梅(mei)菉麻通是(shi)吳川糖(tang)果生產(chan)(chan)中(zhong)(zhong)的獨特(te)名優產(chan)(chan)品(pin),該產(chan)(chan)品(pin)系用大糯米(mi)、水芋頭、白(bai)糖(tang)、芝(zhi)麻等原(yuan)料,經過特(te)殊 的處(chu)理方法和制作技術做成(cheng)半(ban)成(cheng)品(pin),曬干(gan)后隨(sui)時(shi)備(bei)用。再加工制作時(shi),將此半(ban)成(cheng)品(pin)先后投進(jin)分(fen)別用文武(wu)火煮成(cheng)不同溫度的兩個油鍋中(zhong)(zhong)去炸,炸至膨脹適度,取出淋上白(bai)糖(tang)膠,灑上芝(zhi)麻即成(cheng)。成(cheng)品(pin)粗如甘(gan)蔗,長7~8公分(fen),中(zhong)(zhong)空充(chong)滿泡沫,入(ru)口松脆(cui)香甜,是(shi)糖(tang)果中(zhong)(zhong)佳品(pin)。麻通的制作,在吳川已有一百多年(nian)歷(li)史,但(dan)其(qi)制作技術秘傳,直(zhi)至60年(nian)代才公開(kai)。
吳(wu)川(chuan)獨有(you)的(de)(de)(de)風(feng)味小食(shi)麻(ma)(ma)(ma)通(tong)形似香蕉,色澤金黃,入口酥(su)脆,咀(ju)嚼無(wu)渣,香甜(tian)可口,是(shi)(shi)吳(wu)川(chuan)傳(chuan)統(tong)(tong)的(de)(de)(de)小食(shi),在清朝已有(you)制(zhi)(zhi)(zhi)(zhi)作。麻(ma)(ma)(ma)通(tong)是(shi)(shi)梅錄頭老(lao)人陳(chen)華(hua)堂的(de)(de)(de)絕(jue)藝,只有(you)陳(chen)氏(shi)一家懂得制(zhi)(zhi)(zhi)(zhi)作。制(zhi)(zhi)(zhi)(zhi)作麻(ma)(ma)(ma)通(tong)要精選香膠糯米,用人工(gong)搗成(cheng)粉(fen),再經炊、曬(shai)、火(huo)局、炸(zha)等工(gong)序,前后歷時十(shi)五日才(cai)能制(zhi)(zhi)(zhi)(zhi)成(cheng)。由于選料難、工(gong)序多、制(zhi)(zhi)(zhi)(zhi)作復雜、利潤薄,陳(chen)家停止(zhi)制(zhi)(zhi)(zhi)(zhi)作麻(ma)(ma)(ma)通(tong)已有(you)幾十(shi)年。后來(lai)有(you)關部門的(de)(de)(de)熱心動員下,陳(chen)家決定重操舊業,讓麻(ma)(ma)(ma)通(tong)這一吳(wu)川(chuan)風(feng)味小食(shi)重出江湖,并在吳(wu)川(chuan)市第三屆美(mei)食(shi)節上(shang)呈獻出來(lai),讓廣大市民品嘗到風(feng)味獨特(te)的(de)(de)(de)吳(wu)川(chuan)傳(chuan)統(tong)(tong)小食(shi)。在美(mei)食(shi)節上(shang)麻(ma)(ma)(ma)通(tong)的(de)(de)(de)美(mei)味受到廣泛的(de)(de)(de)好(hao)評。吳(wu)川(chuan)市土特(te)產專賣店有(you)麻(ma)(ma)(ma)通(tong)出售。
