龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)是中國傳統名茶(cha)(cha),著名綠茶(cha)(cha)之(zhi)一(yi)。產于(yu)浙(zhe)江(jiang)(jiang)杭州(zhou)西(xi)湖(hu)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)村一(yi)帶,已有一(yi)千二(er)百余(yu)年歷史。龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)色澤翠綠,香氣濃郁,甘醇爽口,形如(ru)雀舌(she),即有“色綠、香郁、味(wei)甘、形美”四絕的(de)(de)特(te)點。龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)得名于(yu)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)。龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)位(wei)于(yu)西(xi)湖(hu)之(zhi)西(xi)翁家山的(de)(de)西(xi)北(bei)麓(lu)的(de)(de)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)村。龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)因其產地(di)(di)不同(tong),分為(wei)西(xi)湖(hu)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)、錢塘龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)(蕭(xiao)山、富(fu)陽)、越(yue)州(zhou)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)(紹興地(di)(di)區(qu):包括新(xin)昌(chang)縣(大(da)佛龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing))、嵊州(zhou)市(越(yue)鄉(xiang)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)))三種,除了杭州(zhou)市西(xi)湖(hu)區(qu)所管(guan)轄(xia)的(de)(de)范圍(龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)村梅家塢至龍(long)(long)(long)(long)塢轉塘 十三個生產大(da)隊)的(de)(de)茶(cha)(cha)葉叫(jiao)作西(xi)湖(hu)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)外(wai),其它產地(di)(di)產的(de)(de)俗稱(cheng)為(wei)浙(zhe)江(jiang)(jiang)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)茶(cha)(cha)。浙(zhe)江(jiang)(jiang)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)又以越(yue)州(zhou)龍(long)(long)(long)(long)井(jing)(jing)(jing)(jing)(jing)(jing)為(wei)勝。
西湖(hu)龍(long)井(jing)位列中國(guo)十(shi)大名(ming)(ming)茶(cha)(cha)之首,清乾隆游(you)覽(lan)杭州西湖(hu)時(shi),盛(sheng)贊龍(long)井(jing)茶(cha)(cha),并把獅(shi)峰山下(xia)胡公廟前的(de)(de)十(shi)八棵(ke)茶(cha)(cha)樹封(feng)為(wei)“御茶(cha)(cha)”。得(de)名(ming)(ming)于(yu)(yu)龍(long)井(jing)。龍(long)井(jing)位于(yu)(yu)西湖(hu)之西翁家(jia)山的(de)(de)西北麓,也(ye)就是(shi)(shi)現在(zai)的(de)(de)龍(long)井(jing)村。龍(long)井(jing)原名(ming)(ming)龍(long)泓,是(shi)(shi)一(yi)個圓形的(de)(de)泉池,大旱不涸,古人(ren)以為(wei)此泉與海(hai)相通,其中有龍(long),因稱龍(long)井(jing),傳說晉代(dai)葛洪(hong)曾在(zai)此煉丹。離龍(long)井(jing)500米左(zuo)右的(de)(de)落暉塢有龍(long)井(jing)寺(si),俗稱老龍(long)井(jing),創建于(yu)(yu)五代(dai)后漢(han)乾祐(you)二年(949年),初名(ming)(ming)報國(guo)看經院。北宋時(shi)改(gai)名(ming)(ming)壽圣院。南宋時(shi)又改(gai)稱廣福院、延恩(en)衍慶寺(si)。明正統三(san)年(1438年)才遷移至(zhi)井(jing)畔,現寺(si)已廢,辟(pi)為(wei)茶(cha)(cha)室。
茶品歷史
始產于唐(tang)朝,明(ming)(ming)代益盛。在清(qing)明(ming)(ming)前(qian)采制的叫(jiao)“明(ming)(ming)前(qian)茶”,谷雨(yu)前(qian)采制的叫(jiao)“雨(yu)前(qian)茶”。向有“雨(yu)前(qian)是(shi)(shi)上品,明(ming)(ming)前(qian)是(shi)(shi)珍品”的說(shuo)法,還有“早(zao)采一(yi)天是(shi)(shi)寶,晚(wan)采一(yi)天是(shi)(shi)草(cao)”的說(shuo)法。龍井(jing)茶泡飲時,但見芽(ya)芽(ya)直立,湯(tang)色清(qing)洌,幽香四(si)溢,尤(you)以一(yi)芽(ya)一(yi)葉(xie)、俗(su)稱“一(yi)旗一(yi)槍”者(zhe)為極(ji)品。
