席(xi)營村的手工掛(gua)面以家(jia)庭作坊(fang)為(wei)(wei)主。早(zao)在(zai)明朝(chao)時,席(xi)營村的掛(gua)面就已聞名四方(fang)。因曾(ceng)被明代禮部尚書王越進貢給皇帝,列為(wei)(wei)宮廷(ting)佳品,而得名“貢面”。
令(ling)人(ren)(ren)無法想象的(de)是(shi)(shi),直(zhi)徑僅有一兩(liang)毫米(mi)的(de)掛面(mian),居(ju)然根根都是(shi)(shi)空心的(de)。記者拿出一根掛面(mian),將一端(duan)(duan)放到水(shui)里(li),然后用(yong)嘴吹(chui)另一端(duan)(duan),居(ju)然能吹(chui)出氣泡。據了解,由(you)于席營村(cun)地(di)處(chu)太行山余脈火龍崗,緊臨(lin)象山,村(cun)里(li)的(de)飲用(yong)水(shui)、澆地(di)用(yong)水(shui)全是(shi)(shi)優質(zhi)礦泉水(shui),所產小(xiao)麥(mai)淀粉含(han)量極(ji)高。村(cun)民(min)們運用(yong)當地(di)小(xiao)麥(mai)為原料,經過人(ren)(ren)工和面(mian)、揉(rou)面(mian)、壓(ya)平、開條(tiao)、搓條(tiao)、盤(pan)條(tiao)、自(zi)然晾曬等28道工序精制而成。
每(mei)年(nian)冬季,都是村(cun)里(li)制(zhi)作(zuo)空心(xin)掛(gua)面(mian)的(de)時節。每(mei)個家庭作(zuo)坊的(de)空心(xin)掛(gua)面(mian)都供不應求。快過年(nian)時,從四面(mian)八方慕名(ming)而來購買空心(xin)掛(gua)面(mian)的(de)人絡繹(yi)不絕。
席營村(cun)的空心(xin)掛(gua)(gua)(gua)面(mian)(mian)(mian)(mian)(mian)(mian)是純天然的,如添加防腐劑、增白劑,空心(xin)掛(gua)(gua)(gua)面(mian)(mian)(mian)(mian)(mian)(mian)就(jiu)(jiu)做不成(cheng)。為(wei)了(le)第二天上午(wu)能(neng)在(zai)晨(chen)陽(yang)里(li)晾曬(shai)掛(gua)(gua)(gua)面(mian)(mian)(mian)(mian)(mian)(mian),村(cun)里(li)人下(xia)午(wu)就(jiu)(jiu)要開始和面(mian)(mian)(mian)(mian)(mian)(mian)。而(er)后經揉面(mian)(mian)(mian)(mian)(mian)(mian)、壓條等一系(xi)列(lie)工序,到了(le)晚上還不能(neng)休息,要將面(mian)(mian)(mian)(mian)(mian)(mian)盤成(cheng)條,放(fang)到掛(gua)(gua)(gua)面(mian)(mian)(mian)(mian)(mian)(mian)洞里(li)醒面(mian)(mian)(mian)(mian)(mian)(mian)。等到凌晨(chen)4時,村(cun)民們(men)把醒好的面(mian)(mian)(mian)(mian)(mian)(mian)條搭到屋外專門(men)晾曬(shai)掛(gua)(gua)(gua)面(mian)(mian)(mian)(mian)(mian)(mian)的架子上,將原(yuan)本(ben)筷子粗(cu)細、長(chang)不足1米的面(mian)(mian)(mian)(mian)(mian)(mian)條,拉(la)長(chang)到2.5米。面(mian)(mian)(mian)(mian)(mian)(mian)拉(la)好了(le),太陽(yang)也(ye)出(chu)來了(le)。
黎陽(yang)貢面(mian)耐火而(er)不(bu)糟、回鍋而(er)不(bu)爛,煮熟后挑入碗中,吃(chi)起來不(bu)僅口感爽滑,而(er)且(qie)格外(wai)勁道。席營村的(de)手工空(kong)心掛面(mian)含有(you)人體所需的(de)重(zhong)要營養(yang)物質,是一(yi)種低熱量(liang)高蛋白(bai)食(shi)品,有(you)降血(xue)壓(ya)、減肥養(yang)腎等功效,是老人、兒童、產婦等體弱者的(de)常備滋補(bu)佳品,也是饋贈親朋好友的(de)上(shang)等禮品。
