蝦(xia)(xia)(xia)(xia)米主要產地在(zai)黃龍(long)島,已在(zai)五(wu)六十(shi)年的加工(gong)(gong)(gong)歷史。蝦(xia)(xia)(xia)(xia)米由大白蝦(xia)(xia)(xia)(xia)、紅絲頭蝦(xia)(xia)(xia)(xia)等鮮(xian)蝦(xia)(xia)(xia)(xia)加工(gong)(gong)(gong)而成(cheng)。其中(zhong)金鉤(gou)蝦(xia)(xia)(xia)(xia)米堪(kan)稱(cheng)蝦(xia)(xia)(xia)(xia)米中(zhong)的上品。這種蝦(xia)(xia)(xia)(xia)米個頭大,只(zhi)只(zhi)勻稱(cheng),烤(kao)(kao)熟(shu)時尾巴彎(wan)曲(qu)似鉤(gou),故(gu)名“金鉤(gou)”,也稱(cheng)“開洋”。蝦(xia)(xia)(xia)(xia)米加工(gong)(gong)(gong)質(zhi)量的優(you)劣與(yu)鮮(xian)蝦(xia)(xia)(xia)(xia)有關(guan),尤以冬蝦(xia)(xia)(xia)(xia)和春蝦(xia)(xia)(xia)(xia)為(wei)止選。傳(chuan)統(tong)工(gong)(gong)(gong)藝,須經過近十(shi)道工(gong)(gong)(gong)序,近幾年簡化(hua)為(wei)烤(kao)(kao)熟(shu)、曬(shai)干、剝(bo)殼三(san)道工(gong)(gong)(gong)序。由于蝦(xia)(xia)(xia)(xia)米色艷質(zhi)凈,鮮(xian)美無比,是(shi)純天然的海鮮(xian)調味(wei)品,故(gu)深受人們的歡迎。
