選(xuan)用(yong)濃豆(dou)漿,倒(dao)入平(ping)底鍋中(zhong)(zhong)(zhong),加熱時注意不要(yao)煮(zhu)沸,鍋中(zhong)(zhong)(zhong)豆(dou)漿的表(biao)層(ceng)就產生一層(ceng)皮(pi)膜,用(yong)竹簽等(deng)工具(ju)恰(qia)當地撈(lao)出(chu)并使之慢慢地干(gan)(gan)燥(zao),但也(ye)有(you)在未干(gan)(gan)燥(zao)時就加以(yi)烹調(diao)食(shi)用(yong)的。此(ci)膜撈(lao)出(chu)后鍋中(zhong)(zhong)(zhong)會再次產生皮(pi)膜,繼續撈(lao)出(chu),這樣如此(ci)反復(fu),豆(dou)漿的濃度(du)會逐(zhu)漸稀(xi)薄(bo),要(yao)適當地給(gei)予補(bu)充(chong)。
