梅菉麻(ma)(ma)(ma)通(tong)是(shi)吳(wu)川(chuan)糖果生產中(zhong)(zhong)(zhong)的獨特名優(you)產品(pin),該產品(pin)系用大糯米(mi)、水(shui)芋(yu)頭、白糖、芝麻(ma)(ma)(ma)等原料,經過特殊 的處理方法(fa)和制作技(ji)術(shu)做成(cheng)(cheng)(cheng)半成(cheng)(cheng)(cheng)品(pin),曬(shai)干后隨時備用。再加工(gong)制作時,將(jiang)此半成(cheng)(cheng)(cheng)品(pin)先后投進分(fen)別用文(wen)武火煮(zhu)成(cheng)(cheng)(cheng)不(bu)同(tong)溫度的兩(liang)個油鍋中(zhong)(zhong)(zhong)去炸(zha),炸(zha)至膨脹適度,取出(chu)淋上(shang)白糖膠,灑上(shang)芝麻(ma)(ma)(ma)即成(cheng)(cheng)(cheng)。成(cheng)(cheng)(cheng)品(pin)粗如(ru)甘(gan)蔗,長(chang)7~8公分(fen),中(zhong)(zhong)(zhong)空充滿泡沫,入(ru)口(kou)松脆香甜(tian),是(shi)糖果中(zhong)(zhong)(zhong)佳品(pin)。麻(ma)(ma)(ma)通(tong)的制作,在吳(wu)川(chuan)已有一(yi)百多年(nian)(nian)歷(li)史,但(dan)其制作技(ji)術(shu)秘傳,直至60年(nian)(nian)代(dai)才(cai)公開。
吳(wu)川獨有(you)(you)的(de)風味(wei)小(xiao)食(shi)麻通(tong)(tong)形似香(xiang)蕉(jiao),色澤金(jin)黃(huang),入口酥脆,咀嚼無渣,香(xiang)甜可口,是(shi)吳(wu)川傳(chuan)統(tong)(tong)的(de)小(xiao)食(shi),在(zai)清朝已(yi)(yi)有(you)(you)制作。麻通(tong)(tong)是(shi)梅(mei)錄頭老(lao)人(ren)(ren)陳(chen)華堂的(de)絕(jue)藝,只有(you)(you)陳(chen)氏一家(jia)(jia)懂(dong)得制作。制作麻通(tong)(tong)要精選香(xiang)膠糯米,用人(ren)(ren)工搗成粉,再經炊、曬、火局、炸等工序(xu),前后歷時十(shi)五日才能制成。由于選料難、工序(xu)多、制作復雜、利潤薄,陳(chen)家(jia)(jia)停止(zhi)制作麻通(tong)(tong)已(yi)(yi)有(you)(you)幾十(shi)年。后來有(you)(you)關部門的(de)熱心(xin)動員(yuan)下(xia),陳(chen)家(jia)(jia)決定重(zhong)操舊業,讓麻通(tong)(tong)這(zhe)一吳(wu)川風味(wei)小(xiao)食(shi)重(zhong)出江湖,并在(zai)吳(wu)川市(shi)第三屆(jie)美食(shi)節(jie)上呈獻出來,讓廣大市(shi)民(min)品嘗到風味(wei)獨特的(de)吳(wu)川傳(chuan)統(tong)(tong)小(xiao)食(shi)。在(zai)美食(shi)節(jie)上麻通(tong)(tong)的(de)美味(wei)受到廣泛(fan)的(de)好評。吳(wu)川市(shi)土特產(chan)專賣店有(you)(you)麻通(tong)(tong)出售。
