清乾隆年間,南(nan)充(chong)醬園(yuan)主(zhu)張德(de)興(xing),見嘉陵(ling)江邊盛產芥(jie)菜(cai)(cai)(cai),他突發(fa)奇想,將新鮮芥(jie)菜(cai)(cai)(cai)配以鹽(yan)和香(xiang)(xiang)料,裝入土陶圓(yuan)壇密(mi)封后(hou)放置醬園(yuan)內(nei)。事隔(ge)三(san)(san)年,恰逢立(li)春之(zhi)(zhi)日(ri),醬園(yuan)內(nei)忽然(ran)(ran)飄(piao)出一股奇特的(de)香(xiang)(xiang)味,原來是(shi)那個(ge)土陶圓(yuan)壇突然(ran)(ran)破裂,芳香(xiang)(xiang)四(si)(si)溢,沁(qin)人心脾,眾(zhong)人聞香(xiang)(xiang)而(er)至(zhi)紛紛品嘗,果然(ran)(ran)是(shi)爽口。此(ci)菜(cai)(cai)(cai)歷經(jing)三(san)(san)個(ge)寒冬(dong),立(li)春之(zhi)(zhi)日(ri)噴香(xiang)(xiang)而(er)出,眾(zhong)人取名(ming)為"冬(dong)菜(cai)(cai)(cai)"。一傳十,十傳百,傳至(zhi)京城,成為朝廷貢品。時(shi)有民謠"十里飄(piao)香(xiang)(xiang)不(bu)是(shi)花(hua),順慶(qing)府中(zhong)冬(dong)菜(cai)(cai)(cai)牙",十里午南(nan)充(chong)冬(dong)菜(cai)(cai)(cai)由此(ci)誕生,經(jing)過幾百年代代相傳,十里香(xiang)(xiang)南(nan)充(chong)冬(dong)菜(cai)(cai)(cai)成為四(si)(si)川四(si)(si)大名(ming)菜(cai)(cai)(cai)之(zhi)(zhi)一。我公司承傳"南(nan)充(chong)醬園(yuan),德(de)興(xing)老號",秉(bing)承百年傳統(tong)工藝,發(fa)揚光大,使十里香(xiang)(xiang)南(nan)充(chong)冬(dong)菜(cai)(cai)(cai)這(zhe)一獨特的(de)地方特日(ri)臻完美,名(ming)揚海內(nei)外。

南(nan)(nan)(nan)充(chong)冬(dong)菜(cai)(cai)譽滿全(quan)國、四川(chuan)四大(da)名菜(cai)(cai)之一(yi)。南(nan)(nan)(nan)充(chong)冬(dong)菜(cai)(cai)生產加工歷史悠久,距今(jin)已(yi)有(you)225年(nian)。《南(nan)(nan)(nan)充(chong)縣(xian)志》中(zhong)有(you)這樣的記載:"清嘉(jia)慶年(nian)間(jian)(1796至(zhi)1820),順慶就有(you)冬(dong)菜(cai)(cai)出售。""道光年(nian)間(jian)(1821至(zhi)1850),縣(xian)人張德興在(zai)(zai)縣(xian)城(cheng)經營德興老號醬園鋪,制作(zuo)冬(dong)菜(cai)(cai),頗有(you)名氣。"1981年(nian)南(nan)(nan)(nan)充(chong)冬(dong)菜(cai)(cai)在(zai)(zai)四川(chuan)省"四菜(cai)(cai)"評比(bi)會上(shang),以光澤油潤(run)、清香脆嫩(nen)、風味(wei)濃郁取勝,評為全(quan)省第一(yi)名。南(nan)(nan)(nan)充(chong)冬(dong)菜(cai)(cai)與(yu)涪陵榨菜(cai)(cai)、宜賓芽(ya)菜(cai)(cai)、內江大(da)頭菜(cai)(cai)并稱為四川(chuan)"四大(da)名腌(a)菜(cai)(cai)"。
南充(chong)冬菜(cai)(cai)(cai)(cai)以芥菜(cai)(cai)(cai)(cai)為(wei)原料(liao)(liao),花椒、八角等香辛料(liao)(liao)為(wei)輔料(liao)(liao),經過20道工序,歷(li)時(shi)1-3年加工而(er)成。既可用作(zuo)餐桌(zhuo)上的小(xiao)菜(cai)(cai)(cai)(cai),又可作(zuo)為(wei)烹飪(ren)的佐料(liao)(liao)使用。川菜(cai)(cai)(cai)(cai)中有(you)名的冬菜(cai)(cai)(cai)(cai)扣肉和冬菜(cai)(cai)(cai)(cai)擔(dan)擔(dan)面等都是以南充(chong)冬菜(cai)(cai)(cai)(cai)為(wei)主(zhu)要原料(liao)(liao)。
