1、南雄板鴨
“南(nan)雄板(ban)(ban)鴨”已經有千年的歷史,當地亦稱這(zhe)為“曝腌(a)”。它造型美觀、顏色(se)金(jin)黃、香氣濃郁、油尾豐滿、皮薄(bo)肉嫩、肉紅味(wei)(wei)鮮、骨脆可嚼。與之相比(bi),“南(nan)雄板(ban)(ban)鴨”又(you)以(yi)珠璣(ji)巷(xiang)臘(la)巷(xiang)的板(ban)(ban)鴨最(zui)為出名(ming)。臘(la)巷(xiang)是珠璣(ji)巷(xiang)中的行業作坊街巷(xiang)之一,以(yi)精(jing)制臘(la)味(wei)(wei)而聞名(ming)遐邇。
南雄臘鴨(ya)又稱板鴨(ya),造型(xing)美觀、鴨(ya)皮白(bai)中透黃、油尾豐滿、皮薄肉嫩(nen)、肉紅味(wei)鮮、骨脆可嚼、香氣濃郁、風味(wei)獨特,因此千余年來南來北往的(de)客(ke)人都要品嘗或購買南雄精制的(de)臘鴨(ya)。
2、南雄煙葉
黃(huang)煙(yan)(yan)是南雄一(yi)寶,南雄農民種煙(yan)(yan)、嗜煙(yan)(yan),一(yi)輩(bei)子離不開(kai)煙(yan)(yan);南雄卷煙(yan)(yan)廠產煙(yan)(yan)、銷(xiao)(xiao)煙(yan)(yan),“百順”、“珠璣”行銷(xiao)(xiao)各地。南雄最重(zhong)要(yao)的經濟支柱(zhu)是黃(huang)煙(yan)(yan),每年黃(huang)煙(yan)(yan)收入(ru)(ru)要(yao)占國(guo)民經濟總收入(ru)(ru)的一(yi)半以(yi)上。
南(nan)(nan)煙(yan)(yan)(yan)(yan)(yan)種植(zhi)(zhi)已有300多年(nian)(nian)(nian)(nian)歷(li)(li)史。南(nan)(nan)雄(xiong)煙(yan)(yan)(yan)(yan)(yan)葉(xie)品(pin)質優(you)良,為(wei)(wei)我國(guo)煙(yan)(yan)(yan)(yan)(yan)葉(xie)商品(pin)的名牌產品(pin),歷(li)(li)來飲(yin)譽中(zhong)(zhong)外,內銷全(quan)國(guo)28個(ge)大中(zhong)(zhong)城市,曾一(yi)度遠銷67個(ge)國(guo)家和(he)地(di)區(qu)。1984年(nian)(nian)(nian)(nian)至1994年(nian)(nian)(nian)(nian),累(lei)計煙(yan)(yan)(yan)(yan)(yan)葉(xie)總產21萬(wan)(wan)噸(dun)(dun)(dun),年(nian)(nian)(nian)(nian)均(jun)產2.1萬(wan)(wan)噸(dun)(dun)(dun),為(wei)(wei)廣東(dong)省(sheng)年(nian)(nian)(nian)(nian)均(jun)產量(liang)(liang)的50%左右(you)(you)。10年(nian)(nian)(nian)(nian)平均(jun)收購(gou)煙(yan)(yan)(yan)(yan)(yan)葉(xie)15600噸(dun)(dun)(dun)。為(wei)(wei)全(quan)省(sheng)年(nian)(nian)(nian)(nian)均(jun)收購(gou)量(liang)(liang)的60%左右(you)(you)。煙(yan)(yan)(yan)(yan)(yan)葉(xie)產量(liang)(liang)和(he)收購(gou)量(liang)(liang)均(jun)居全(quan)省(sheng)之首。全(quan)國(guo)煙(yan)(yan)(yan)(yan)(yan)草(cao)種植(zhi)(zhi)面積達20萬(wan)(wan)畝以上(shang)的縣市只有6個(ge),南(nan)(nan)雄(xiong)是(shi)其中(zhong)(zhong)之一(yi)。由此可見南(nan)(nan)-煙(yan)(yan)(yan)(yan)(yan)在全(quan)省(sheng)舉足輕重,在全(quan)國(guo)名列前茅(mao)。1985年(nian)(nian)(nian)(nian),廣東(dong)省(sheng)煙(yan)(yan)(yan)(yan)(yan)草(cao)總公(gong)司(si)確(que)定南(nan)(nan)雄(xiong)為(wei)(wei)優(you)質生產基地(di)。1986年(nian)(nian)(nian)(nian),中(zhong)(zhong)國(guo)煙(yan)(yan)(yan)(yan)(yan)草(cao)總公(gong)司(si)又確(que)定南(nan)(nan)雄(xiong)為(wei)(wei)出口曬煙(yan)(yan)(yan)(yan)(yan)生產基地(di)。