先(xian)時此茶(cha)按產期先(xian)后及(ji)芽(ya)葉(xie)嫩老,分為八級(ji),即(ji)“蓮(lian)心、雀舌、極(ji)品(pin)、明前、雨前、頭春(chun)、二(er)春(chun)、長大(da)”。今分為十一(yi)(yi)級(ji),即(ji)特級(ji)與(yu)一(yi)(yi)至十級(ji)。一(yi)(yi)斤(jin)特級(ji)龍(long)(long)井,約有茶(cha)芽(ya)達八萬個之(zhi)(zhi)(zhi)多。獅峰(feng)山上的龍(long)(long)井為龍(long)(long)井茶(cha)中之(zhi)(zhi)(zhi)上品(pin)。該(gai)茶(cha)采摘有嚴格(ge)要求,有只采一(yi)(yi)個嫩芽(ya)的,有采一(yi)(yi)芽(ya)一(yi)(yi)葉(xie)或一(yi)(yi)芽(ya)二(er)葉(xie)初展的。其制(zhi)工(gong)亦極(ji)為講究,在(zai)炒制(zhi)工(gong)藝中有抖、挺、扣、抓、壓、磨、搭、捺、拓、甩等十大(da)手法。操(cao)作(zuo)時變(bian)化多端,令人叫絕。四絕品(pin)質則是:色綠、香郁、味(wei)(wei)醇、形(xing)美(mei)清代(dai)品(pin)茶(cha)名家(jia)贊譽(yu)龍(long)(long)井:“甘香如蘭(lan),幽而不洌,啜之(zhi)(zhi)(zhi)淡然,看似(si)無味(wei)(wei),而飲(yin)后感太和之(zhi)(zhi)(zhi)氣(qi)彌漫齒額(e)之(zhi)(zhi)(zhi)間,此無味(wei)(wei)之(zhi)(zhi)(zhi)味(wei)(wei),乃至味(wei)(wei)也。”
浙江(jiang)(jiang)龍井(jing)茶,堪與傳統(tong)名(ming)茶"西湖龍井(jing)"相媲美,是浙江(jiang)(jiang)名(ming)茶譜中的(de)后(hou)(hou)起之秀(xiu)。蕭(xiao)山是浙江(jiang)(jiang)龍井(jing)茶的(de)發源地和主(zhu)產區。浙江(jiang)(jiang)龍井(jing)茶在(zai)我市的(de)社會價值要超過它(ta)的(de)經(jing)濟價值。在(zai)招待親朋好友時或喜慶(qing)宴會后(hou)(hou),如能飲(yin)上一杯(bei)"色、香、味(wei)、形(xing)"俱(ju)佳的(de)龍井(jing)茶,可以(yi)增添親切熱(re)烈的(de)氣氛。
西(xi)湖(hu)(hu)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha),因產(chan)于中國杭(hang)州西(xi)湖(hu)(hu)的(de)(de)(de)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha)區(qu)而得名(ming)(ming)。中國十大名(ming)(ming)茶(cha)之一(yi)。欲把西(xi)湖(hu)(hu)比西(xi)子,從來佳(jia)茗似佳(jia)人。龍(long)(long)(long)井(jing)(jing)(jing)(jing)既是(shi)地名(ming)(ming),又是(shi)泉名(ming)(ming)和茶(cha)名(ming)(ming)。茶(cha)有“四絕”:色綠、香郁、味甘、形美。特級西(xi)湖(hu)(hu)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha)扁平光滑挺直,色澤嫩(nen)綠光潤,香氣鮮嫩(nen)清高,滋(zi)味鮮爽甘醇,葉底細嫩(nen)呈朵(duo)。清明(ming)節前(qian)采制的(de)(de)(de)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha)簡(jian)稱(cheng)明(ming)前(qian)龍(long)(long)(long)井(jing)(jing)(jing)(jing),美稱(cheng)女(nv)兒紅,“院(yuan)外(wai)風(feng)荷西(xi)子笑,明(ming)前(qian)龍(long)(long)(long)井(jing)(jing)(jing)(jing)女(nv)兒紅。”這優美的(de)(de)(de)句子如(ru)詩如(ru)畫,堪稱(cheng)西(xi)湖(hu)(hu)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha)的(de)(de)(de)絕妙寫真。集名(ming)(ming)山、名(ming)(ming)寺、名(ming)(ming)湖(hu)(hu)、名(ming)(ming)泉和名(ming)(ming)茶(cha)于一(yi)體,泡一(yi)杯龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha),喝出的(de)(de)(de)卻是(shi)世所(suo)罕見(jian)的(de)(de)(de)獨特而驕人的(de)(de)(de)龍(long)(long)(long)井(jing)(jing)(jing)(jing)茶(cha)文化。
產地分布
龍(long)(long)(long)井(jing)(jing)(jing)茶(cha)名聞中外,根據產(chan)地分(fen)獅(shi)、龍(long)(long)(long)、云、虎龍(long)(long)(long)井(jing)(jing)(jing)茶(cha) ,即(ji)獅(shi)峰、龍(long)(long)(long)井(jing)(jing)(jing)、云棲、虎跑(pao)四地,民國后梅(mei)家塢的產(chan)量有(you)了(le)(le)很(hen)大(da)的提(ti)高(gao)。以(yi)前人(ren)們按照五(wu)個產(chan)地的不(bu)同品(pin)質劃分(fen)龍(long)(long)(long)井(jing)(jing)(jing)茶(cha)的質量排(pai)名,分(fen)別是獅(shi)、龍(long)(long)(long)、云、虎、梅(mei)。解(jie)放后,龍(long)(long)(long)井(jing)(jing)(jing)茶(cha)在浙江省內得(de)到(dao)了(le)(le)廣(guang)泛的種(zhong)植,品(pin)質參差不(bu)齊(qi),當前統(tong)一分(fen)為西(xi)(xi)湖龍(long)(long)(long)井(jing)(jing)(jing)、大(da)佛龍(long)(long)(long)井(jing)(jing)(jing)、錢塘龍(long)(long)(long)井(jing)(jing)(jing)和越州龍(long)(long)(long)井(jing)(jing)(jing),以(yi)西(xi)(xi)湖龍(long)(long)(long)井(jing)(jing)(jing)品(pin)質最佳。特(te)級龍(long)(long)(long)井(jing)(jing)(jing)茶(cha)需要在鐵鍋里用手翻炒,一次(ci)只(zhi)能炒250克茶(cha)青,需耗時30分(fen)鐘。茶(cha)鍋用電器加熱一般保(bao)持在250氏度(du)左右(you)。千年來西(xi)(xi)湖龍(long)(long)(long)井(jing)(jing)(jing)被世界追捧,市價居高(gao)不(bu)下,少留于(yu)市。
