蘇(su)(su)(su)軾(shi)(shi)(shi)在宋神宗元(yuan)豐年(nian)間,被貶(bian)黃(huang)州(zhou)。在這里,他除“赤壁之游樂(le)乎”外(wai),也常(chang)去(qu)隔江相望(wang)的(de)(de)(de)(de)西(xi)(xi)山(shan)(shan)游覽。一(yi)天(tian),西(xi)(xi)山(shan)(shan)的(de)(de)(de)(de)靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)(si)和(he)(he)(he)(he)尚(shang)(shang)們為款待(dai)(dai)這位峨嵋名(ming)士,特(te)地制作了一(yi)種(zhong)油炸餅(bing)(bing)(bing)(bing)(bing),請(qing)他吃(chi)。蘇(su)(su)(su)軾(shi)(shi)(shi)見此(ci)餅(bing)(bing)(bing)(bing)(bing)呈淡黃(huang)色(se),且玲瓏剔透,簡(jian)直(zhi)如象牙雕成(cheng)(cheng)(cheng)似的(de)(de)(de)(de)。觀賞良(liang)久,然后(hou)才放(fang)進嘴里。香甜酥(su)脆,口味極佳(jia)。連忙問和(he)(he)(he)(he)尚(shang)(shang)為何這般好(hao)吃(chi)?和(he)(he)(he)(he)尚(shang)(shang)答曰(yue):因寺(si)(si)內(nei)有四(si)眼泉(quan)(quan)(quan),泉(quan)(quan)(quan)水(shui)(shui)極佳(jia),此(ci)餅(bing)(bing)(bing)(bing)(bing)是汲了四(si)泉(quan)(quan)(quan)之水(shui)(shui)調制而(er)成(cheng)(cheng)(cheng),所以(yi)好(hao)吃(chi)。東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)聽罷,連連叫(jiao)絕,并(bing)要和(he)(he)(he)(he)尚(shang)(shang)取來文房四(si)寶,當(dang)場對(dui)餅(bing)(bing)(bing)(bing)(bing)揮毫,畫了一(yi)餅(bing)(bing)(bing)(bing)(bing),并(bing)寫(xie)上(shang)(shang)(shang)“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)居士”四(si)字(zi)。畫餅(bing)(bing)(bing)(bing)(bing)與(yu)真餅(bing)(bing)(bing)(bing)(bing)一(yi)模一(yi)樣(yang)。從(cong)此(ci),這餅(bing)(bing)(bing)(bing)(bing)便被叫(jiao)作“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”了。由(you)(you)于蘇(su)(su)(su)東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)也常(chang)去(qu)黃(huang)州(zhou)赤壁附近的(de)(de)(de)(de)承天(tian)寺(si)(si)、定惠院,東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)亦成(cheng)(cheng)(cheng)為這一(yi)帶和(he)(he)(he)(he)尚(shang)(shang)道士的(de)(de)(de)(de)齋品。到(dao)了明清(qing)(qing)(qing)時期,東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)便傳到(dao)社會上(shang)(shang)(shang),成(cheng)(cheng)(cheng)為黃(huang)州(zhou)府(fu)的(de)(de)(de)(de)地方名(ming)產,一(yi)直(zhi)流傳至今(jin)。