都(dou)勻沖沖糕質柔軟香甜,色淡黃中(zhong)偏紅,地方味濃厚,口感有韌性。
制(zhi)作(zuo)“沖沖糕(gao)”的工(gong)具是采用(yong)(yong)棕樹木(mu)制(zhi)成的,分為(wei)隔板(ban)(ban)(ban)(ban)、蒸(zheng)(zheng)籠(long)(long)、木(mu)棒(bang)三大件。其中隔板(ban)(ban)(ban)(ban)略小(xiao)于(yu)鍋口,將(jiang)之架(jia)于(yu)蒸(zheng)(zheng)鍋口上,起密封(feng)和支(zhi)撐作(zuo)用(yong)(yong),板(ban)(ban)(ban)(ban)面根據(ju)能容納小(xiao)蒸(zheng)(zheng)籠(long)(long)的個數(shu)來鉆氣眼;蒸(zheng)(zheng)籠(long)(long)形(xing)如(ru)腰鼓,一(yi)般高約十厘(li)米、直徑六厘(li)米左右。以中間穿(chuan)上無(wu)數(shu)小(xiao)孔的鐵板(ban)(ban)(ban)(ban)作(zuo)甑底,用(yong)(yong)時只需(xu)將(jiang)籠(long)(long)罩在(zai)隔板(ban)(ban)(ban)(ban)氣眼上即可(ke)。另外,木(mu)棒(bang)是固定在(zai)隔板(ban)(ban)(ban)(ban)的一(yi)邊上的,主要用(yong)(yong)于(yu)蒸(zheng)(zheng)好的沖糕(gao)。
秈米(mi)3千(qian)克(ke)人,糯(nuo)米(mi)2千(qian)克(ke)、芝麻(ma)、紅糖、芝麻(ma)各適量 ?
1、將(jiang)秈米、糯米混合淘洗(xi)干(gan)凈,濾起(qi)置筲箕(ji),用(yong)紗布(bu)蓋上,餳幾個小時磨成粉,揉搓靜置一會。
2、芝麻炒香,與花生用鹽(yan)炒脆,去鹽(yan)去皮舂成面,紅糖(tang)舂成粉(fen)。
3、將米(mi)粉舀入(ru)蒸(zheng)(zheng)籠的小木(mu)籠內(nei),撒芝(zhi)麻、紅糖、花生面后,蓋(gai)(gai)上(shang)籠罩蒸(zheng)(zheng)熟透。揭蓋(gai)(gai)取糕即可。
