梅菉麻(ma)通(tong)是(shi)(shi)吳川糖(tang)果(guo)生產中的(de)(de)獨特名優產品(pin),該(gai)產品(pin)系用大糯(nuo)米、水(shui)芋頭、白糖(tang)、芝(zhi)麻(ma)等原料,經過(guo)特殊 的(de)(de)處理方法和制(zhi)作(zuo)技(ji)術做(zuo)成(cheng)(cheng)(cheng)半成(cheng)(cheng)(cheng)品(pin),曬干(gan)后隨(sui)時(shi)備(bei)用。再加工制(zhi)作(zuo)時(shi),將此半成(cheng)(cheng)(cheng)品(pin)先后投進分別用文武火煮成(cheng)(cheng)(cheng)不(bu)同(tong)溫度的(de)(de)兩個油(you)鍋(guo)中去炸,炸至膨脹適(shi)度,取出淋上白糖(tang)膠,灑上芝(zhi)麻(ma)即成(cheng)(cheng)(cheng)。成(cheng)(cheng)(cheng)品(pin)粗如甘蔗,長7~8公(gong)分,中空(kong)充滿泡沫,入口松脆香甜(tian),是(shi)(shi)糖(tang)果(guo)中佳品(pin)。麻(ma)通(tong)的(de)(de)制(zhi)作(zuo),在吳川已有一百(bai)多年歷史,但其制(zhi)作(zuo)技(ji)術秘傳,直至60年代(dai)才(cai)公(gong)開。
吳(wu)(wu)川(chuan)(chuan)獨(du)有(you)的(de)(de)風味小(xiao)食(shi)(shi)(shi)麻(ma)(ma)通(tong)(tong)形(xing)似香(xiang)蕉,色澤金黃,入口酥脆,咀嚼無(wu)渣,香(xiang)甜可口,是(shi)吳(wu)(wu)川(chuan)(chuan)傳統的(de)(de)小(xiao)食(shi)(shi)(shi),在(zai)清朝(chao)已(yi)有(you)制(zhi)(zhi)作(zuo)。麻(ma)(ma)通(tong)(tong)是(shi)梅錄頭老人(ren)陳華堂的(de)(de)絕藝,只(zhi)有(you)陳氏一家懂(dong)得制(zhi)(zhi)作(zuo)。制(zhi)(zhi)作(zuo)麻(ma)(ma)通(tong)(tong)要精選香(xiang)膠(jiao)糯米,用(yong)人(ren)工(gong)搗(dao)成粉,再(zai)經炊、曬、火(huo)局、炸等工(gong)序(xu),前后歷時十五(wu)日才能制(zhi)(zhi)成。由于選料難、工(gong)序(xu)多、制(zhi)(zhi)作(zuo)復雜、利潤薄,陳家停止制(zhi)(zhi)作(zuo)麻(ma)(ma)通(tong)(tong)已(yi)有(you)幾十年。后來(lai)有(you)關部門的(de)(de)熱(re)心動員下(xia),陳家決(jue)定重操舊業,讓(rang)麻(ma)(ma)通(tong)(tong)這一吳(wu)(wu)川(chuan)(chuan)風味小(xiao)食(shi)(shi)(shi)重出江湖,并在(zai)吳(wu)(wu)川(chuan)(chuan)市第三屆美食(shi)(shi)(shi)節(jie)上(shang)(shang)呈(cheng)獻(xian)出來(lai),讓(rang)廣(guang)大市民品嘗到(dao)風味獨(du)特(te)的(de)(de)吳(wu)(wu)川(chuan)(chuan)傳統小(xiao)食(shi)(shi)(shi)。在(zai)美食(shi)(shi)(shi)節(jie)上(shang)(shang)麻(ma)(ma)通(tong)(tong)的(de)(de)美味受(shou)到(dao)廣(guang)泛的(de)(de)好評。吳(wu)(wu)川(chuan)(chuan)市土(tu)特(te)產專賣店有(you)麻(ma)(ma)通(tong)(tong)出售。
