色香(xiang)味(wei)俱全,是當地群眾逢年過節、婚喪娶嫁款待賓客或祭祀祖先和神(shen)靈的傳統食品。
鶴慶米(mi)糕,制作精細,分干糕和水糕兩大類。
先將上(shang)等白米(mi)泡軟后(hou),壓磨成(cheng)粉,然(ran)后(hou)用薄荷、橙(cheng)皮汁加紅糖(tang)將粉碾細(xi),用細(xi)篩(shai)篩(shai)入(ru)甑子內,再用薄刀小(xiao)心劃(hua)成(cheng)2寸(cun)(cun)、高1.5寸(cun)(cun),厚0.5寸(cun)(cun)的(de)小(xiao)塊,用大火蒸(zheng)熟。
高(gao)粉制成(cheng)(cheng)后(hou),加百分之一(yi)的糯米面(mian)(mian),蒸(zheng)發(fa)亦(yi)如干(gan)糕(gao)(gao)(gao),但不加糖(tang),待(dai)(dai)糕(gao)(gao)(gao)蒸(zheng)熟(shu)后(hou)在把紅(hong)(hong)(hong)糖(tang)撒在上面(mian)(mian),待(dai)(dai)糖(tang)蒸(zheng)化后(hou)在撒上芝(zhi)麻或蘇(su)子而成(cheng)(cheng)。干(gan)糕(gao)(gao)(gao),又以喜慶干(gan)糕(gao)(gao)(gao)為上品,喜慶干(gan)糕(gao)(gao)(gao)又分夾(jia)(jia)層(ceng)糕(gao)(gao)(gao)和(he)色(se)(se)(se)糕(gao)(gao)(gao)兩種(zhong)。夾(jia)(jia)層(ceng)糕(gao)(gao)(gao)呈菱形,比普通(tong)干(gan)糕(gao)(gao)(gao)稍厚略大,中有紅(hong)(hong)(hong)糖(tang)、薄荷、橙皮(pi)、棗泥、龍眼的混合夾(jia)(jia)層(ceng);色(se)(se)(se)糕(gao)(gao)(gao)呈正方形,中間有紅(hong)(hong)(hong)色(se)(se)(se)腰線,表(biao)面(mian)(mian)為紅(hong)(hong)(hong)色(se)(se)(se)罩面(mian)(mian),紅(hong)(hong)(hong)白分明(ming),質細而美觀。蒸(zheng)米糕(gao)(gao)(gao)若用(yong)于待(dai)(dai)客時,表(biao)面(mian)(mian)加紅(hong)(hong)(hong)糖(tang)、玫瑰糖(tang);用(yong)一(yi)祭祖供佛(fo)時,糕(gao)(gao)(gao)面(mian)(mian)須插鮮花。每年清明(ming)時節(jie),青(qing)蠶豆成(cheng)(cheng)熟(shu)上市(shi),在米面(mian)(mian)中滲進豆米粉,糕(gao)(gao)(gao)成(cheng)(cheng)綠黃(huang)色(se)(se)(se),食味(wei)更佳。這種(zhong)青(qing)豆米糕(gao)(gao)(gao),多(duo)用(yong)作上山(shan)掃(sao)墓(mu)和(he)招(zhao)待(dai)(dai)嘉賓貴客。
