清乾(qian)隆(long)年間,南(nan)充(chong)(chong)醬園(yuan)主張德(de)興(xing),見嘉(jia)陵江邊盛產芥(jie)(jie)菜,他(ta)突(tu)發奇(qi)想,將(jiang)新鮮芥(jie)(jie)菜配以鹽和香(xiang)(xiang)(xiang)料(liao),裝入土陶圓(yuan)壇密封后放置(zhi)醬園(yuan)內。事隔三年,恰逢立春之(zhi)(zhi)日(ri),醬園(yuan)內忽然飄出一(yi)股奇(qi)特的(de)香(xiang)(xiang)(xiang)味,原來是那個土陶圓(yuan)壇突(tu)然破裂,芳(fang)香(xiang)(xiang)(xiang)四(si)溢(yi),沁(qin)人(ren)心(xin)脾(pi),眾(zhong)人(ren)聞香(xiang)(xiang)(xiang)而(er)(er)至紛紛品嘗(chang),果然是爽(shuang)口(kou)。此(ci)菜歷經三個寒(han)冬(dong),立春之(zhi)(zhi)日(ri)噴香(xiang)(xiang)(xiang)而(er)(er)出,眾(zhong)人(ren)取名(ming)為(wei)"冬(dong)菜"。一(yi)傳(chuan)十(shi)(shi)(shi),十(shi)(shi)(shi)傳(chuan)百,傳(chuan)至京城,成為(wei)朝廷貢品。時(shi)有民(min)謠"十(shi)(shi)(shi)里(li)(li)飄香(xiang)(xiang)(xiang)不(bu)是花,順慶府中冬(dong)菜牙",十(shi)(shi)(shi)里(li)(li)午南(nan)充(chong)(chong)冬(dong)菜由此(ci)誕(dan)生,經過幾百年代(dai)代(dai)相傳(chuan),十(shi)(shi)(shi)里(li)(li)香(xiang)(xiang)(xiang)南(nan)充(chong)(chong)冬(dong)菜成為(wei)四(si)川(chuan)四(si)大名(ming)菜之(zhi)(zhi)一(yi)。我公司承傳(chuan)"南(nan)充(chong)(chong)醬園(yuan),德(de)興(xing)老號",秉承百年傳(chuan)統工藝(yi),發揚光大,使十(shi)(shi)(shi)里(li)(li)香(xiang)(xiang)(xiang)南(nan)充(chong)(chong)冬(dong)菜這一(yi)獨特的(de)地方(fang)特日(ri)臻完美,名(ming)揚海內外。

南充(chong)(chong)冬(dong)(dong)菜(cai)(cai)譽滿全(quan)國(guo)、四(si)川四(si)大(da)名(ming)菜(cai)(cai)之(zhi)一。南充(chong)(chong)冬(dong)(dong)菜(cai)(cai)生產加(jia)工歷史悠久,距今已有(you)225年。《南充(chong)(chong)縣志》中有(you)這樣的記載:"清(qing)嘉慶(qing)年間(1796至(zhi)1820),順慶(qing)就(jiu)有(you)冬(dong)(dong)菜(cai)(cai)出(chu)售。""道光年間(1821至(zhi)1850),縣人(ren)張德興(xing)在縣城(cheng)經營德興(xing)老號醬園(yuan)鋪,制作冬(dong)(dong)菜(cai)(cai),頗有(you)名(ming)氣。"1981年南充(chong)(chong)冬(dong)(dong)菜(cai)(cai)在四(si)川省(sheng)"四(si)菜(cai)(cai)"評比會(hui)上(shang),以光澤油潤、清(qing)香(xiang)脆嫩、風(feng)味(wei)濃(nong)郁取勝,評為全(quan)省(sheng)第一名(ming)。南充(chong)(chong)冬(dong)(dong)菜(cai)(cai)與涪(fu)陵榨菜(cai)(cai)、宜賓芽菜(cai)(cai)、內江大(da)頭菜(cai)(cai)并稱為四(si)川"四(si)大(da)名(ming)腌菜(cai)(cai)"。
南(nan)充冬(dong)菜(cai)(cai)以芥菜(cai)(cai)為原料(liao),花椒、八(ba)角等香辛料(liao)為輔(fu)料(liao),經過20道工序(xu),歷時1-3年加工而成。既可(ke)用(yong)作餐桌(zhuo)上的(de)(de)小(xiao)菜(cai)(cai),又(you)可(ke)作為烹(peng)飪的(de)(de)佐料(liao)使(shi)用(yong)。川(chuan)菜(cai)(cai)中(zhong)有(you)名的(de)(de)冬(dong)菜(cai)(cai)扣肉和冬(dong)菜(cai)(cai)擔擔面等都是以南(nan)充冬(dong)菜(cai)(cai)為主要原料(liao)。
南(nan)充冬(dong)菜(cai)菜(cai)型均勻,褐黑(hei)色(se)、油潤、有光澤;具有南(nan)充冬(dong)菜(cai)獨(du)有的醬香味和(he)辛香味,香氣濃郁(yu);味道鮮美(mei)、質地脆嫩、咸淡(dan)適口。富含氨基酸(suan)(suan)、乳酸(suan)(suan)、蛋白質、維生素(su)和(he)多種(zhong)微量元素(su)。有開胃健(jian)脾、增(zeng)進食欲、增(zeng)強人體機能之功效。
