天(tian)長(chang)甘(gan)(gan)露餅(bing)是(shi)安徽天(tian)長(chang)市地(di)方傳統名點(dian)(dian),著(zhu)名的精(jing)細糕(gao)點(dian)(dian)。相傳道(dao)光年間(jian),天(tian)長(chang)縣(xian)狀元(yuan)戴蘭芬將其(qi)進(jin)貢(gong)(gong)給皇帝(di),故又有(you)“進(jin)貢(gong)(gong)甘(gan)(gan)露餅(bing)”之稱。該餅(bing)以精(jing)白面(mian)粉(fen)熟豬油(you),白綿(mian)糖、青(qing)梅、紅絲等原(yuan)料精(jing)制而成,特點(dian)(dian)是(shi)造型(xing)美觀,潔白如(ru)玉,層(ceng)層(ceng)迭(die)迭(die)猶(you)如(ru)盛開的白牡丹,入口甜軟,如(ru)啜甘(gan)(gan)露。
酥(su)香味(wei)美,風味(wei)獨特。
1.將精面粉、白糖、熟豬油(you)、雞蛋、蘇打粉一同放入盆(pen)內(nei),和成面團,揉成皮面。
2.瘦豬肉、冬菇、筍片均切成筷頭丁(ding),入油鍋(guo)加調味炒熟成餡(xian)。
3.皮面(mian)搓成(cheng)條,摘(zhai)成(cheng)劑(ji)子,壓扁包入餡料(liao),以每個70-75克為宜,再搟成(cheng)扁圓形,入爐(lu)烤熟即成(cheng)。
