)坡餅的(de)(de)傳說(shuo)。鄂(e)州(zhou)古(gu)稱武昌(chang),據《方輿勝(sheng)(sheng)覽》載:“孫(sun)權都鄂(e),欲以武而昌(chang),故(gu)名(ming)。”東(dong)吳以來,西(xi)山(shan)(shan)成了歷代(dai)文人墨(mo)客登臨勝(sheng)(sheng)地。晉代(dai)陶侃,唐(tang)代(dai)元結,都曾(ceng)在(zai)山(shan)(shan)上結廬讀書。
宋神宗(zong)元豐二(er)年(公元1079年),由于(yu)統(tong)治(zhi)集團內部(bu)傾軋,諫(jian)官李(li)定等摘出蘇軾一些諷諭朝廷的(de)詩(shi)(shi)句(ju),加以彈(dan)劾,蘇軾因而被捕入(ru)獄,這便是有名的(de)“烏臺詩(shi)(shi)案”。經過(guo)殘酷的(de)折(zhe)磨后,蘇軾被貶為黃(huang)州(zhou)團練(lian)副使。
黃州無(wu)名山(shan),而大江(jiang)(jiang)之南(nan),武昌諸山(shan)陂陀蔓(man)延(yan),澗谷(gu)深密,中有浮圖精(jing)舍,依(yi)山(shan)臨(lin)壑(he),蕭然絕俗。于(yu)是,蘇(su)軾便如他在《武昌西山(shan)詩》中寫(xie)的那樣:“春江(jiang)(jiang)淥漲葡萄醅,武昌官柳知誰載?憶從樊(fan)口載春酒,步上西山(shan)尋野梅……”
這位名(ming)傾于世的詩人來到西山(shan)古寺(si),受到寺(si)僧(seng)的熱(re)情歡迎,寺(si)僧(seng)以(yi)泉水(shui)烹茶,香油(you)煎餅(bing)招待。東坡(po)食(shi)(shi)后,稱贊不已(yi),喜曰:“爾后復來,仍以(yi)此(ci)(ci)餅(bing)餉吾為幸!”蘇東坡(po)一生游歷名(ming)川大川,遍嘗(chang)南北(bei)名(ming)饌佳肴(yao),是一位知味(wei)(wei)善品的美食(shi)(shi)家。此(ci)(ci)餅(bing)得他如此(ci)(ci)贊賞,可(ke)見其風(feng)味(wei)(wei)確實不凡。
自宋以后,西(xi)山(shan)寺(si)僧(seng)常以此餅(bing)待客。清同治三年,大學士、欽差大臣、湖廣總督官(guan)(guan)文游覽(lan)西(xi)山(shan)靈泉寺(si),西(xi)山(shan)住持(chi)宏(hong)儒法(fa)師以此餅(bing)敬奉(feng)官(guan)(guan)文,官(guan)(guan)文食(shi)后大為(wei)贊許,問及(ji)此餅(bing)何名,答曰:“東(dong)坡餅(bing)。”官(guan)(guan)文隨即題詩(shi)云:“門泊(bo)戰船(chuan)憶公瑾,我來茶話續東(dong)坡。”“東(dong)坡餅(bing)”由此名聲大震,并流傳至今(jin)。
西(xi)山僧人說,東坡餅之(zhi)(zhi)所以獨特,是因為(wei)西(xi)山寺有菩(pu)薩泉(quan)(quan)。菩(pu)薩泉(quan)(quan)聚山川之(zhi)(zhi)靈氣(qi),水色白而味(wei)甘,清冽異常,又名靈泉(quan)(quan)。用靈泉(quan)(quan)制餅,無(wu)(wu)需發酵(jiao),自然(ran)而酥(su)松,落(luo)口消(xiao)融;不(bu)加香料,香芳清甜,回(hui)味(wei)雋永。以泉(quan)(quan)用之(zhi)(zhi)烹茶,是為(wei)上品(pin);取而冷飲(yin),則(ze)可祛病(bing)強身。故蘇(su)東坡寫(xie)詩(shi)贊曰:“送行無(wu)(wu)酒亦無(wu)(wu)錢(qian),勸爾一杯菩(pu)薩泉(quan)(quan)。何處低(di)頭不(bu)見我,四方同此水中天。”
西山(shan)山(shan)門前,九曲亭上(shang)有東(dong)坡先(xian)生(sheng)(sheng)寫的《西山(shan)詩(shi)》,文詞優(you)美,意境(jing)幽(you)深(shen)。廣宴樓(lou)壁上(shang),掛有東(dong)坡先(xian)生(sheng)(sheng)畫(hua)的墨(mo)梅,鐵骨繁花,清麗精神(shen)。東(dong)坡餅和東(dong)坡先(xian)生(sheng)(sheng)留在西山(shan)的珍貴墨(mo)寶,相得(de)益彰,一(yi)起(qi)千(qian)古傳播著東(dong)坡先(xian)生(sheng)(sheng)的流風余(yu)澤。
