梅菉(lu)麻(ma)(ma)通是吳川(chuan)(chuan)糖(tang)果生產(chan)中(zhong)(zhong)的(de)獨特名優(you)產(chan)品,該產(chan)品系用大糯(nuo)米、水(shui)芋頭(tou)、白(bai)糖(tang)、芝麻(ma)(ma)等原料,經(jing)過特殊 的(de)處理方法和制(zhi)作技術做成(cheng)半(ban)成(cheng)品,曬干后(hou)隨時(shi)備用。再加工制(zhi)作時(shi),將此半(ban)成(cheng)品先后(hou)投(tou)進分(fen)別(bie)用文武火煮成(cheng)不(bu)同溫度(du)的(de)兩個油鍋中(zhong)(zhong)去炸,炸至膨(peng)脹(zhang)適度(du),取(qu)出淋上白(bai)糖(tang)膠,灑(sa)上芝麻(ma)(ma)即成(cheng)。成(cheng)品粗(cu)如甘蔗,長7~8公(gong)(gong)分(fen),中(zhong)(zhong)空充滿(man)泡(pao)沫,入口松(song)脆香甜,是糖(tang)果中(zhong)(zhong)佳品。麻(ma)(ma)通的(de)制(zhi)作,在吳川(chuan)(chuan)已有一百多年歷史,但其(qi)制(zhi)作技術秘傳(chuan),直至60年代才(cai)公(gong)(gong)開(kai)。
吳(wu)川(chuan)獨(du)有(you)(you)的(de)(de)風味小(xiao)(xiao)食(shi)麻(ma)(ma)通(tong)(tong)(tong)形似香(xiang)蕉,色澤金黃(huang),入(ru)口酥脆,咀嚼(jiao)無渣,香(xiang)甜可口,是(shi)吳(wu)川(chuan)傳(chuan)統(tong)的(de)(de)小(xiao)(xiao)食(shi),在(zai)清朝已有(you)(you)制(zhi)(zhi)作(zuo)。麻(ma)(ma)通(tong)(tong)(tong)是(shi)梅錄頭老人陳(chen)華(hua)堂的(de)(de)絕(jue)藝,只(zhi)有(you)(you)陳(chen)氏(shi)一家(jia)懂(dong)得制(zhi)(zhi)作(zuo)。制(zhi)(zhi)作(zuo)麻(ma)(ma)通(tong)(tong)(tong)要(yao)精選(xuan)香(xiang)膠糯(nuo)米(mi),用(yong)人工(gong)(gong)搗成(cheng)粉,再經炊、曬、火局(ju)、炸(zha)等工(gong)(gong)序,前后(hou)歷時十五(wu)日才能(neng)制(zhi)(zhi)成(cheng)。由于選(xuan)料(liao)難、工(gong)(gong)序多(duo)、制(zhi)(zhi)作(zuo)復雜、利(li)潤薄(bo),陳(chen)家(jia)停(ting)止制(zhi)(zhi)作(zuo)麻(ma)(ma)通(tong)(tong)(tong)已有(you)(you)幾十年。后(hou)來(lai)(lai)有(you)(you)關部門的(de)(de)熱心動員下(xia),陳(chen)家(jia)決定重(zhong)操舊業,讓麻(ma)(ma)通(tong)(tong)(tong)這一吳(wu)川(chuan)風味小(xiao)(xiao)食(shi)重(zhong)出(chu)江湖,并在(zai)吳(wu)川(chuan)市第三屆美(mei)食(shi)節(jie)(jie)上呈(cheng)獻(xian)出(chu)來(lai)(lai),讓廣大市民(min)品嘗(chang)到(dao)風味獨(du)特的(de)(de)吳(wu)川(chuan)傳(chuan)統(tong)小(xiao)(xiao)食(shi)。在(zai)美(mei)食(shi)節(jie)(jie)上麻(ma)(ma)通(tong)(tong)(tong)的(de)(de)美(mei)味受到(dao)廣泛的(de)(de)好(hao)評。吳(wu)川(chuan)市土特產專賣店有(you)(you)麻(ma)(ma)通(tong)(tong)(tong)出(chu)售。
