1920年,張強德父子在汕(shan)頭(tou)市升平路頭(tou)天(tian)后宮(gong)(即老(lao)媽宮(gong))附近(jin)擺攤經(jing)營(ying)粽(zong)球(qiu)(qiu)(qiu)(qiu),張強德逝世后,其(qi)子張良杰在老(lao)媽宮(gong)對面小巷內租用一間小鋪,開(kai)設了順德號粽(zong)球(qiu)(qiu)(qiu)(qiu)店。因粽(zong)球(qiu)(qiu)(qiu)(qiu)質量好(hao),且占有地利(li),生意日隆(long),順德號的粽(zong)球(qiu)(qiu)(qiu)(qiu)也(ye)逐(zhu)漸成為潮汕(shan)和(he)海外(wai)潮人所喜愛的老(lao)媽宮(gong)粽(zong)球(qiu)(qiu)(qiu)(qiu)。
老(lao)(lao)媽宮粽球(qiu)店(dian)里,曾(ceng)懸(xuan)掛著(zhu)(zhu)(zhu)一塊寫著(zhu)(zhu)(zhu)“食(shi)定正知”的(de)玻(bo)璃匾,這四個(ge)字的(de)潮汕(shan)話(hua)意思是,只(zhi)有吃了并且仔(zi)細(xi)品味(wei)以后,才(cai)真(zhen)正知道(dao)它的(de)好(hao)味(wei)道(dao)。由于老(lao)(lao)媽宮粽球(qiu)的(de)出名(ming),這四個(ge)字競也跟著(zhu)(zhu)(zhu)流傳(chuan)開去(qu)。”老(lao)(lao)媽宮粽球(qiu)--食(shi)定正知”,成為(wei)潮汕(shan)地區人們的(de)一句口頭俗語了。
主料(liao)采用(yong)(yong)的糯米(mi),必須(xu)顆粒飽(bao)滿且大(da)小(xiao)均勻。制作時先(xian)淘洗干凈,用(yong)(yong)清水(shui)浸泡6小(xiao)時,撈(lao)起放在(zai)竹(zhu)篩(shai)晾干,次日下鍋用(yong)(yong)豬油炒后(hou),加適量上等魚露,再(zai)炒至米(mi)粒晶瑩透亮(liang),油香(xiang)潤滑,用(yong)(yong)盆盛(sheng)裝待用(yong)(yong)。老媽(ma)宮(gong)粽(zong)球(qiu)(qiu)里(li)有甜(tian)(tian)、咸(xian)雙(shuang)拼料(liao)餡(xian)(xian)(xian),甜(tian)(tian)料(liao)餡(xian)(xian)(xian)部分為綠豆沙餡(xian)(xian)(xian)(或烏豆沙餡(xian)(xian)(xian))和(he)水(shui)晶餡(xian)(xian)(xian),外面用(yong)(yong)豬網(wang)膋包裹;咸(xian)料(liao)餡(xian)(xian)(xian)部分為香(xiang)菇(gu)、蝦米(mi)、臘腸、方魚末、蓮子、栗子和(he)經腌制的南乳鬃頭(tou)肉。然后(hou)用(yong)(yong)竹(zhu)葉、咸(xian)草包裹扎成六角(jiao)球(qiu)(qiu)形(xing),放進鍋內煮熟。食時解(jie)開竹(zhu)葉盛(sheng)盤(pan),有棱有角(jiao),晶瑩潤滑、甘甜(tian)(tian)香(xiang)咸(xian)。