東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)之名(ming)的(de)(de)(de)(de)由(you)(you)來,要從(cong)蘇(su)(su)(su)軾(shi)(shi)(shi)(蘇(su)(su)(su)東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po))謫(zhe)居黃(huang)州(zhou),常(chang)泛舟南度游覽西(xi)(xi)山(shan)(shan),并(bing)寺(si)(si)僧交往甚密(mi)。寺(si)(si)僧用菩薩泉(quan)(quan)(quan)水(shui)(shui)合面炸餅(bing)(bing)(bing)(bing)(bing)相待(dai)(dai)蘇(su)(su)(su)東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)后(hou),頓覺香甜酥(su)脆,喜曰(yue):“爾后(hou)復來,仍以(yi)此(ci)餅(bing)(bing)(bing)(bing)(bing)餉吾(wu)為幸!”自此(ci),寺(si)(si)僧與(yu)邑人(ren)(ren)(ren)便以(yi)“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”命名(ming)。雅(ya)人(ren)(ren)(ren)佳(jia)點,流傳至今(jin)。清(qing)(qing)(qing)同(tong)治三年(nian)(1864年(nian)),兩(liang)湖總督官文游西(xi)(xi)山(shan)(shan)品茗(ming)(ming)嘗(chang)餅(bing)(bing)(bing)(bing)(bing),笑問寺(si)(si)僧“此(ci)餅(bing)(bing)(bing)(bing)(bing)何名(ming)”?寺(si)(si)僧對(dui)曰(yue)“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”。官文即(ji)興書聯:“門泊(bo)戰船(chuan)憶公(gong)瑾,吾(wu)來茶話續東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)”。北宋元(yuan)豐三年(nian)(公(gong)元(yuan)1080年(nian))春(chun),著(zhu)(zhu)名(ming)文學家蘇(su)(su)(su)軾(shi)(shi)(shi)(號東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po))謫(zhe)居黃(huang)州(zhou)時與(yu)安(an)國寺(si)(si)長老參(can)寥(liao)和(he)(he)(he)(he)尚(shang)(shang)結成(cheng)(cheng)(cheng)莫(mo)逆之交。參(can)寥(liao)和(he)(he)(he)(he)尚(shang)(shang)得(de)悉蘇(su)(su)(su)軾(shi)(shi)(shi)喜吃(chi)油炙酥(su)爽的(de)(de)(de)(de)食品,于是制油酥(su)餅(bing)(bing)(bing)(bing)(bing)以(yi)待(dai)(dai)蘇(su)(su)(su)軾(shi)(shi)(shi)。該餅(bing)(bing)(bing)(bing)(bing)的(de)(de)(de)(de)作法(fa)是:先將面粉和(he)(he)(he)(he)好(hao),再團圈抹油餅(bing)(bing)(bing)(bing)(bing)牽成(cheng)(cheng)(cheng)線繞成(cheng)(cheng)(cheng)園餅(bing)(bing)(bing)(bing)(bing)形,放(fang)在香油鍋中(zhong)炸至枯萎。吃(chi)時灑(sa)上(shang)(shang)(shang)白糖,香甜可口。但(dan)此(ci)餅(bing)(bing)(bing)(bing)(bing)不(bu)能久存。