文(wen)字興獄(yu),無端羅織,以文(wen)廢人,乃至(zhi)焚(fen)書坑儒,這是(shi)我(wo)國封(feng)建社會延續(xu)數(shu)千年的(de)(de)陋規、痼疾。縱(zong)觀幾(ji)千年的(de)(de)中國文(wen)學史,幾(ji)乎沒(mei)有一個(ge)著名的(de)(de)濤人、文(wen)學家,不橫遭貶遷。對文(wen)人的(de)(de)迫害(hai),如此(ci)酷烈,如此(ci)普(pu)遍,真是(shi)世所(suo)罕見。
然而,真(zhen)理的(de)呼號并未(wei)泯滅,文學繼(ji)續繁衍(yan),詩(shi)文窮而愈(yu)工。蘇軾以文字獲罪遭貶,但(dan)并未(wei)因(yin)此擱筆。被譽(yu)為(wei)千古絕唱的(de)《念(nian)奴嬌(jiao)·赤壁懷古》,傳世名篇《前赤壁賦》、《后赤壁賦》,游記(ji)散文《武(wu)昌九曲(qu)亭記(ji)》等,便是(shi)他這一時期的(de)佳作。
西山嘉餅,以東坡名,這是人民對(dui)詩人一(yi)生(sheng)坎坷(ke)遭遇(yu)的同情,對(dui)詩人高(gao)潔風骨的欽敬,以及對(dui)詩人文學(xue)上杰出成就的景仰分不開的。
關(guan)于“東(dong)坡(po)餅(bing)”名稱(cheng)的(de)(de)由(you)來(lai)(lai),充滿了人(ren)文(wen)色(se)彩。相傳蘇東(dong)坡(po)被貶海南儋(dan)縣(現海南儋(dan)州)時,當(dang)(dang)地有一(yi)位(wei)賣環餅(bing)的(de)(de)年邁守(shou)寡老嫗(yu),她的(de)(de)手(shou)藝好(hao),環餅(bing)質(zhi)量高,可(ke)是因為(wei)店鋪偏僻(pi),不(bu)為(wei)人(ren)知生意一(yi)直不(bu)好(hao)。老嫗(yu)得知蘇東(dong)坡(po)是著(zhu)名文(wen)學家,就(jiu)請(qing)他為(wei)店鋪作詩。蘇東(dong)坡(po)憐憫(min)她生活貧苦,環餅(bing)手(shou)藝又(you)委實不(bu)錯,就(jiu)揮筆(bi)寫下一(yi)首七絕:“纖手(shou)搓來(lai)(lai)玉色(se)勻(yun)(yun),碧油(you)煎出(chu)嫩黃深。夜來(lai)(lai)春睡(shui)知輕(qing)重,壓扁佳人(ren)纏臂(bei)金。”寥寥數句,勾畫出(chu)環餅(bing)勻(yun)(yun)細(xi)、色(se)艷、酥脆的(de)(de)特點和形似美人(ren)環釵的(de)(de)形象。老嫗(yu)將此詩高懸(xuan)門上,果然(ran)顧客盈門,生意興隆,后來(lai)(lai)當(dang)(dang)地老百姓為(wei)紀(ji)念(nian)蘇東(dong)坡(po),就(jiu)名之以“東(dong)坡(po)餅(bing)”,并在(zai)儋(dan)州流傳今。
“東坡餅(bing)”不但包(bao)含(han)著(zhu)奇特的(de)飲食文(wen)化,還(huan)蘊(yun)藏(zang)著(zhu)濃郁的(de)鄉情文(wen)化,深受人們的(de)喜愛。
1、將(jiang)雞蛋取蛋清,加清水500克及精鹽(yan)、蘇打溶化(hua)后,倒入面(mian)粉,反復(fu)攄揉,至面(mian)團不沾手,搓成(cheng)條,揪(jiu)成(cheng)重150克的面(mian)劑(ji)10個,搓成(cheng)圓坨,擺(bai)放到盛有芝(zhi)麻油(100克)的瓷(ci)盤里(li),餳10分鐘。
2、案板上抹勻芝麻油,取出餳(xing)好的面(mian)(mian)坨,在(zai)案板上按(an)成(cheng)(cheng)(cheng)長(chang)方形薄面(mian)(mian)皮,從兩端向中(zhong)間卷成(cheng)(cheng)(cheng)雙筒狀(zhuang),拉成(cheng)(cheng)(cheng)約一(yi)(yi)半長(chang)條,再側著從兩端向中(zhong)間卷成(cheng)(cheng)(cheng)一(yi)(yi)個(ge)大(da)、一(yi)(yi)個(ge)小(xiao)的圓(yuan)餅(bing)(bing),將大(da)圓(yuan)餅(bing)(bing)放底(di)層,小(xiao)圓(yuan)餅(bing)(bing)疊在(zai)上面(mian)(mian),復放在(zai)盛芝麻油的瓷(ci)盤里浸沒,約餳(xing)5分鐘成(cheng)(cheng)(cheng)餅(bing)(bing)坯。
