滸灣油面明末(mo)就見(jian)諸(zhu)市場(chang),清代曾(ceng)被選(xuan)為宮廷食(shi)品(pin)。民國時(shi),精(jing)裝油面采用紅漆(qi)木盒(he)包裝,木盒(he)外雕(diao)刻有(you)龍鳳呈祥、百年好合(he)、錦繡河山(shan)等圖(tu)案,并配描金品(pin)名和(he)作坊字(zi)號、烹調說明,秀氣精(jing)美。
金溪油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)生(sheng)(sheng)(sheng)產地(di)在滸(hu)(hu)灣,因其地(di)處交通(tong)要(yao)道(dao),人(ren)(ren)員(yuan)流動快,信息靈,原(yuan)料充沛(pei),自然(ran)形(xing)成(cheng)生(sheng)(sheng)(sheng)產基地(di)。油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)的(de)(de)制作(zuo)(zuo)工(gong)藝特殊(shu),雖然(ran)在清朝后(hou)期一(yi)(yi)些鄉村也(ye)有生(sheng)(sheng)(sheng)產,但質量卻(que)無法(fa)與滸(hu)(hu)灣生(sheng)(sheng)(sheng)產的(de)(de)油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)相比(bi)。新中(zhong)國建立(li)前(qian),滸(hu)(hu)灣生(sheng)(sheng)(sheng)產油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)的(de)(de)作(zuo)(zuo)坊(fang)主要(yao)有美芳(fang)齋(zhai)、森和興、利(li)芳(fang)福、何源和等多家。當時生(sheng)(sheng)(sheng)產的(de)(de)油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)主要(yao)供富人(ren)(ren)享用(yong),普通(tong)百姓只有在喜慶日(ri)或節日(ri)時少量購買招待貴客(ke)。新中(zhong)國建立(li)后(hou),油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)作(zuo)(zuo)坊(fang)逐步(bu)改為公私合(he)營,后(hou)作(zuo)(zuo)坊(fang)全部收歸滸(hu)(hu)灣糧油(you)(you)(you)(you)(you)(you)加工(gong)廠。1982年(nian)(nian),滸(hu)(hu)灣油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)廠專門生(sheng)(sheng)(sheng)產龍須貢面(mian)(mian)(mian),產量大為提高,1997年(nian)(nian)達(da)到250噸。 滸(hu)(hu)灣油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian)烹(peng)調簡單,包裝(zhuang)講究,民間常(chang)用(yong)做饋(kui)贈親友的(de)(de)禮(li)品,寄(ji)予吉祥之意。人(ren)(ren)們(men)每逢壽誕、婚嫁、嬰(ying)兒出生(sheng)(sheng)(sheng),不(bu)論貧(pin)富都會(hui)吃上一(yi)(yi)頓(dun)油(you)(you)(you)(you)(you)(you)面(mian)(mian)(mian),以示長壽吉祥心愿(yuan)。
1984~1985年(nian),滸(hu)灣龍須貢面兩次被江(jiang)西省商業(ye)廳評為優質產品,1988年(nian)參(can)加中國首屆食品博(bo)覽(lan)會,在上(shang)海(hai)展銷(xiao)會上(shang)深(shen)受上(shang)海(hai)市民(min)的青睞。
滸灣(wan)油(you)(you)面用(yong)(yong)料(liao)(liao)講究,采(cai)用(yong)(yong)上等(deng)(deng)的(de)(de)能承受拉力的(de)(de)優(you)質面粉、茶(cha)油(you)(you)或麻油(you)(you)、精(jing)制(zhi)薯粉或葛粉、食鹽(福(fu)建(jian)產的(de)(de)細沙海(hai)鹽為佳(jia))等(deng)(deng)原料(liao)(liao),按照不同季節嚴格配方,歷(li)三期發(fa)酵,經(jing)手(shou)工(gong)(gong)精(jing)制(zhi)、微風晾干(gan)而成。其做工(gong)(gong)考(kao)究,操作嚴格,制(zhi)作過(guo)程有和(he)面、調(diao)料(liao)(liao)、搓條(tiao)、過(guo)油(you)(you)、繞面、入箱(xiang)、上架等(deng)(deng)十余道工(gong)(gong)序,要求(qiu)一環緊扣一環,且一年四季的(de)(de)調(diao)料(liao)(liao)不同。