1992年(nian)(nian)(nian)(nian),原中(zhong)(zhong)國(guo)煙(yan)(yan)(yan)(yan)(yan)草(cao)總公(gong)司(si)總經(jing)理(li)李(li)益三到南(nan)(nan)雄(xiong)視察時,欣然(ran)題詞:“金(jin)葉(xie)之鄉在南(nan)(nan)雄(xiong)"。的確(que),不論(lun)從數量(liang)(liang)還是(shi)質量(liang)(liang)來看(kan),南(nan)(nan)雄(xiong)堪稱煙(yan)(yan)(yan)(yan)(yan)葉(xie)之鄉。全(quan)市24個(ge)鄉鎮都(dou)種植(zhi)(zhi)黃煙(yan)(yan)(yan)(yan)(yan),煙(yan)(yan)(yan)(yan)(yan)農10余萬(wan)(wan)戶(hu),占總戶(hu)數的八成多。在南(nan)(nan)雄(xiong)盆地(di)田野上(shang),黃煙(yan)(yan)(yan)(yan)(yan)連(lian)綿20余萬(wan)(wan)畝,春來一(yi)片翠(cui)綠,夏(xia)至一(yi)片金(jin)黃。到了收煙(yan)(yan)(yan)(yan)(yan)季節,烤房爐火通(tong)明,村巷煙(yan)(yan)(yan)(yan)(yan)葉(xie)飄香。全(quan)市上(shang)下為(wei)(wei)煙(yan)(yan)(yan)(yan)(yan)葉(xie)而(er)忙碌(liu),為(wei)(wei)煙(yan)(yan)(yan)(yan)(yan)葉(xie)而(er)歡笑(xiao)。
3、南雄酸菜餃
南(nan)雄(xiong)(xiong)特有的(de)(de)(de)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao),這(zhe)種酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)用南(nan)雄(xiong)(xiong)話講叫“餃(jiao)(jiao)(jiao)(jiao)叻糍”,是南(nan)雄(xiong)(xiong)最平常的(de)(de)(de)小(xiao)吃(chi)了(le)(le)。酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)在(zai)(zai)菜(cai)(cai)(cai)(cai)市(shi)場、街(jie)邊(bian)小(xiao)攤(tan)都有得賣,用一(yi)(yi)次性飯盒裝,大概裝滿一(yi)(yi)盒才5元錢,價(jia)格便宜又(you)好(hao)吃(chi),很多人(ren)早(zao)上(shang)(shang)(shang)(shang)都會(hui)在(zai)(zai)上(shang)(shang)(shang)(shang)班或(huo)者上(shang)(shang)(shang)(shang)學(xue)途中買了(le)(le)邊(bian)走邊(bian)吃(chi)。現在(zai)(zai)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)已(yi)經(jing)(jing)擺上(shang)(shang)(shang)(shang)了(le)(le)酒(jiu)樓的(de)(de)(de)餐桌,成為了(le)(le)當地人(ren)招呼(hu)遠客的(de)(de)(de)佳品。一(yi)(yi)般的(de)(de)(de)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)是用米粉(fen)做(zuo)(zuo)成糍的(de)(de)(de)方法(fa)做(zuo)(zuo)面(mian)皮,再用茄(qie)子(zi)或(huo)者酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)做(zuo)(zuo)簡單的(de)(de)(de)餡料(liao),蒸(zheng)熟即成,小(xiao)小(xiao)的(de)(de)(de)一(yi)(yi)片(pian),軟(ruan)糯香口(kou),咸酸(suan)(suan)(suan)適中,十分開胃。