2、吳厝淮山
“吳厝淮(huai)山(shan)”是廣東(dong)省揭東(dong)縣一大(da)農(nong)業(ye)特色品牌,主要產(chan)地(di)(di)為(wei)玉(yu)湖鎮吳厝村(cun),種(zhong)植(zhi)(zhi)(zhi)歷史(shi)最早在(zai)解放(fang)初期(qi)。1999年(nian)(nian)以來,隨(sui)著農(nong)業(ye)產(chan)業(ye)結構的(de)調整,目前(qian)毗鄰的(de)湖崗(gang)、玉(yu)聯、浮山(shan)、汾水(shui)等村(cun)也已連片種(zhong)植(zhi)(zhi)(zhi),初步形成5000畝的(de)吳厝淮(huai)山(shan)生產(chan)基地(di)(di)。該生產(chan)基地(di)(di)處(chu)在(zai)榕江北河沖積地(di)(di)帶,多為(wei)沙質(zhi)土(tu),土(tu)質(zhi)疏松(song),土(tu)層深(shen)厚,且本地(di)(di)日照充(chong)足,雨水(shui)充(chong)沛,對根生作物生長非常(chang)有利。村(cun)民積累了豐富(fu)的(de)淮(huai)山(shan)種(zhong)植(zhi)(zhi)(zhi)經驗,在(zai)管(guan)理(li)上精(jing)耕細作,在(zai)肥料(liao)的(de)應(ying)用上大(da)量(liang)使(shi)用有機質(zhi)肥、農(nong)家(jia)肥,使(shi)吳厝淮(huai)山(shan)塊大(da)、粉(fen)多、質(zhi)量(liang)好。 以前(qian)淮(huai)山(shan)種(zhong)植(zhi)(zhi)(zhi) 都是在(zai)3-4月(yue)(yue),于年(nian)(nian)底(di)前(qian)收(shou)獲(huo)。通過種(zhong)植(zhi)(zhi)(zhi)技術革新,由春植(zhi)(zhi)(zhi)改為(wei)夏植(zhi)(zhi)(zhi),即6-7月(yue)(yue)種(zhong)植(zhi)(zhi)(zhi),次年(nian)(nian)2-3月(yue)(yue)開(kai)始(shi)收(shou)獲(huo),并一直持續到國慶(qing)節前(qian)后,使(shi)全年(nian)(nian)都有淮(huai)山(shan)上市。夏植(zhi)(zhi)(zhi)技術推廣后,淮(huai)山(shan)畝產(chan)量(liang)由2200公斤提高到2500公斤,每畝收(shou)入7000元(yuan)。
3、普寧青梅

4、埔田竹筍

7、脆皮豆腐
脆(cui)皮豆(dou)腐(fu)(fu)菜色特點:表皮松脆(cui),內嫩香醇。用料說明:豆(dou)腐(fu)(fu)400克(ke)(ke)(ke)(ke),鮮(xian)(xian)魚(yu)肉(rou)100克(ke)(ke)(ke)(ke),臘(la)腸(chang)75克(ke)(ke)(ke)(ke),雞蛋(dan)1個,肥(fei)豬(zhu)肉(rou)100克(ke)(ke)(ke)(ke),方(fang)(fang)魚(yu)末5克(ke)(ke)(ke)(ke),青蔥白10克(ke)(ke)(ke)(ke),精(jing)(jing)(jing)鹽6克(ke)(ke)(ke)(ke),胡椒粉(fen)O.3克(ke)(ke)(ke)(ke),味(wei)精(jing)(jing)(jing)6克(ke)(ke)(ke)(ke),麻油(you)(you)3克(ke)(ke)(ke)(ke),生(sheng)(sheng)粉(fen)20克(ke)(ke)(ke)(ke),澄面粉(fen)20克(ke)(ke)(ke)(ke),熟豬(zhu)油(you)(you)30克(ke)(ke)(ke)(ke),生(sheng)(sheng)油(you)(you)750克(ke)(ke)(ke)(ke)(耗油(you)(you)100克(ke)(ke)(ke)(ke))。制作方(fang)(fang)法:(1)先把(ba)(ba)豆(dou)腐(fu)(fu)放在砧板(ban)上(shang)用刀壓爛,用湯盆盛(sheng)著待用;再(zai)(zai)把(ba)(ba)鮮(xian)(xian)魚(yu)肉(rou)用刀刨出肉(rou)泥,用刀剁成(cheng)(cheng)茸,用大碗盛(sheng)著,加(jia)(jia)入(ru)精(jing)(jing)(jing)鹽3克(ke)(ke)(ke)(ke)、味(wei)精(jing)(jing)(jing)2克(ke)(ke)(ke)(ke),用竹筷攪(jiao)拌起(qi)膠,成(cheng)(cheng)魚(yu)膠。