后(hou)蘇(su)(su)(su)夫(fu)人(ren)(ren)(ren)設(she)計(ji)的(de)(de)(de)(de)“千層餅(bing)(bing)(bing)(bing)(bing)”,酥(su)脆香甜,食而(er)不(bu)膩(ni),味道極美(mei),易于久存,由(you)(you)于人(ren)(ren)(ren)們對(dui)蘇(su)(su)(su)軾(shi)(shi)(shi)的(de)(de)(de)(de)懷(huai)念,就稱此(ci)餅(bing)(bing)(bing)(bing)(bing)為“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”。西(xi)(xi)山(shan)(shan)古靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)(si)制做(zuo)“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”,有著(zhu)(zhu)得(de)天(tian)獨厚的(de)(de)(de)(de)自然條件。該寺(si)(si)有菩薩泉(quan)(quan)(quan)水(shui)(shui),清(qing)(qing)(qing)流味甘,富含人(ren)(ren)(ren)體必(bi)須的(de)(de)(de)(de)礦物(wu)質和(he)(he)(he)(he)微(wei)量元(yuan)素(su),用此(ci)泉(quan)(quan)(quan)水(shui)(shui)合面制餅(bing)(bing)(bing)(bing)(bing)可自然酥(su)脆,不(bu)添香料而(er)自有清(qing)(qing)(qing)香,再加上(shang)(shang)(shang)寺(si)(si)僧在制做(zuo)過程中(zhong)繼承了傳統技藝,使“東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)”至今(jin)仍保留了蘇(su)(su)(su)東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)時代的(de)(de)(de)(de)特(te)色(se)。黨和(he)(he)(he)(he)國家領(ling)導(dao)人(ren)(ren)(ren)董必(bi)武、李先念、陳毅(yi)等(deng)曾先后(hou)到(dao)西(xi)(xi)山(shan)(shan)古靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)(si)品茗(ming)(ming)嘗(chang)餅(bing)(bing)(bing)(bing)(bing)。20世紀50年(nian)代初,古靈(ling)(ling)(ling)泉(quan)(quan)(quan)寺(si)(si)方丈融(rong)廣法(fa)師請(qing)本(ben)寺(si)(si)素(su)齋烹調高手融(rong)和(he)(he)(he)(he)法(fa)師親制東(dong)(dong)(dong)(dong)坡(po)(po)(po)(po)(po)(po)餅(bing)(bing)(bing)(bing)(bing)一(yi)盒,奉獻給毛(mao)主席,時中(zhong)共中(zhong)央辦公(gong)廳曾來函致謝(xie)。行銷(xiao)北京、上(shang)(shang)(shang)海(hai)、廣州(zhou)、武漢(han)、黃(huang)石等(deng)全國各地。港(gang)、澳同(tong)胞和(he)(he)(he)(he)日本(ben)貴賓親來品嘗(chang),贊不(bu)絕口。
鄂州西山,是(shi)孫(sun)權都鄂時(shi)登壇即位的地方,有(you)勝(sheng)景。西山古(gu)靈泉寺有(you)嘉餅(bing),曰(yue)東(dong)(dong)(dong)坡餅(bing),是(shi)蘇東(dong)(dong)(dong)坡貶(bian)黃州時(shi)常過江求食之(zhi)物(wu),并因(yin)而得名(ming)。西山勝(sheng)景,東(dong)(dong)(dong)坡嘉餅(bing),久聞盛名(ming)。我們一面(mian)吃餅(bing),一面(mian)聽(ting)關于(yu)東(dong)(dong)(dong)坡餅(bing)的傳(chuan)說。鄂州古(gu)稱武(wu)昌(chang),據《方輿(yu)勝(sheng)覽》載:“孫(sun)權都鄂,欲以(yi)武(wu)而昌(chang),故(gu)名(ming)。”東(dong)(dong)(dong)吳以(yi)來,西山成了歷代文人墨客登臨勝(sheng)地。晉(jin)代陶侃,唐代元結(jie),都曾在山上結(jie)廬讀書。
