一(yi)是(shi)歷史悠久。吳(wu)(wu)(wu)(wu)(wu)川(chuan)月(yue)(yue)餅(bing)(bing)的(de)發展歷史,可以(yi)追溯到(dao)南宋(song)時期,至今已有800多(duo)年(nian)。當時吳(wu)(wu)(wu)(wu)(wu)川(chuan)吳(wu)(wu)(wu)(wu)(wu)陽(yang)鎮上(shang)(shang)郭村(cun)人(ren)吳(wu)(wu)(wu)(wu)(wu)頤(yi)(yi),是(shi)南宋(song)咸淳元(yuan)(yuan)年(nian)(公元(yuan)(yuan)1265年(nian))進士,由于在(zai)(zai)江蘇淮陰奉旨帥軍抗擊蒙古軍隊大獲全勝,班師回朝(chao),宋(song)帝趙 在(zai)(zai)慶功御宴(yan)上(shang)(shang)賜(si)其吃(chi)“帝賜(si)肉”,以(yi)示(shi)皇恩浩蕩。所謂“帝賜(si)肉”,是(shi)一(yi)種(zhong)肉餡的(de)蒸面包,其餡料由20多(duo)種(zhong)食材組成,由御廚采用秘方特制,造型精巧,皮薄心靚,誘人(ren)食欲,吃(chi)后頰齒留香。后吳(wu)(wu)(wu)(wu)(wu)頤(yi)(yi)對“帝賜(si)肉”改變烹飪方法,或油煎或火烤,稱(cheng)為“頤(yi)(yi)餅(bing)(bing)”、“粵餅(bing)(bing)”。當時宰(zai)相(xiang)陳宜(yi)中(zhong)適逢(feng)中(zhong)秋佳(jia)節,吃(chi)了吳(wu)(wu)(wu)(wu)(wu)頤(yi)(yi)的(de)烤餅(bing)(bing)后贊其美(mei)味,便觸景(jing)生情將“頤(yi)(yi)餅(bing)(bing)”、“粵餅(bing)(bing)”改稱(cheng)為“月(yue)(yue)餅(bing)(bing)”。吳(wu)(wu)(wu)(wu)(wu)頤(yi)(yi)致仕回鄉,常以(yi)月(yue)(yue)餅(bing)(bing)賞月(yue)(yue)自食和贈送親友,以(yi)表達(da)團(tuan)圓和祝福之意(yi)。以(yi)后,吳(wu)(wu)(wu)(wu)(wu)川(chuan)縣(xian)城(cheng)(cheng)吳(wu)(wu)(wu)(wu)(wu)陽(yang)街(jie)的(de)糕餅(bing)(bing)作坊(fang),效法生產月(yue)(yue)餅(bing)(bing),與現(xian)代吳(wu)(wu)(wu)(wu)(wu)川(chuan)的(de)月(yue)(yue)餅(bing)(bing)極為相(xiang)似。同(tong)時,周邊村(cun)民也仿(fang)照上(shang)(shang)郭人(ren)供月(yue)(yue)餅(bing)(bing)、拜(bai)月(yue)(yue)亮、祝團(tuan)圓。這(zhe)一(yi)美(mei)好愿(yuan)望的(de)習(xi)俗,逐漸為吳(wu)(wu)(wu)(wu)(wu)川(chuan)城(cheng)(cheng)鄉的(de)廣大民眾所接受。
二(er)是制作規(gui)范。吳(wu)川(chuan)(chuan)月(yue)餅(bing)(bing)在(zai)解(jie)放初期(qi)一(yi)直(zhi)是手工生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan),規(gui)模不大。上世紀(ji)八十年代,吳(wu)川(chuan)(chuan)市決定把月(yue)餅(bing)(bing)作為一(yi)個產(chan)(chan)(chan)(chan)(chan)(chan)業(ye)(ye)(ye)(ye)來培育(yu),制訂月(yue)餅(bing)(bing)產(chan)(chan)(chan)(chan)(chan)(chan)業(ye)(ye)(ye)(ye)扶(fu)持政策(ce),幫(bang)助企(qi)業(ye)(ye)(ye)(ye)解(jie)決資(zi)金,引進人才,革(ge)新技(ji)術,制定月(yue)餅(bing)(bing)行業(ye)(ye)(ye)(ye)質(zhi)(zhi)量標準,規(gui)范企(qi)業(ye)(ye)(ye)(ye)經(jing)(jing)營行為。