西(xi)(xi)河煎餅(bing),是山東淄博西(xi)(xi)河鎮(zhen)著名(ming)的小吃(chi)。具(ju)有(you)薄如紙、色如玉、甘(gan)如飴(yi),素雅柔韌,風味獨特,色澤(ze)鮮亮,味道(dao)鮮美,清香可口(kou),風味獨特之特點。
西河煎(jian)餅(bing)(bing)(bing)采用傳統加工(gong)(gong)工(gong)(gong)藝,純(chun)手(shou)工(gong)(gong)制(zhi)(zhi)作(zuo),糧食要經過(guo)多次淘洗(xi),一(yi)夜浸泡,然后放(fang)入1/3或一(yi)半的(de)孰料,這(zhe)樣磨出的(de)糊(hu)子(zi)(zi)(zi)(zi)(zi)才(cai)好(hao)烙,攤的(de)煎(jian)餅(bing)(bing)(bing)才(cai)更爽(shuang)口。磨糊(hu)子(zi)(zi)(zi)(zi)(zi)是件(jian)很費工(gong)(gong)夫的(de)事,二三(san)十斤(jin)糧食要花兩三(san)個小時(shi),往(wang)磨眼添料也得(de)是有(you)經驗的(de)老(lao)手(shou),要勤添少(shao)添,磨出的(de)糊(hu)子(zi)(zi)(zi)(zi)(zi)才(cai)細膩均勻。攤烙要求的(de)技(ji)巧性極(ji)高,想練成這(zhe)一(yi)絕活就得(de)先會使用西河人的(de)“三(san)件(jian)寶(bao)”:鏊(ao)子(zi)(zi)(zi)(zi)(zi)、刮耙和油擦(ca)。鏊(ao)子(zi)(zi)(zi)(zi)(zi),鐵制(zhi)(zhi),圓(yuan)形,中心(xin)稍凸,下有(you)三(san)足,其下用柴(chai)草加熱,上(shang)(shang)面即可烙制(zhi)(zhi)煎(jian)餅(bing)(bing)(bing)。刮耙,木制(zhi)(zhi),版(ban)狀弧(hu)形,有(you)柄,把糊(hu)子(zi)(zi)(zi)(zi)(zi)舀(yao)到熟(shu)鏊(ao)子(zi)(zi)(zi)(zi)(zi)上(shang)(shang)用它薄薄地左右攤勻。油擦(ca),又稱油搭(da)子(zi)(zi)(zi)(zi)(zi),是用十幾層(ceng)白布(bu)縫制(zhi)(zhi)的(de)方形擦(ca)子(zi)(zi)(zi)(zi)(zi),蘸上(shang)(shang)食油擦(ca)鏊(ao)子(zi)(zi)(zi)(zi)(zi),防止煎(jian)餅(bing)(bing)(bing)粘在鏊(ao)子(zi)(zi)(zi)(zi)(zi)上(shang)(shang)揭(jie)不下來(lai)。