宋神宗(zong)元豐二年(公元1079年),由于(yu)統治集團內(nei)部傾軋,諫官李定等摘出(chu)蘇軾(shi)一些諷(feng)諭朝廷的(de)詩句(ju),加以(yi)彈(dan)劾,蘇軾(shi)因而被(bei)捕入(ru)獄,這便是(shi)有名的(de)“烏(wu)臺詩案”。經過殘酷的(de)折磨后,蘇軾(shi)被(bei)貶為(wei)黃州團練副使。
黃州無名山(shan)(shan),而大江之南(nan),武(wu)昌諸山(shan)(shan)陂陀蔓延,澗谷深密(mi),中(zhong)有(you)浮圖精舍,依山(shan)(shan)臨壑,蕭然絕俗(su)。于是,蘇軾便如他在《武(wu)昌西山(shan)(shan)詩》中(zhong)寫(xie)的(de)那樣:“春(chun)江淥(lu)漲葡萄醅(pei),武(wu)昌官柳知誰載?憶從樊口(kou)載春(chun)酒,步上西山(shan)(shan)尋(xun)野梅……”
這位名(ming)傾(qing)于(yu)世的詩(shi)人(ren)來到(dao)西山古寺(si),受到(dao)寺(si)僧的熱情歡迎(ying),寺(si)僧以泉水(shui)烹(peng)茶,香油(you)煎餅(bing)招待。東坡食(shi)后,稱贊不已,喜曰:“爾后復來,仍以此(ci)餅(bing)餉吾為幸(xing)!”蘇東坡一(yi)生游(you)歷名(ming)川(chuan)(chuan)大川(chuan)(chuan),遍嘗南(nan)北(bei)名(ming)饌(zhuan)佳肴,是一(yi)位知味善品的美食(shi)家。此(ci)餅(bing)得他如此(ci)贊賞,可見其風味確實不凡。
自宋(song)以后,西(xi)(xi)山(shan)寺僧常以此餅(bing)(bing)(bing)待客。清同治三年,大學士、欽(qin)差大臣、湖廣總督官文(wen)(wen)(wen)游(you)覽西(xi)(xi)山(shan)靈泉寺,西(xi)(xi)山(shan)住持宏(hong)儒法(fa)師(shi)以此餅(bing)(bing)(bing)敬奉官文(wen)(wen)(wen),官文(wen)(wen)(wen)食(shi)后大為贊許(xu),問及此餅(bing)(bing)(bing)何名,答曰:“東(dong)坡餅(bing)(bing)(bing)。”官文(wen)(wen)(wen)隨即(ji)題詩云:“門泊戰船憶公瑾,我(wo)來茶話(hua)續東(dong)坡。”“東(dong)坡餅(bing)(bing)(bing)”由(you)此名聲(sheng)大震,并流傳(chuan)至(zhi)今。
西山(shan)(shan)僧(seng)人(ren)說,東坡(po)餅之(zhi)(zhi)所以獨特(te),是因為西山(shan)(shan)寺有菩(pu)(pu)薩泉(quan)。菩(pu)(pu)薩泉(quan)聚山(shan)(shan)川(chuan)之(zhi)(zhi)靈氣,水(shui)(shui)色白而(er)(er)味甘,清(qing)冽異常,又名靈泉(quan)。用靈泉(quan)制餅,無需發酵,自然(ran)而(er)(er)酥松(song),落(luo)口消(xiao)融;不(bu)加香(xiang)料,香(xiang)芳清(qing)甜,回味雋永。以泉(quan)用之(zhi)(zhi)烹(peng)茶,是為上(shang)品(pin);取(qu)而(er)(er)冷飲,則(ze)可祛(qu)病強身。故蘇(su)東坡(po)寫詩贊曰:“送行無酒亦(yi)無錢,勸(quan)爾一杯菩(pu)(pu)薩泉(quan)。何處低頭不(bu)見我,四方同此水(shui)(shui)中天。”
