蛙(wa)魚又稱涼魚,是一(yi)種中國民間小吃,流行于(yu)棗莊、徐州、蕭(xiao)縣地區。李申先生在《徐州方言(yan)志(zhi)》將該詞記作“瓦魚子”,意為“一(yi)種形(xing)同小魚的面食(shi);涼粉的一(yi)種。”制(zhi)作“蛙(wa)魚”的原料,大多選用山芋淀粉。加(jia)入甜醋,蘿卜干榨菜或者花生米,辣椒醬等原料后,味道清涼順滑爽口,是當地人(ren)家喻戶曉的休閑美食(shi)。
制作(zuo)“蛙魚(yu)”的(de)(de)原(yuan)料,現(xian)在大多選用(yong)(yong)山芋淀(dian)(dian)粉(fen),也有(you)(you)的(de)(de)用(yong)(yong)綠豆(dou)(dou)淀(dian)(dian)粉(fen)或豌豆(dou)(dou)淀(dian)(dian)粉(fen),而陜西風味的(de)(de)“面(mian)魚(yu)子”是用(yong)(yong)蕎(qiao)麥面(mian)調釋(shi),用(yong)(yong)漏勺漏在開(kai)(kai)水(shui)(shui)中(zhong)氽熟,然(ran)后(hou)加(jia)入(ru)(ru)調料食(shi)用(yong)(yong)。徐(xu)州“蛙魚(yu)”的(de)(de)制作(zuo)是將淀(dian)(dian)粉(fen)用(yong)(yong)水(shui)(shui)稀(xi)釋(shi)攪開(kai)(kai),倒(dao)(dao)入(ru)(ru)燒開(kai)(kai)的(de)(de)沸(fei)水(shui)(shui)中(zhong),淀(dian)(dian)粉(fen)受熱(re)膨脹(zhang),糊(hu)(hu)化成淀(dian)(dian)粉(fen)糊(hu)(hu),然(ran)后(hou)趁熱(re)倒(dao)(dao)入(ru)(ru)鉆有(you)(you)洞(dong)眼的(de)(de)盆中(zhong),將盆支架在盛有(you)(you)冷(leng)開(kai)(kai)水(shui)(shui)的(de)(de)大盆上,這樣淀(dian)(dian)粉(fen)糊(hu)(hu)就從洞(dong)眼流出來(lai),落在冷(leng)開(kai)(kai)水(shui)(shui)中(zhong),冷(leng)卻后(hou)形似蝌(ke)蚪。食(shi)時加(jia)入(ru)(ru)辣椒醬、蒜泥,再加(jia)入(ru)(ru)徐(xu)州特產蘿榨(zha)菜,酸(suan)、咸、香、辣可(ke)口。夏天用(yong)(yong)冷(leng)水(shui)(shui)冰,冬天用(yong)(yong)熱(re)水(shui)(shui)焐。
食用時加(jia)入:甜醋、辣椒、蘿卜干(gan)榨菜。也有部(bu)分地(di)方喜(xi)歡加(jia)入香油,花生米。
調味時關鍵是甜醋的味道。