這(zhe)種小(xiao)吃(chi)看似簡單,但做(zuo)(zuo)面(mian)皮的(de)(de)(de)手勢和配餡料(liao)的(de)(de)(de)經(jing)(jing)驗很考究,如今進(jin)了(le)(le)酒(jiu)樓的(de)(de)(de)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)已(yi)經(jing)(jing)變(bian)了(le)(le),變(bian)得更大一(yi)(yi)點(dian),雖然賣相誘人(ren),但稍(shao)嫌韌(ren)了(le)(le)一(yi)(yi)點(dian),餃(jiao)(jiao)(jiao)(jiao)太大了(le)(le)面(mian)皮不夠入(ru)味(wei),還(huan)是覺得不夠老(lao)(lao)字號小(xiao)攤(tan)子(zi)上(shang)(shang)(shang)(shang)做(zuo)(zuo)的(de)(de)(de)好(hao)吃(chi)。我們專門到新城市(shi)場街(jie)口(kou)賣酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)的(de)(de)(de)老(lao)(lao)攤(tan)主那里買來的(de)(de)(de)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao),仍舊采用老(lao)(lao)方法(fa)做(zuo)(zuo),才是地道的(de)(de)(de)酸(suan)(suan)(suan)菜(cai)(cai)(cai)(cai)餃(jiao)(jiao)(jiao)(jiao)味(wei)道。
4、黃煙
素有“黃(huang)煙(yan)(yan)之(zhi)鄉(xiang)”之(zhi)美譽。黃(huang)煙(yan)(yan)是(shi)南(nan)雄(xiong)一寶,南(nan)雄(xiong)農民(min)種煙(yan)(yan)、嗜煙(yan)(yan),一輩(bei)子離不開煙(yan)(yan);南(nan)雄(xiong)卷(juan)煙(yan)(yan)廠產煙(yan)(yan)、銷煙(yan)(yan),“百順”、“珠璣”行銷各地。南(nan)雄(xiong)最(zui)重要的經(jing)濟支(zhi)柱是(shi)黃(huang)煙(yan)(yan),每(mei)年(nian)黃(huang)煙(yan)(yan)收入要占國(guo)民(min)經(jing)濟總收入的一半(ban)以上。

5、南雄白果
南(nan)雄白(bai)(bai)(bai)果名譽東南(nan)亞,用白(bai)(bai)(bai)果配菜(cai),口咸酥爛香甜,清(qing)鮮淡雅(ya),還(huan)有(you)開胃健(jian)脾,營養豐(feng)富。民間制作的(de)白(bai)(bai)(bai)果玉盞,既滿足了口腹之欲,又(you)償還(huan)了健(jian)體的(de)心愿。

6、南雄酸筍鴨
酸(suan)筍炆鴨,到處皆有,唯獨南雄出名,原因是該(gai)地農家腌制(zhi)的酸(suan)筍味(wei)道獨特,爽脆無水漬(zi)味(wei),酸(suan)味(wei)醇而不嗆喉(hou),與無腥味(wei)的水鴨炆之,聞而不腥,酸(suan)而不膩,使您口胃大增(zeng)。

7、珠璣腐竹
腐竹(zhu)系(xi)黃(huang)豆系(xi)列產品之一。珠璣(ji)腐竹(zhu)精選(xuan)本地產優質黃(huang)豆,用山泉水(shui)配以傳(chuan)統的(de)制作(zuo)工(gong)藝(yi),厚簿均勻(yun)、清香可口、營養豐富、久煮不(bu)爛,可作(zuo)素菜、上湯。明(ming)清列為貢品,常(chang)年產量1000噸(dun),售價每(mei)千克8元。
8、白果玉盞
南(nan)雄白(bai)果名(ming)譽東南(nan)亞,用(yong)白(bai)果配菜,口(kou)咸酥爛香甜,清鮮淡雅,還(huan)有開胃(wei)健(jian)脾(pi),營養豐富。民(min)間制作的白(bai)果玉盞,既滿足了(le)(le)口(kou)腹之(zhi)欲,又償(chang)還(huan)了(le)(le)健(jian)體的心愿。
9、銀杏五彩丁
配料:南雄銀(yin)杏,腰果,西芹,胡籮卜等
特點:南(nan)雄(xiong)素有(you)“中國銀杏(xing)之鄉”的美(mei)譽,南(nan)雄(xiong)銀杏(xing)以無心、粒勻(yun)、晶瑩剔透享譽中外。該菜香滑可(ke)口(kou),是降脂降壓的綠色食品。
10、南畝涼果
南(nan)雄市(shi)南(nan)畝(mu)(mu)鎮含天然野(ye)生(sheng)桃(tao)李梅10萬畝(mu)(mu),年產(chan)鮮果8萬噸,制作涼(liang)果是該鎮的傳(chuan)(chuan)統(tong)。南(nan)畝(mu)(mu)涼(liang)果廠(chang)采用現代(dai)和傳(chuan)(chuan)統(tong)方(fang)法加工、生(sheng)產(chan)各種高級涼(liang)果。產(chan)品有:酸甜(tian)蘿卜(bu)、酸甜(tian)楊梅、酸蒜頭、話(hua)李等(deng)十(shi)幾(ji)個品種。產(chan)品銷售遍及港澳及國內各大城市(shi)。