西(xi)(xi)山山門前,九曲亭上有東(dong)(dong)坡(po)(po)先生(sheng)(sheng)寫的(de)《西(xi)(xi)山詩》,文詞優美,意境(jing)幽深。廣宴樓壁上,掛有東(dong)(dong)坡(po)(po)先生(sheng)(sheng)畫的(de)墨梅,鐵骨繁花,清麗精神。東(dong)(dong)坡(po)(po)餅和東(dong)(dong)坡(po)(po)先生(sheng)(sheng)留在西(xi)(xi)山的(de)珍貴墨寶,相得益彰,一起千古傳播著東(dong)(dong)坡(po)(po)先生(sheng)(sheng)的(de)流風余(yu)澤(ze)。
文(wen)(wen)(wen)字興獄(yu),無端羅(luo)織,以文(wen)(wen)(wen)廢人(ren),乃(nai)至焚書坑儒,這(zhe)是我國(guo)封建社(she)會延續數千年的(de)(de)陋規(gui)、痼疾。縱(zong)觀幾千年的(de)(de)中國(guo)文(wen)(wen)(wen)學史,幾乎沒有一(yi)個著(zhu)名的(de)(de)濤(tao)人(ren)、文(wen)(wen)(wen)學家,不橫遭貶遷。對(dui)文(wen)(wen)(wen)人(ren)的(de)(de)迫(po)害(hai),如此酷(ku)烈(lie),如此普遍,真是世(shi)所(suo)罕見。
然而,真理的呼號并未泯滅,文(wen)學繼續繁衍,詩文(wen)窮(qiong)而愈工(gong)。蘇軾以文(wen)字獲(huo)罪遭貶,但并未因此擱筆。被譽為千古絕唱(chang)的《念奴嬌·赤壁懷古》,傳世名篇(pian)《前赤壁賦(fu)》、《后(hou)赤壁賦(fu)》,游記散(san)文(wen)《武昌九曲亭記》等,便是他這一時期的佳作。
西山嘉(jia)餅(bing),以東(dong)坡名,這(zhe)是(shi)人(ren)民對詩(shi)(shi)人(ren)一生坎坷遭遇的(de)同情,對詩(shi)(shi)人(ren)高潔風骨的(de)欽敬,以及對詩(shi)(shi)人(ren)文學上杰出成(cheng)就的(de)景(jing)仰分不開的(de)。
關于“東(dong)(dong)(dong)坡(po)(po)餅(bing)”名(ming)稱的(de)由來(lai)(lai),充滿了人(ren)文色(se)彩。相(xiang)傳蘇(su)東(dong)(dong)(dong)坡(po)(po)被貶(bian)海南儋縣(現海南儋州)時,當(dang)地有一位賣(mai)環餅(bing)的(de)年(nian)邁守寡老(lao)嫗,她(ta)(ta)的(de)手(shou)藝好(hao),環餅(bing)質量高,可(ke)是因為(wei)(wei)店鋪(pu)偏(pian)僻,不為(wei)(wei)人(ren)知生(sheng)意(yi)一直(zhi)不好(hao)。老(lao)嫗得(de)知蘇(su)東(dong)(dong)(dong)坡(po)(po)是著名(ming)文學(xue)家,就請他為(wei)(wei)店鋪(pu)作詩(shi)。蘇(su)東(dong)(dong)(dong)坡(po)(po)憐憫她(ta)(ta)生(sheng)活貧(pin)苦,環餅(bing)手(shou)藝又委實不錯,就揮筆寫(xie)下一首七絕(jue):“纖手(shou)搓來(lai)(lai)玉色(se)勻,碧油煎出(chu)嫩(nen)黃深。夜來(lai)(lai)春睡知輕重,壓扁佳(jia)人(ren)纏(chan)臂金。”寥寥數句,勾畫出(chu)環餅(bing)勻細、色(se)艷(yan)、酥脆的(de)特點和(he)形(xing)似美人(ren)環釵的(de)形(xing)象。老(lao)嫗將此詩(shi)高懸門上,果然顧客盈門,生(sheng)意(yi)興隆(long),后(hou)來(lai)(lai)當(dang)地老(lao)百姓為(wei)(wei)紀念蘇(su)東(dong)(dong)(dong)坡(po)(po),就名(ming)之以(yi)“東(dong)(dong)(dong)坡(po)(po)餅(bing)”,并在儋州流傳今。
“東(dong)坡(po)餅”不(bu)但包含著奇特的飲食文化(hua)(hua),還(huan)蘊藏著濃(nong)郁的鄉(xiang)情文化(hua)(hua),深受人(ren)們的喜愛。
1、將雞蛋(dan)取蛋(dan)清(qing),加清(qing)水500克(ke)及精鹽(yan)、蘇打溶化后,倒(dao)入面(mian)粉,反復(fu)攄(shu)揉,至面(mian)團不沾手,搓成條,揪成重150克(ke)的(de)面(mian)劑10個,搓成圓坨,擺放到盛有(you)芝麻油(100克(ke))的(de)瓷(ci)盤(pan)里(li),餳10分鐘。