如今,吳(wu)川(chuan)(chuan)的(de)月(yue)餅(bing)(bing)生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan),已經(jing)(jing)由過去的(de)小作坊(fang)式(shi)手工生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan)發展為現代機(ji)械(xie)化(hua)(hua)(hua)生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan)線生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan),實現了(le)自動化(hua)(hua)(hua)、規(gui)模化(hua)(hua)(hua)、產(chan)(chan)(chan)(chan)(chan)(chan)業(ye)(ye)(ye)(ye)化(hua)(hua)(hua)和標準化(hua)(hua)(hua),月(yue)餅(bing)(bing)的(de)產(chan)(chan)(chan)(chan)(chan)(chan)能和質(zhi)(zhi)量有了(le)跨越式(shi)飛躍。目前,吳(wu)川(chuan)(chuan)市大多數月(yue)餅(bing)(bing)生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan)企(qi)業(ye)(ye)(ye)(ye)都通過了(le)HACCP食(shi)品(pin)安全管理(li)體(ti)系(xi)或ISO9001:2000質(zhi)(zhi)量管理(li)體(ti)系(xi)認(ren)證,取得了(le)食(shi)品(pin)安全生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan)許可證,嚴(yan)格(ge)按(an)照月(yue)餅(bing)(bing)質(zhi)(zhi)量標準進行生(sheng)(sheng)產(chan)(chan)(chan)(chan)(chan)(chan),確保了(le)產(chan)(chan)(chan)(chan)(chan)(chan)品(pin)質(zhi)(zhi)量,使(shi)消費(fei)者吃(chi)到的(de)月(yue)餅(bing)(bing)更加新鮮和衛(wei)生(sheng)(sheng)。
三(san)是特(te)色(se)鮮明。吳(wu)川(chuan)月餅(bing)在(zai)傳(chuan)(chuan)統配方(fang)和獨(du)特(te)的(de)制作(zuo)工藝(yi)流程的(de)基礎上(shang)(shang),不斷挖(wa)掘(jue)、傳(chuan)(chuan)承(cheng)、探索和創新,使月餅(bing)在(zai)文化(hua)(hua)品(pin)味、口(kou)味、品(pin)種(zhong)、風(feng)格等方(fang)面,形(xing)成了多(duo)元化(hua)(hua)、多(duo)層次的(de)地方(fang)特(te)色(se),尤(you)以(yi)大月餅(bing)最為(wei)著名。吳(wu)川(chuan)制作(zuo)的(de)大月餅(bing),從一公斤至七(qi)點五公斤不等,其用料考究、制作(zuo)嚴謹、工藝(yi)精(jing)細(xi),皮(pi)薄(bo)餡厚,香(xiang)(xiang)酥爽口(kou),甜度適中,風(feng)味純正,而且造型(xing)美觀(guan)、色(se)澤金黃(huang)、圖案精(jing)致、花紋玲(ling)瓏浮(fu)凸、餅(bing)皮(pi)柔(rou)軟、色(se)香(xiang)(xiang)味俱全。近年來(lai),我們在(zai)傳(chuan)(chuan)統的(de)伍(wu)仁、豆沙、蓮蓉基礎上(shang)(shang),研(yan)發(fa)出冰皮(pi)月餅(bing)、水果(guo)月餅(bing)、海味月餅(bing)、無糖月餅(bing)等40多(duo)種(zhong)新品(pin)種(zhong)。
