百子壽(shou)(shou)桃又叫百子鬧桃,是(shi)河南省地方傳統名點,屬(shu)于祝壽(shou)(shou)食品。此桃剖開后,里面露出99個(ge)小桃,含有慶祝百子,百歲之意。選料嚴格,加工(gong)精細,技(ji)藝(yi)精湛,形(xing)狀美觀,莊重(zhong),味(wei)道香甜可口。
1.和(he)面:精(jing)粉倒在案板上打(da)池,將(jiang)(jiang)豬油和(he)水倒入(ru)池內充(chong)分攪勻(yun),再(zai)徐徐摻入(ru)精(jing)粉和(he)成(cheng)(cheng)(cheng)面團,隨即(ji)用搟(xian)面杖反復搟(xian)幾次(ci),每(mei)搟(xian)一次(ci)折成(cheng)(cheng)(cheng)三折,再(zai)以(yi)顯布蓋(gai)好,靜止(zhi)20分鐘。 2.成(cheng)(cheng)(cheng)型(xing):取水和(he)面,邊(bian)(bian)搟(xian)邊(bian)(bian)疊邊(bian)(bian)壓,反復多次(ci),作成(cheng)(cheng)(cheng)大桃(tao)(tao)(tao)(tao)和(he)小桃(tao)(tao)(tao)(tao),小桃(tao)(tao)(tao)(tao)包入(ru)棗泥餡。 3.烘烤:將(jiang)(jiang)成(cheng)(cheng)(cheng)型(xing)的大桃(tao)(tao)(tao)(tao)坯子連(lian)同葫蘆瓢(piao)置盤內放入(ru)烤爐(爐溫約110℃),文(wen)火(huo)烘烤,待定型(xing)后(hou)將(jiang)(jiang)瓢(piao)取出,如變成(cheng)(cheng)(cheng)白色(se)(se)(se)則說明已烤熟;小桃(tao)(tao)(tao)(tao)也入(ru)爐烘烤成(cheng)(cheng)(cheng)白色(se)(se)(se)。 4.裝桃(tao)(tao)(tao)(tao):用刷子沾(zhan)上食用紅色(se)(se)(se)劑,把每(mei)個(ge)(ge)小桃(tao)(tao)(tao)(tao)嘴染紅。待大桃(tao)(tao)(tao)(tao)壺修飾(shi)完(wan)好后(hou),再(zai)將(jiang)(jiang)99個(ge)(ge)小桃(tao)(tao)(tao)(tao)放入(ru)大桃(tao)(tao)(tao)(tao)殼內,將(jiang)(jiang)兩個(ge)(ge)瓢(piao)狀(zhuang)桃(tao)(tao)(tao)(tao)殼合嚴,于吻接(jie)處涂(tu)上以(yi)江米面和(he)成(cheng)(cheng)(cheng)團在水里熬制而成(cheng)(cheng)(cheng)的面糊,即(ji)成(cheng)(cheng)(cheng)為完(wan)整的大桃(tao)(tao)(tao)(tao),經著色(se)(se)(se)染成(cheng)(cheng)(cheng)真桃(tao)(tao)(tao)(tao)模樣,加枝葉放于各種(zhong)相宜(yi)的桃(tao)(tao)(tao)(tao)座(zuo)上或者果籃內即(ji)為成(cheng)(cheng)(cheng)品。桃(tao)(tao)(tao)(tao)座(zuo)隨意設計,但要與桃(tao)(tao)(tao)(tao)襯托,使收到相得益(yi)彰(zhang)之效。 產品特點:選料(liao)嚴格,加工精(jing)細(xi),技藝精(jing)湛(zhan),形(xing)狀(zhuang)美觀,莊重,味道香甜(tian)可口(kou)。
