楊(yang)凌蘸水面(mian)(mian)(mian)是陜西一(yi)種地方小吃。面(mian)(mian)(mian)白薄筋光、油(you)汪蒜辣香(xiang)、湯面(mian)(mian)(mian)分(fen)盆裝、越嚼(jiao)口(kou)越香(xiang)。楊(yang)凌蘸水面(mian)(mian)(mian)的(de)面(mian)(mian)(mian)和(he)湯是分(fen)開(kai)的(de),吃的(de)時(shi)候從大(da)面(mian)(mian)(mian)盆里(li)夾(jia)(jia)出寬(kuan)厚(hou)且(qie)長的(de)面(mian)(mian)(mian)條拉(la)到碗里(li)的(de)湯中,然后夾(jia)(jia)著(zhu)面(mian)(mian)(mian)條一(yi)口(kou)一(yi)口(kou)地咬(yao)著(zhu)吃。

 吃(chi)(chi)(chi)(chi)(chi)罷楊(yang)凌(ling)蘸水面(mian)(mian)(mian)(mian)(mian),訪(fang)西(xi)(xi)北農(nong)林大學古(gu)農(nong)史家(jia)樊志民先生(sheng),獲知:西(xi)(xi)亞考(kao)古(gu),小(xiao)(xiao)麥(mai)(mai)有(you)(you)(you)史8千(qian)至1萬(wan)年(nian),中(zhong)(zhong)國考(kao)古(gu),甘肅小(xiao)(xiao)麥(mai)(mai)已有(you)(you)(you)五千(qian)年(nian),武功則(ze)有(you)(you)(you)3千(qian)8百年(nian)。多(duo)數農(nong)史學家(jia)認定小(xiao)(xiao)麥(mai)(mai)由西(xi)(xi)亞傳入,先西(xi)(xi)北而黃淮地區種植,古(gu)時小(xiao)(xiao)麥(mai)(mai)不(bu)(bu)叫(jiao)(jiao)(jiao)小(xiao)(xiao)麥(mai)(mai),叫(jiao)(jiao)(jiao)“來(lai)”,是(shi)(shi)(shi)(shi)(shi)繁(fan)寫(xie)的(de)(de)(de)那個“來(lai)”,大麥(mai)(mai)且(qie)叫(jiao)(jiao)(jiao)“麰”。巨獲益(yi),坦坦然(ran)(ran)(ran)飽腹而歸。

制作方法

第一步:面粉(fen)加入(ru)淡鹽水,用手揉(rou)成光(guang)滑的面條,醒上十來分鐘再(zai)揉(rou)一次。

第二步(bu):小白菜、苜(mu)蓿或者芹菜等(deng)洗(xi)凈切(qie)(qie)好,西紅柿切(qie)(qie)塊(kuai),大蔥切(qie)(qie)丁,雞蛋打散。

第三步:把面趕(gan)成一張大(da)面片,切成3-5cm寬的(de)面條待用,蓋上(shang)濕布醒十來分(fen)鐘(zhong)

第四步:把蔥姜(jiang)蒜(suan)等在鍋里爆炒,加(jia)入(ru)西(xi)紅柿翻炒,待西(xi)紅柿略化(hua)開加(jia)入(ru)適量(liang)水,煮開加(jia)入(ru)鹽、味精、胡椒粉、醬油等。

第五步:燒水下面(mian)(mian)條,下面(mian)(mian)條時用(yong)力(li)拉面(mian)(mian)條至原來的2倍(bei)多,再反復的用(yong)力(li)彈面(mian)(mian),把面(mian)(mian)的韌性釋放(fang),放(fang)入鍋(guo)中(zhong),鍋(guo)里(li)面(mian)(mian)第一次(ci)開鍋(guo)后,放(fang)入小(xiao)白菜(cai)、苜蓿或者芹菜(cai)等,再次(ci)開鍋(guo)可以(yi)盛(sheng)出;

第六步(bu):把做好的湯汁盛在碗中加入辣(la)椒油(you)和香油(you),面(mian)條一根根撈(lao)到碗里食用!
