1920年,張強德(de)(de)父子(zi)在(zai)汕頭市(shi)升平路(lu)頭天后(hou)宮(gong)(gong)(即(ji)老媽宮(gong)(gong))附近(jin)擺攤經營粽(zong)(zong)(zong)球,張強德(de)(de)逝世后(hou),其(qi)子(zi)張良杰在(zai)老媽宮(gong)(gong)對(dui)面小(xiao)巷內租用一間(jian)小(xiao)鋪,開(kai)設了順德(de)(de)號(hao)粽(zong)(zong)(zong)球店。因粽(zong)(zong)(zong)球質量好,且占有地利,生意(yi)日隆,順德(de)(de)號(hao)的粽(zong)(zong)(zong)球也逐漸成為潮汕和(he)海外(wai)潮人所喜愛(ai)的老媽宮(gong)(gong)粽(zong)(zong)(zong)球。
老媽(ma)(ma)宮粽球(qiu)店里,曾懸掛著(zhu)一塊寫著(zhu)“食(shi)定(ding)正知”的(de)玻璃匾,這四個(ge)字的(de)潮(chao)(chao)汕話(hua)意思(si)是(shi),只有(you)吃了并且仔細品味以(yi)后,才真正知道它的(de)好味道。由于老媽(ma)(ma)宮粽球(qiu)的(de)出名,這四個(ge)字競也跟著(zhu)流傳(chuan)開去。”老媽(ma)(ma)宮粽球(qiu)--食(shi)定(ding)正知”,成(cheng)為潮(chao)(chao)汕地區人(ren)們的(de)一句口頭俗語(yu)了。
主料采用(yong)(yong)的糯米,必須顆粒飽滿且大(da)小均勻(yun)。制(zhi)作時(shi)先淘(tao)洗干凈,用(yong)(yong)清水(shui)浸泡6小時(shi),撈起放在竹篩晾干,次日(ri)下鍋(guo)用(yong)(yong)豬油(you)炒后,加適(shi)量上等魚露,再炒至米粒晶瑩透亮(liang),油(you)香潤滑(hua),用(yong)(yong)盆盛(sheng)裝待用(yong)(yong)。老媽宮粽球里(li)有甜、咸(xian)(xian)(xian)雙拼料餡,甜料餡部(bu)分(fen)為(wei)(wei)綠(lv)豆沙餡(或烏(wu)豆沙餡)和水(shui)晶餡,外面用(yong)(yong)豬網膋包裹(guo)(guo);咸(xian)(xian)(xian)料餡部(bu)分(fen)為(wei)(wei)香菇、蝦米、臘(la)腸(chang)、方魚末(mo)、蓮子、栗(li)子和經腌制(zhi)的南乳鬃頭(tou)肉。然后用(yong)(yong)竹葉(xie)、咸(xian)(xian)(xian)草包裹(guo)(guo)扎成六角(jiao)球形(xing),放進鍋(guo)內煮熟(shu)。食(shi)時(shi)解(jie)開竹葉(xie)盛(sheng)盤,有棱有角(jiao),晶瑩潤滑(hua)、甘甜香咸(xian)(xian)(xian)。
