仙(xian)城(cheng)(cheng)束沙是(shi)廣東(dong)省汕(shan)頭市仙(xian)城(cheng)(cheng)地(di)區傳統(tong)小(xiao)吃,清同治年間。仙(xian)城(cheng)(cheng)人趙興合用炒熟的(de)花(hua)生米拌上煮煉成甘的(de)白(bai)(bai)糖,搖(yao)簸(bo)制(zhi)作而成顆(ke)粒(li)(li)狀(zhuang)糖果,稱束砂(sha)。仙(xian)城(cheng)(cheng)束砂(sha)所用花(hua)生米均(jun)經精選,去除小(xiao)粒(li)(li)和霉變“臭仁”,使顆(ke)粒(li)(li)大小(xiao)相近,品質(zhi)優良;制(zhi)作后糖衣(yi)均(jun)勻、潔(jie)白(bai)(bai)、酥脆,落地(di)即啐(cui)離(li)花(hua)生仁,質(zhi)地(di)松(song)脆,味道香甜,深受(shou)贊(zan)賞(shang)。
趙(zhao)嘉合的孫(sun)子、年已(yi)古稀(xi)的仙城鄉(xiang)民趙(zhao)中(zhong)水(shui),若(ruo)干年前發揮(hui)一技之長(chang),辦起(qi)(qi)家庭束砂作(zuo)坊,恢復這項名牌產品生(sheng)產。據趙(zhao)中(zhong)水(shui)介紹,制作(zuo)仙城束砂要選擇優質花生(sheng)米(mi),其顆(ke)(ke)粒大小適(shi)中(zhong),炒熟;要選用(yong)上等白(bai)糖(tang),去其雜質,在(zai)鍋中(zhong)煮制。煮糖(tang)時要特別小心(xin)觀察,掌握火候,待糖(tang)漿不稀(xi)不干,成糊狀(zhuang)后(hou),用(yong)一比一點四的花生(sheng)米(mi)和糖(tang)漿攪拌,攪拌反(fan)復進(jin)行五次(ci)之后(hou),一顆(ke)(ke)顆(ke)(ke)花生(sheng)米(mi)都(dou)穿(chuan)上了一套厚薄(bo)相當的白(bai)衣裳,冷卻后(hou)就是束砂。由(you)于仙城束砂糖(tang)衣厚薄(bo)均勻(yun),潔白(bai)如銀,干而且脆,落地(di)即碎,吃起(qi)(qi)來既有花生(sheng)米(mi)香(xiang)味(wei),又(you)有白(bai)糖(tang)清(qing)甜,入口輕(qing)輕(qing)一嚼,即成碎沫,十分清(qing)爽。