臘(la)腸(chang)、肥(fei)豬(zhu)肉(rou)切成(cheng)(cheng)細(xi)粒,青蔥白切成(cheng)(cheng)蔥珠。(2)將魚(yu)膠、臘(la)腸(chang)、肥(fei)豬(zhu)肉(rou)、雞蛋(dan)白、精(jing)(jing)(jing)鹽、味(wei)精(jing)(jing)(jing)放進豆(dou)腐(fu)(fu)盆內,用手攪(jiao)拌均(jun)勻(yun)(yun)。再(zai)(zai)加(jia)(jia)入(ru)蔥白、方(fang)(fang)魚(yu)末、生(sheng)(sheng)粉(fen)、澄面粉(fen)、胡椒粉(fen)、麻油(you)(you),再(zai)(zai)攪(jiao)拌均(jun)勻(yun)(yun)。然后取4張(zhang)薄保鮮(xian)(xian)紙,每張(zhang)20厘米×20厘米,抹(mo)上(shang)生(sheng)(sheng)油(you)(you),把(ba)(ba)已(yi)調好(hao)昧的(de)豆(dou)腐(fu)(fu)泥分成(cheng)(cheng)4份,分別放在已(yi)抹(mo)油(you)(you)的(de)保鮮(xian)(xian)紙上(shang)抹(mo)平,抹(mo)成(cheng)(cheng)日字形(xing)薄狀,包起(qi)放進電冰箱凍至(zhi)稍變硬。(3)將炒鼎洗凈,燒熱放入(ru)生(sheng)(sheng)油(you)(you),待油(you)(you)熱至(zhi)約(yue)180℃。

普(pu)寧竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)普(pu)寧竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)是指(zhi)著名(ming)的(de)(de)洪陽(yang)(yang)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe),盛產(chan)(chan)于普(pu)寧洪陽(yang)(yang)地(di)區(qu)(qu),歷史悠久,后來擴種到南溪和(he)廣太地(di)區(qu)(qu)。洪陽(yang)(yang)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)與其它(ta)果(guo)蔗(zhe)(zhe)(zhe)和(he)糖蔗(zhe)(zhe)(zhe)不同,含糖少,但(dan)卻以其蔗(zhe)(zhe)(zhe)肉松(song)脆,味(wei)道清甜,兼有(you)清熱利尿、益血補肝功(gong)效等獨特優(you)點而聞名(ming)于世。曾作為(wei)果(guo)蔗(zhe)(zhe)(zhe)直接出口(kou)。一九(jiu)六(liu)六(liu)年(nian)(nian)以后,洪陽(yang)(yang)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)已(yi)全(quan)部收為(wei)制(zhi)作“竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)茅根(gen)精”的(de)(de)主要(yao)原料(liao)。潮(chao)汕地(di)區(qu)(qu)民間(jian)有(you)采用(yong)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)尾(wei)段煮水(shui)飲服(fu)以防治(zhi)肝炎(yan)、麻(ma)疹和(he)熱癥(zheng)的(de)(de)傳統療法。廣州和(he)港澳(ao)地(di)區(qu)(qu)也有(you)喜歡(huan)飲用(yong)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)水(shui)的(de)(de)習慣。