1.發面(mian)(mian):頭一(yi)天先把雞蛋(dan)(dan)(雞蛋(dan)(dan)越多,會使果做出來(lai)的(de)果子(zi)越脆)加入面(mian)(mian)粉和成面(mian)(mian)團放(fang)置在比(bi)較(jiao)暖和的(de)地(di)方,使面(mian)(mian)能發起(qi),面(mian)(mian)的(de)面(mian)(mian)積膨大(da)到一(yi)倍就好了。加入堿水(shui)揉勻。
2.和(he)面(mian)(mian)(mian)(mian):(1)先(xian)取(qu)一(yi)(yi)(yi)個盆(pen)放(fang)(fang)(fang)(fang)入(ru)面(mian)(mian)(mian)(mian)粉里(li)面(mian)(mian)(mian)(mian)放(fang)(fang)(fang)(fang)雞(ji)蛋(dan)、牛奶(nai)、白(bai)糖(tang)、小(xiao)(xiao)蘇(su)打和(he)成(cheng)白(bai)色(se)硬(ying)面(mian)(mian)(mian)(mian)團(tuan),蓋上布在暖(nuan)氣邊放(fang)(fang)(fang)(fang)置(zhi)。(2)在取(qu)一(yi)(yi)(yi)盆(pen)放(fang)(fang)(fang)(fang)入(ru)面(mian)(mian)(mian)(mian)粉,將雞(ji)蛋(dan)打入(ru)然后把摻(chan)了(le)紅(hong)糖(tang)、蜂(feng)蜜的牛奶(nai)倒入(ru)面(mian)(mian)(mian)(mian)粉里(li)和(he)成(cheng)黑(hei)色(se)硬(ying)面(mian)(mian)(mian)(mian)團(tuan),不要忘(wang)了(le)放(fang)(fang)(fang)(fang)小(xiao)(xiao)蘇(su)打(一(yi)(yi)(yi)點就行)蓋上布在暖(nuan)和(he)的地(di)方放(fang)(fang)(fang)(fang)置(zhi)。(3)在取(qu)一(yi)(yi)(yi)盆(pen)放(fang)(fang)(fang)(fang)入(ru)少量面(mian)(mian)(mian)(mian)粉把熬好的熟油倒進去(qu)和(he)成(cheng)油酥面(mian)(mian)(mian)(mian),(4)取(qu)一(yi)(yi)(yi)點發面(mian)(mian)(mian)(mian)和(he)油酥面(mian)(mian)(mian)(mian)和(he)白(bai)色(se)硬(ying)面(mian)(mian)(mian)(mian)團(tuan)一(yi)(yi)(yi)起揉勻分成(cheng)若干小(xiao)(xiao)塊蓋上布在暖(nuan)氣邊放(fang)(fang)(fang)(fang)置(zhi)。(5)取(qu)一(yi)(yi)(yi)點發面(mian)(mian)(mian)(mian)和(he)油酥面(mian)(mian)(mian)(mian)和(he)黑(hei)色(se)硬(ying)面(mian)(mian)(mian)(mian)團(tuan)一(yi)(yi)(yi)起揉勻分成(cheng)若干小(xiao)(xiao)塊蓋上布在暖(nuan)氣邊放(fang)(fang)(fang)(fang)置(zhi)。
3.搟面(mian)(mian)(mian):取兩塊白色面(mian)(mian)(mian)團用大搟面(mian)(mian)(mian)杖把面(mian)(mian)(mian)團搟成面(mian)(mian)(mian)片,在把黑(hei)色面(mian)(mian)(mian)團也(ye)搟開。
4.在(zai)白面(mian)片上刷上水(shui)把(ba)(ba)黑(hei)面(mian)片放(fang)在(zai)上面(mian),在(zai)刷上水(shui)把(ba)(ba)白面(mian)片放(fang)在(zai)上面(mian)。就是中(zhong)間是黑(hei)色的上下是白色的,然后用刀切成長條狀,幾(ji)個長條上下堆放(fang),在(zai)中(zhong)間用刀拉幾(ji)道口子,做(zuo)成花式果(guo)子。下油鍋(guo)(guo)炸,要密(mi)切注意火候,不然果(guo)子會被(bei)炸黑(hei)的。一(yi)般第(di)一(yi)盤果(guo)子很可能會炸黑(hei),以后就有經驗了。出鍋(guo)(guo)之后可以撒點兒糖,非常(chang)爽(shuang)口。
選米(mi),一般(ban)糯米(mi)為佳(jia),做出來口(kou)感軟(ruan)糯香甜 ②將谷子輾成米(mi)粒后(hou)磨成粉 ③熬制白糖水(shui)與米(mi)粉和勻(番(fan)薯(shu)油果可不加糖)④將和好的面捏(nie)成圓球,進行油炸。(客(ke)家做法(fa))
