清乾隆年(nian)間(jian),南(nan)(nan)充(chong)(chong)醬(jiang)園主張德興,見嘉陵(ling)江邊盛產芥菜(cai)(cai)(cai),他突發(fa)奇(qi)想,將新鮮(xian)芥菜(cai)(cai)(cai)配以(yi)鹽和香(xiang)料,裝入土陶圓壇(tan)密封后放置(zhi)醬(jiang)園內。事隔三年(nian),恰逢立春(chun)之日(ri),醬(jiang)園內忽然飄(piao)出一(yi)股奇(qi)特(te)的香(xiang)味,原來(lai)是(shi)那個土陶圓壇(tan)突然破(po)裂,芳香(xiang)四(si)(si)溢,沁人心脾(pi),眾(zhong)人聞(wen)香(xiang)而(er)(er)至紛紛品嘗,果然是(shi)爽口。此(ci)菜(cai)(cai)(cai)歷(li)經三個寒冬(dong)(dong)(dong),立春(chun)之日(ri)噴香(xiang)而(er)(er)出,眾(zhong)人取(qu)名為(wei)(wei)"冬(dong)(dong)(dong)菜(cai)(cai)(cai)"。一(yi)傳(chuan)十,十傳(chuan)百,傳(chuan)至京城,成為(wei)(wei)朝廷貢品。時有民謠"十里(li)飄(piao)香(xiang)不是(shi)花(hua),順慶府中冬(dong)(dong)(dong)菜(cai)(cai)(cai)牙",十里(li)午南(nan)(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)(cai)(cai)由(you)此(ci)誕(dan)生,經過幾(ji)百年(nian)代(dai)代(dai)相(xiang)傳(chuan),十里(li)香(xiang)南(nan)(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)(cai)(cai)成為(wei)(wei)四(si)(si)川四(si)(si)大(da)名菜(cai)(cai)(cai)之一(yi)。我公司承(cheng)傳(chuan)"南(nan)(nan)充(chong)(chong)醬(jiang)園,德興老(lao)號(hao)",秉(bing)承(cheng)百年(nian)傳(chuan)統工藝,發(fa)揚(yang)光大(da),使十里(li)香(xiang)南(nan)(nan)充(chong)(chong)冬(dong)(dong)(dong)菜(cai)(cai)(cai)這(zhe)一(yi)獨特(te)的地方特(te)日(ri)臻完美,名揚(yang)海內外。

南(nan)充(chong)(chong)冬(dong)菜(cai)(cai)(cai)譽滿(man)全(quan)國(guo)、四川(chuan)(chuan)(chuan)四大(da)名菜(cai)(cai)(cai)之一(yi)(yi)。南(nan)充(chong)(chong)冬(dong)菜(cai)(cai)(cai)生產加(jia)工歷史悠久,距今已有(you)225年。《南(nan)充(chong)(chong)縣(xian)(xian)志》中有(you)這樣的記載:"清嘉慶年間(1796至1820),順慶就(jiu)有(you)冬(dong)菜(cai)(cai)(cai)出售。""道光年間(1821至1850),縣(xian)(xian)人張德(de)興(xing)(xing)在(zai)縣(xian)(xian)城經(jing)營德(de)興(xing)(xing)老號(hao)醬園鋪(pu),制作冬(dong)菜(cai)(cai)(cai),頗有(you)名氣。"1981年南(nan)充(chong)(chong)冬(dong)菜(cai)(cai)(cai)在(zai)四川(chuan)(chuan)(chuan)省(sheng)"四菜(cai)(cai)(cai)"評(ping)比(bi)會上,以光澤油(you)潤(run)、清香(xiang)脆嫩、風味濃郁取勝,評(ping)為全(quan)省(sheng)第一(yi)(yi)名。南(nan)充(chong)(chong)冬(dong)菜(cai)(cai)(cai)與(yu)涪陵(ling)榨菜(cai)(cai)(cai)、宜賓(bin)芽(ya)菜(cai)(cai)(cai)、內江大(da)頭菜(cai)(cai)(cai)并稱為四川(chuan)(chuan)(chuan)"四大(da)名腌菜(cai)(cai)(cai)"。
南(nan)充冬菜(cai)(cai)(cai)以芥(jie)菜(cai)(cai)(cai)為(wei)原(yuan)料(liao),花椒、八角等香(xiang)辛(xin)料(liao)為(wei)輔料(liao),經過20道工(gong)序,歷時(shi)1-3年加工(gong)而成。既可用作(zuo)餐(can)桌上的(de)小菜(cai)(cai)(cai),又(you)可作(zuo)為(wei)烹飪的(de)佐料(liao)使用。川(chuan)菜(cai)(cai)(cai)中有名的(de)冬菜(cai)(cai)(cai)扣肉和冬菜(cai)(cai)(cai)擔擔面等都(dou)是(shi)以南(nan)充冬菜(cai)(cai)(cai)為(wei)主要原(yuan)料(liao)。
南充冬菜(cai)菜(cai)型(xing)均(jun)勻,褐(he)黑(hei)色、油潤、有(you)(you)光澤;具(ju)有(you)(you)南充冬菜(cai)獨有(you)(you)的醬香(xiang)味和辛香(xiang)味,香(xiang)氣濃郁;味道鮮美、質地脆嫩、咸淡適口。富含氨基酸(suan)、乳(ru)酸(suan)、蛋白質、維(wei)生素和多(duo)種微量元素。有(you)(you)開胃健脾、增進食欲、增強人(ren)體機能之(zhi)功效(xiao)。