所以,普(pu)寧果(guo)子廠于一九(jiu)六(liu)六(liu)年(nian)(nian)根(gen)據這(zhe)些(xie)民間(jian)經驗,把竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)和(he)適(shi)量茅根(gen)配合(he),在我國首創研制(zhi)成(cheng)功(gong)了“竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)茅根(gen)精”這(zhe)個飲料(liao)佳品。第二年(nian)(nian),由(you)縣(xian)煉乳廠正式投(tou)產(chan)(chan)。一九(jiu)六(liu)八(ba)年(nian)(nian),縣(xian)建立(li)“竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)茅根(gen)精廠”專門生產(chan)(chan),選用(yong)著名(ming)洪陽(yang)(yang)竹(zhu)(zhu)蔗(zhe)(zhe)(zhe)作為(wei)主要(yao)原料(liao)。制(zhi)作工(gong)藝主要(yao)是凈(jing)潔蔗(zhe)(zhe)(zhe)身后壓榨取汁(zhi),然后對(dui)蔗(zhe)(zhe)(zhe)汁(zhi)進行熱處理、沉淀澄清加(jia)白(bai)糖粉(fen),再滲入適(shi)量茅根(gen)精汁(zhi),最后濃縮結晶(jing)成(cheng)型。
9、炸姜薯卷
炸(zha)姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)卷(juan)菜色(se)特點:清(qing)甘香甜,粉(fen)中(zhong)帶爽。用(yong)(yong)(yong)料說明:凈(jing)姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)500克(ke)(ke),糖(tang)冬瓜(gua)片100克(ke)(ke),橘(ju)餅50克(ke)(ke),白(bai)糖(tang)150克(ke)(ke),豬網(wang)油(you)(you)(you)100克(ke)(ke),生(sheng)(sheng)粉(fen)100克(ke)(ke),雞蛋(dan)2個,生(sheng)(sheng)油(you)(you)(you)750克(ke)(ke)(耗油(you)(you)(you)100克(ke)(ke))。制作方(fang)法:(1)先(xian)將姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)用(yong)(yong)(yong)刀切成(cheng)(cheng)片,放(fang)進(jin)蒸籠炊熟(shu),炊熟(shu)后(hou)趁熱倒在砧(zhen)板上(shang)(shang),用(yong)(yong)(yong)刀壓(ya)(ya)(ya)爛,揉(rou)壓(ya)(ya)(ya)成(cheng)(cheng)姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)蓉待(dai)用(yong)(yong)(yong)。再(zai)(zai)將糖(tang)冬瓜(gua)片、橘(ju)餅用(yong)(yong)(yong)刀切成(cheng)(cheng)幼絲。豬網(wang)油(you)(you)(you)用(yong)(yong)(yong)清(qing)水(shui)漂(piao)洗于凈(jing),攤(tan)開泌(mi)干(gan)水(shui)分待(dai)用(yong)(yong)(yong)。(2)將姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)蓉加入(ru)白(bai)糖(tang)50克(ke)(ke)進(jin)行攪揉(rou),攪至白(bai)糖(tang)哨溶(rong)化時(shi),再(zai)(zai)加入(ru)冬瓜(gua)片絲、橘(ju)餅絲稍拌壓(ya)(ya)(ya)均勻。然后(hou)把已洗好(hao)的豬網(wang)油(you)(you)(you)攤(tan)開,撒上(shang)(shang)生(sheng)(sheng)粉(fen),把姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)蓉分別(bie)改在豬網(wang)油(you)(you)(you)上(shang)(shang),包成(cheng)(cheng)約(yue)5厘(li)(li)米(mi)長、2.5厘(li)(li)米(mi)寬的卷(juan)形狀,更成(cheng)(cheng)姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)卷(juan)。