隆德長(chang)面(mian)(mian)是(shi)寧夏回族自(zi)治(zhi)區固原市隆德縣的(de)(de)(de)特色小吃。隆德長(chang)面(mian)(mian)一般有細長(chang)面(mian)(mian)、細寬面(mian)(mian)、寬面(mian)(mian)等種類(lei),既屬經濟(ji)飽肚的(de)(de)(de)主食(shi)(shi),還可作登(deng)大雅之堂(tang)的(de)(de)(de)上(shang)佳美食(shi)(shi)。
面(mian)條(tiao)起源于中國,已有(you)四千多年的制(zhi)作食(shi)用歷(li)史。面(mian)條(tiao)是一(yi)種制(zhi)作簡單,食(shi)用方便,營養豐富,即(ji)可主食(shi)又可快餐的健(jian)康保健(jian)食(shi)品。面(mian)條(tiao)的主要(yao)營養成分有(you)蛋白質、脂肪、碳水化(hua)合(he)物(wu)等(deng)。面(mian)條(tiao)易(yi)于消化(hua)吸收,有(you)改(gai)善(shan)貧血、增強免疫力、平衡營養吸收等(deng)功效。
上等長面(mian)(mian)(mian)(mian)(mian)面(mian)(mian)(mian)(mian)(mian)條勻稱,吃起來有韌勁(jing),吸(xi)起來有響聲,俗稱吸(xi)長面(mian)(mian)(mian)(mian)(mian)。吃到最后一碗(wan),一般要干(gan)拌(ban)寬面(mian)(mian)(mian)(mian)(mian)或韭葉面(mian)(mian)(mian)(mian)(mian),多加食油(you)、臊子(zi)(zi)等,俗稱吃干(gan)飯。隆德長面(mian)(mian)(mian)(mian)(mian)因湯(tang)和(he)臊子(zi)(zi)的(de)不(bu)同(tong),叫(jiao)(jiao)法也不(bu)相(xiang)同(tong)。如漿水(shui)摻湯(tang)叫(jiao)(jiao)“漿水(shui)面(mian)(mian)(mian)(mian)(mian)”,肉臊子(zi)(zi)做(zuo)面(mian)(mian)(mian)(mian)(mian)叫(jiao)(jiao)“臊子(zi)(zi)面(mian)(mian)(mian)(mian)(mian)”,不(bu)摻湯(tang)的(de)叫(jiao)(jiao)“干(gan)拌(ban)面(mian)(mian)(mian)(mian)(mian)”,吃面(mian)(mian)(mian)(mian)(mian)不(bu)喝湯(tang)的(de)叫(jiao)(jiao)“憨(han)水(shui)面(mian)(mian)(mian)(mian)(mian)”。
隆(long)德長(chang)面(mian)(mian)的(de)制作工序是用(yong)(yong)上等小麥面(mian)(mian)粉和堿水調勻(yun),細揉慢搟,然后用(yong)(yong)刀切成或細或寬(kuan)的(de)長(chang)面(mian)(mian)條,俗稱(cheng)細長(chang)面(mian)(mian)或寬(kuan)長(chang)面(mian)(mian)。將切好的(de)長(chang)面(mian)(mian)下到開水鍋內(nei),待水沸后即可將面(mian)(mian)用(yong)(yong)筷子撈入(ru)碗(wan)中(zhong),放進提(ti)前炒好的(de)臊子(常(chang)為炒肉菜、炒韭菜、炒酸菜、炒雞蛋等居多(duo)),再(zai)盛進早已摻(chan)好的(de)酸湯,分(fen)量多(duo)少(shao)按飯碗(wan)大(da)小而定,一般以湯多(duo)面(mian)(mian)少(shao)為宜。