3、鍋置中火上(shang),放(fang)入芝麻油燒到七成(cheng)熱時,將餅(bing)(bing)(bing)坯平放(fang)鍋里,邊炸(zha)邊用筷(kuai)子一夾一松地使(shi)餅(bing)(bing)(bing)坯松散,待餅(bing)(bing)(bing)坯炸(zha)至浮起(qi)時,翻面再炸(zha),邊炸(zha)邊用筷(kuai)子點(dian)動餅(bing)(bing)(bing)坯心,使(shi)餅(bing)(bing)(bing)炸(zha)至松泡但不能散開,呈金黃色時,撈出(chu)瀝去油,裝盤每(mei)餅(bing)(bing)(bing)撒上(shang)白(bai)糖(45克)即成(cheng)。
取西山礦泉(quan)水1250毫升倒入面(mian)中,揉和(he)(he)好(hao),搟(xian)(xian)(xian)成(cheng)直徑為23厘(li)(li)米(mi)的(de)圓片,上倒香(xiang)油,用手(shou)抹勻,然(ran)后相對地由兩邊向中間卷(juan)成(cheng)如意形長(chang)筒,從中間扯斷(duan),每卷(juan)成(cheng)約39厘(li)(li)米(mi)長(chang)、54厘(li)(li)米(mi)寬(kuan)的(de)長(chang)條,再(zai)抹上一(yi)層香(xiang)油,從一(yi)端卷(juan)成(cheng)圓筒,夾起,用手(shou)按(an)一(yi)下,再(zai)搟(xian)(xian)(xian)成(cheng)直徑為17厘(li)(li)米(mi)的(de)圓餅。將其放入油鍋(guo)(guo)中炸(zha)至浮(fu)起,炸(zha)時用筷子按(an)動,使餅酥(su)裂開。炸(zha)好(hao)出鍋(guo)(guo)后,撒(sa)上白(bai)糖即成(cheng)。和(he)(he)面(mian)時不用蘇(su)打,搟(xian)(xian)(xian)面(mian)皮時用力要(yao)勻,搟(xian)(xian)(xian)出的(de)面(mian)皮厚薄(bo)要(yao)相同。特點(dian):造型別(bie)致,色澤誘人,甜酥(su)脆(cui)香(xiang),美味可口。
1.盆內放(fang)入(ru)精鹽、蘇(su)打粉、雞(ji)蛋清,加(jia)清水(shui)500克攪打均勻(yun),徐徐倒入(ru)面(mian)粉反復揉(rou)拌,直到面(mian)團(tuan)不粘手時取出,放(fang)在案板上搓(cuo)條,摘(zhai)成重(zhong)150克一個的(de)面(mian)劑(ji),搓(cuo)成圓團(tuan),擺(bai)放(fang)在盛少許芝麻油的(de)瓷盤(pan)里餳10分鐘(zhong)即(ji)可。
2.案板上(shang)抹勻(yun)芝(zhi)(zhi)麻油(you),將餳好(hao)的(de)(de)(de)面(mian)(mian)團取(qu)出,逐個(ge)在(zai)(zai)案板上(shang)按成長(chang)方形的(de)(de)(de)薄面(mian)(mian)皮,用雙手從面(mian)(mian)皮兩邊向(xiang)中(zhong)間卷(juan)成雙圓(yuan)筒狀(zhuang),再(zai)側(ce)著(zhu)從兩端向(xiang)中(zhong)間卷(juan)成一個(ge)大(da)、一個(ge)小(xiao)的(de)(de)(de)圓(yuan)餅(bing)(bing)。將大(da)圓(yuan)餅(bing)(bing)放(fang)在(zai)(zai)底層,小(xiao)圓(yuan)餅(bing)(bing)疊(die)在(zai)(zai)上(shang)面(mian)(mian),逐個(ge)做(zuo)完(wan)后(hou),復放(fang)在(zai)(zai)盛芝(zhi)(zhi)麻油(you)的(de)(de)(de)盤里浸沒,約餳5分鐘。
