西(xi)河煎餅(bing),是山東淄(zi)博西(xi)河鎮著名的小吃。具有薄如紙、色(se)如玉、甘如飴,素雅柔韌,風味(wei)獨(du)特,色(se)澤鮮(xian)(xian)亮,味(wei)道(dao)鮮(xian)(xian)美,清香可口,風味(wei)獨(du)特之(zhi)特點。
西河(he)煎(jian)(jian)(jian)餅(bing)采用(yong)(yong)傳統(tong)加工工藝,純手(shou)工制(zhi)(zhi)作,糧食要(yao)(yao)經(jing)過(guo)多次淘洗,一(yi)夜浸泡,然(ran)后放入1/3或一(yi)半的(de)(de)孰料,這(zhe)樣磨出的(de)(de)糊(hu)子(zi)(zi)(zi)(zi)才(cai)(cai)好(hao)烙(luo),攤的(de)(de)煎(jian)(jian)(jian)餅(bing)才(cai)(cai)更(geng)爽口。磨糊(hu)子(zi)(zi)(zi)(zi)是(shi)件很費工夫的(de)(de)事,二三十(shi)斤糧食要(yao)(yao)花兩三個小時,往磨眼添(tian)料也得是(shi)有(you)經(jing)驗的(de)(de)老手(shou),要(yao)(yao)勤添(tian)少添(tian),磨出的(de)(de)糊(hu)子(zi)(zi)(zi)(zi)才(cai)(cai)細膩均勻(yun)。攤烙(luo)要(yao)(yao)求(qiu)的(de)(de)技巧性極高,想練成這(zhe)一(yi)絕活(huo)就(jiu)得先(xian)會使用(yong)(yong)西河(he)人的(de)(de)“三件寶”:鏊子(zi)(zi)(zi)(zi)、刮耙和油(you)(you)擦。鏊子(zi)(zi)(zi)(zi),鐵制(zhi)(zhi),圓(yuan)形(xing),中心稍凸(tu),下有(you)三足(zu),其下用(yong)(yong)柴草(cao)加熱(re),上(shang)(shang)面即可(ke)烙(luo)制(zhi)(zhi)煎(jian)(jian)(jian)餅(bing)。刮耙,木制(zhi)(zhi),版狀弧(hu)形(xing),有(you)柄,把(ba)糊(hu)子(zi)(zi)(zi)(zi)舀(yao)到熟鏊子(zi)(zi)(zi)(zi)上(shang)(shang)用(yong)(yong)它薄薄地(di)左右(you)攤勻(yun)。油(you)(you)擦,又稱油(you)(you)搭子(zi)(zi)(zi)(zi),是(shi)用(yong)(yong)十(shi)幾層白(bai)布縫制(zhi)(zhi)的(de)(de)方(fang)形(xing)擦子(zi)(zi)(zi)(zi),蘸上(shang)(shang)食油(you)(you)擦鏊子(zi)(zi)(zi)(zi),防止煎(jian)(jian)(jian)餅(bing)粘在鏊子(zi)(zi)(zi)(zi)上(shang)(shang)揭不下來。