2、案板上抹勻芝麻油(you),取(qu)出餳好的(de)面(mian)坨,在(zai)(zai)案板上按成(cheng)長方形(xing)薄面(mian)皮,從(cong)兩端向中(zhong)間(jian)卷(juan)成(cheng)雙筒(tong)狀,拉成(cheng)約(yue)一(yi)半(ban)長條,再側著從(cong)兩端向中(zhong)間(jian)卷(juan)成(cheng)一(yi)個大(da)、一(yi)個小(xiao)的(de)圓(yuan)餅(bing),將大(da)圓(yuan)餅(bing)放底(di)層,小(xiao)圓(yuan)餅(bing)疊在(zai)(zai)上面(mian),復放在(zai)(zai)盛芝麻油(you)的(de)瓷盤里浸(jin)沒,約(yue)餳5分鐘成(cheng)餅(bing)坯(pi)。
3、鍋置中(zhong)火上,放入(ru)芝麻油(you)燒到七成(cheng)熱時,將餅(bing)坯(pi)平放鍋里,邊炸(zha)(zha)(zha)邊用筷(kuai)子一夾一松地使(shi)餅(bing)坯(pi)松散,待餅(bing)坯(pi)炸(zha)(zha)(zha)至浮(fu)起時,翻面(mian)再炸(zha)(zha)(zha),邊炸(zha)(zha)(zha)邊用筷(kuai)子點(dian)動餅(bing)坯(pi)心,使(shi)餅(bing)炸(zha)(zha)(zha)至松泡但(dan)不能(neng)散開,呈(cheng)金黃(huang)色(se)時,撈出瀝去油(you),裝盤(pan)每餅(bing)撒上白糖(45克(ke))即成(cheng)。
取西山礦泉水1250毫升倒(dao)入(ru)面中,揉(rou)和(he)好(hao),搟成(cheng)直(zhi)徑為23厘(li)米的(de)(de)圓片,上倒(dao)香油(you),用(yong)(yong)手抹勻,然后相對地由兩(liang)邊向中間卷(juan)成(cheng)如意形長筒(tong),從中間扯(che)斷,每卷(juan)成(cheng)約(yue)39厘(li)米長、54厘(li)米寬的(de)(de)長條,再(zai)抹上一層香油(you),從一端(duan)卷(juan)成(cheng)圓筒(tong),夾起(qi),用(yong)(yong)手按(an)一下(xia),再(zai)搟成(cheng)直(zhi)徑為17厘(li)米的(de)(de)圓餅。將其放入(ru)油(you)鍋(guo)中炸(zha)至浮起(qi),炸(zha)時用(yong)(yong)筷子按(an)動(dong),使餅酥裂開。炸(zha)好(hao)出鍋(guo)后,撒(sa)上白糖即成(cheng)。和(he)面時不用(yong)(yong)蘇打(da),搟面皮時用(yong)(yong)力要勻,搟出的(de)(de)面皮厚薄要相同(tong)。特點(dian):造型別致,色澤誘人,甜酥脆香,美味可口。
1.盆內放(fang)入(ru)精鹽、蘇打粉、雞蛋(dan)清(qing),加清(qing)水(shui)500克攪打均勻,徐(xu)徐(xu)倒(dao)入(ru)面粉反(fan)復揉拌,直到面團不粘(zhan)手時取出,放(fang)在案板(ban)上搓條(tiao),摘(zhai)成重150克一個的(de)面劑,搓成圓(yuan)團,擺放(fang)在盛少許(xu)芝麻油的(de)瓷盤里餳10分鐘即(ji)可。

3.小鍋置(zhi)中火上(shang)(shang),放入(ru)芝麻(ma)油(you)燒到七成熱時(shi),將餅(bing)平放在鍋里,一(yi)(yi)手(shou)拿鐵絲筑籬,一(yi)(yi)手(shou)拿筷子邊炸(zha)邊撥餅(bing),邊用(yong)竹筷一(yi)(yi)夾一(yi)(yi)松(song)地使餅(bing)松(song)脆,待餅(bing)炸(zha)到浮起時(shi),翻面(mian)再炸(zha),邊炸(zha)邊用(yong)竹筷不斷地點動餅(bing)心,使餅(bing)炸(zha)得松(song)泡(pao)不散呈金黃色時(shi),撈出瀝油(you),盛盤,每個撒上(shang)(shang)少許白糖即成。
