建(jian)平(ping)蕎(qiao)麥是建(jian)平(ping)縣重要的糧(liang)食種(zhong)植作物(wu)品(pin)種(zhong)之一。建(jian)平(ping)蕎(qiao)麥有“粒飽、面多、粉白”等優(you)質(zhi)特點。建(jian)平(ping)縣的蕎(qiao)麥可做成(cheng)碗(wan)砣,據傳,建(jian)平(ping)縣三(san)家鄉的“蕎(qiao)麥碗(wan)坨”在清朝時就聞名遐邇,1738年乾(qian)(qian)隆皇(huang)帝北(bei)巡承德,喀喇沁右翼扎薩克(ke)親王(wang)向乾(qian)(qian)隆皇(huang)帝敬(jing)獻了蕎(qiao)麥碗(wan)坨,乾(qian)(qian)隆皇(huang)帝品(pin)嘗后頓時龍顏(yan)大(da)悅,連聲(sheng)稱贊:“難(nan)得佳品(pin),難(nan)有碗(wan)坨也”。宴后遂御(yu)筆(bi)賜字“三(san)家一絕”,“三(san)家碗(wan)坨”從(cong)此身價(jia)倍增,也使建(jian)平(ping)蕎(qiao)麥成(cheng)為地方(fang)官吏(li)和(he)王(wang)府(fu)歷(li)年進貢(gong)皇(huang)宮的最佳禮品(pin)而聞名天(tian)下。
生長環境
建平(ping)縣(xian)地(di)勢較平(ping)坦,土(tu)層深厚,依托這(zhe)里的(de)獨特氣候、土(tu)壤和(he)水質等(deng)自然條件,建平(ping)縣(xian)自古(gu)盛產蕎(qiao)(qiao)麥等(deng)各類(lei)雜糧(liang)。宋元(yuan)時(shi)期(qi)種(zhong)(zhong)(zhong)植(zhi)蕎(qiao)(qiao)麥尤為普遍,尤其(qi)是遼西建平(ping)地(di)區(qu)少雨干旱,春季耕種(zhong)(zhong)(zhong)時(shi)節(jie)多(duo)旱,大田不能(neng)及(ji)時(shi)播種(zhong)(zhong)(zhong),坡地(di)多(duo)種(zhong)(zhong)(zhong)植(zhi)蕎(qiao)(qiao)麥。這(zhe)里種(zhong)(zhong)(zhong)植(zhi)蕎(qiao)(qiao)麥有得天獨厚的(de)自然地(di)理條件,晝夜溫差大,光照充足(zu),比(bi)較適宜蕎(qiao)(qiao)麥的(de)生(sheng)長。蕎(qiao)(qiao)麥在(zai)(zai)建平(ping)地(di)區(qu)種(zhong)(zhong)(zhong)植(zhi)面(mian)積(ji)大,產量高(gao),尤其(qi)是該(gai)作物栽培簡單,它(ta)(ta)的(de)全(quan)生(sheng)育期(qi)短,可以(yi)在(zai)(zai)主作物收(shou)獲后補種(zhong)(zhong)(zhong)蕎(qiao)(qiao)麥,既(ji)增(zeng)加復(fu)種(zhong)(zhong)(zhong)指(zhi)數,又(you)便于與其(qi)它(ta)(ta)作物輪(lun)作換(huan)茬。蕎(qiao)(qiao)麥又(you)稱救命糧(liang),一是依它(ta)(ta)生(sheng)育期(qi)短的(de)優(you)勢,在(zai)(zai)遇旱災年可以(yi)后期(qi)種(zhong)(zhong)(zhong)蕎(qiao)(qiao)麥;二是從醫學和(he)食品營養(yang)(yang)價(jia)值方面(mian)看,它(ta)(ta)不僅營養(yang)(yang)成(cheng)分豐富,營養(yang)(yang)價(jia)值高(gao),而(er)且具有其(qi)它(ta)(ta)糧(liang)食作物所缺乏的(de)和(he)不具有的(de)特種(zhong)(zhong)(zhong)微(wei)量元(yuan)素,具有較高(gao)的(de)藥用(yong)成(cheng)份(fen),對現代“文(wen)明病”及(ji)幾乎所有中老年心腦(nao)血(xue)管(guan)疾病有預(yu)防(fang)和(he)治療功能(neng),因而(er)受到(dao)人(ren)們的(de)廣泛(fan)重視。
