西河(he)煎餅,是山東淄博西河(he)鎮著(zhu)名(ming)的(de)小吃。具有(you)薄如紙、色如玉、甘如飴,素雅柔韌,風味(wei)(wei)獨(du)特,色澤鮮(xian)(xian)亮,味(wei)(wei)道鮮(xian)(xian)美(mei),清香可口,風味(wei)(wei)獨(du)特之(zhi)特點。
西(xi)河煎餅(bing)采用傳統(tong)加(jia)工工藝,純(chun)手(shou)工制(zhi)(zhi)作(zuo),糧食要(yao)經(jing)過多次淘洗(xi),一(yi)夜浸泡,然后放入1/3或一(yi)半(ban)的孰料(liao),這樣磨(mo)出的糊(hu)子(zi)(zi)(zi)才好烙(luo),攤的煎餅(bing)才更爽口。磨(mo)糊(hu)子(zi)(zi)(zi)是件(jian)很費工夫的事,二三十(shi)斤糧食要(yao)花兩三個(ge)小時(shi),往磨(mo)眼添料(liao)也得是有經(jing)驗的老手(shou),要(yao)勤添少添,磨(mo)出的糊(hu)子(zi)(zi)(zi)才細膩(ni)均勻。攤烙(luo)要(yao)求的技巧(qiao)性(xing)極高,想練(lian)成(cheng)這一(yi)絕活就得先會使用西(xi)河人的“三件(jian)寶”:鏊子(zi)(zi)(zi)、刮耙和油(you)擦。鏊子(zi)(zi)(zi),鐵制(zhi)(zhi),圓形(xing),中(zhong)心(xin)稍凸,下有三足,其下用柴草加(jia)熱(re),上(shang)(shang)面即可烙(luo)制(zhi)(zhi)煎餅(bing)。刮耙,木制(zhi)(zhi),版狀弧(hu)形(xing),有柄,把糊(hu)子(zi)(zi)(zi)舀到熟鏊子(zi)(zi)(zi)上(shang)(shang)用它薄薄地左右(you)攤勻。油(you)擦,又稱油(you)搭子(zi)(zi)(zi),是用十(shi)幾層白布縫制(zhi)(zhi)的方形(xing)擦子(zi)(zi)(zi),蘸(zhan)上(shang)(shang)食油(you)擦鏊子(zi)(zi)(zi),防止煎餅(bing)粘(zhan)在鏊子(zi)(zi)(zi)上(shang)(shang)揭(jie)不(bu)下來(lai)。
