花樣馃子制作方法
原料:泡打粉,鹽,紅(hong)糖,雞蛋,面粉,花(hua)生油(you)等(deng)。
做法:
1、首(shou)先在面(mian)(mian)(mian)(mian)(mian)(mian)盆中倒入面(mian)(mian)(mian)(mian)(mian)(mian)粉,加入泡打粉,再放鹽,順著(zhu)一個方向(xiang)和(he)面(mian)(mian)(mian)(mian)(mian)(mian),和(he)面(mian)(mian)(mian)(mian)(mian)(mian)時要(yao)將(jiang)面(mian)(mian)(mian)(mian)(mian)(mian)反復揣揉(rou)均勻,把面(mian)(mian)(mian)(mian)(mian)(mian)揉(rou)成團(tuan)(tuan)后(hou)蓋上濕(shi)布(bu)醒(xing)面(mian)(mian)(mian)(mian)(mian)(mian)半小時,半個小時之后(hou)面(mian)(mian)(mian)(mian)(mian)(mian)團(tuan)(tuan)變(bian)得柔軟光滑(hua),在面(mian)(mian)(mian)(mian)(mian)(mian)團(tuan)(tuan)上抹(mo)點油裝進保鮮袋,醒(xing)8到10小(xiao)時。
2、馃(guo)子面(mian)(mian)團(tuan)醒好(hao)后我們來炸馃(guo)子,在(zai)面(mian)(mian)團(tuan)上撒上少許(xu)面(mian)(mian)粉防止粘手,把面(mian)(mian)團(tuan)輕(qing)(qing)輕(qing)(qing)搟薄(bo)厚度(du)一(yi)厘米左右,用刀把面(mian)(mian)團(tuan)切成兩(liang)厘米寬的長用筷子輕(qing)(qing)輕(qing)(qing)壓一(yi)下,將兩(liang)條面(mian)(mian)疊放在(zai)一(yi)起(qi)用手捏住面(mian)(mian)的兩(liang)端(duan)抻拉成30厘米的批(pi)條(tiao),先將批(pi)條(tiao)放(fang)(fang)在油(you)鍋中稍炸(zha)等到批(pi)條(tiao)起泡膨(peng)脹時,就(jiu)可以(yi)將批(pi)條(tiao)兩端也放(fang)(fang)入油(you)鍋中,炸(zha)馃(guo)子油(you)溫(wen)要控制在180℃左右。
3、油溫高(gao)了馃子(zi)就(jiu)會砸到外(wai)焦里不熟(shu),油溫太低(di)馃子(zi)容易(yi)散調變(bian)形,炸(zha)出的(de)馃子(zi)也不酥(su),在馃子(zi)的(de)炸(zha)制過程中,要經常(chang)用(yong)長(chang)筷子(zi)把馃子(zi)翻個,防(fang)止馃子(zi)受熱不均,當馃子(zi)面炸(zha)至深黃色就(jiu)可(ke)以(yi)控(kong)油出鍋(guo)了。