(3)先(xian)將雞蛋(dan)白(bai)用(yong)(yong)(yong)筷(kuai)子攪拍(pai)均勻候用(yong)(yong)(yong),再(zai)(zai)把每件姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)卷(juan)分別(bie)先(xian)蘸上(shang)(shang)雞蛋(dan)白(bai),后(hou)粘上(shang)(shang)生(sheng)(sheng)粉(fen),用(yong)(yong)(yong)手稍壓(ya)(ya)(ya)實待(dai)用(yong)(yong)(yong)。(4)將炒鼎洗凈(jing)燒(shao)熱,放(fang)入(ru)生(sheng)(sheng)油(you)(you)(you),候油(you)(you)(you)熱至約(yue)180℃時(shi),把姜(jiang)(jiang)(jiang)(jiang)薯(shu)(shu)卷(juan)放(fang)進(jin)油(you)(you)(you)中(zhong)炸(zha)至透心撈起,用(yong)(yong)(yong)餐盤(pan)盛著(zhu)。
10、五房綠茶
揭(jie)(jie)東縣(xian)新(xin)亨(heng)(heng)鎮五(wu)(wu)房(fang)(fang)(fang)、坪(ping)(ping)上(shang)一(yi)帶山(shan)(shan)(shan)(shan)區所產(chan)綠(lv)茶(cha)(炒茶(cha)),茶(cha)湯淡(dan)黃如花生油,味道醇甘喉底厚。五(wu)(wu)房(fang)(fang)(fang)綠(lv)茶(cha)又稱(cheng)“鳥(niao)啄茶(cha)”,傳(chuan)說是清(qing)未(wei)當(dang)地村(cun)民上(shang)山(shan)(shan)(shan)(shan)割草時偶然發現,后加工(gong)培育而成,民國(guo)時已(yi)大量內銷(xiao)和出(chu)口(kou)。中泰建交(jiao)時,泰國(guo)政府(fu)曾專門提(ti)出(chu)五(wu)(wu)房(fang)(fang)(fang),坪(ping)(ping)上(shang)綠(lv)茶(cha)出(chu)口(kou)供應,足(zu)見其影響之大。五(wu)(wu)房(fang)(fang)(fang)綠(lv)茶(cha)不但味道好,而且具有溶脂幫助(zhu)消化(hua)的作(zuo)用。久藏的“老炒茶(cha)”更具有 消痰化(hua)瘀之功。俗話說得好:髙(gao)山(shan)(shan)(shan)(shan)出(chu)好茶(cha)。五(wu)(wu)房(fang)(fang)(fang)地處(chu)潮揭(jie)(jie)豐(feng)三縣(xian)交(jiao)界(jie),群山(shan)(shan)(shan)(shan)俊嶺(ling),林木蔥(cong)蔥(cong),云霧繚繞,雨水充沛,空(kong)氣(qi)清(qing)新(xin),鳥(niao)語花香,迷人心(xin)肺,環鄉幾十里絕無(wu)污染(ran)源。如今五(wu)(wu)房(fang)(fang)(fang)村(cun)的種(zhong)植丶(zhu)加工(gong)都已(yi)經(jing)達(da)到有機茶(cha)的水平。五(wu)(wu)房(fang)(fang)(fang)茶(cha)最好的應該是<世(shi)坑頂鳥(niao)嘴(zui)啄>的茶(cha),此茶(cha)濃厚丶(zhu)悠(you)香入肺丶(zhu)甘醇潤(run)喉丶(zhu)飲(yin)過齒頜留香,回(hui)味無(wu)窮,提(ti)神醒(xing)腦.若君(jun)有緣(yuan),飲(yin)過方知其韻(yun)味也。 2011年,在廣(guang)州舉行的廣(guang)東省(sheng)第九屆(jie)名優茶(cha)質(zhi)量競賽中,由(you)揭(jie)(jie)東縣(xian)新(xin)亨(heng)(heng)鎮五(wu)(wu)房(fang)(fang)(fang)村(cun)北山(shan)(shan)(shan)(shan)茶(cha)園選送(song)的“翠菁(jing)牌”翠菁(jing)綠(lv)茶(cha)和“云洗牌”云洗綠(lv)茶(cha)。
