7、上湯桂花魚
桂花魚(yu)又名鱖魚(yu),皮滑骨少,肉質鮮(xian)嫩(nen),盛產于(yu)新豐江(jiang)水庫中,為(wei)東(dong)江(jiang)名菜(cai)。 選用萬綠湖(hu)特產桂花魚(yu)精(jing)(jing)心(xin)制作,刀工精(jing)(jing)細,魚(yu)色乳白,口感(gan)鮮(xian)美,清甜嫩(nen)滑。 原料:桂花魚(yu) 1 條(tiao)(約(yue) 1 斤 2 )、南絲 2 兩、淡(dan)湯(tang) 2 斤半、鹽、味精(jing)(jing)、胡椒(jiao)粉適(shi)量、姜片。
制作(zuo):1、先將桂花(hua)魚去鱗(lin)、宰(zai)凈、起肉(rou)、切成(cheng)塊、魚骨斬塊; 2、起鑊,將魚肉(rou)拉油(you),魚骨煎透(tou)加入二湯滾(gun)成(cheng)奶白(bai)色,起鑊放入碟(die)瓷上,把菜遠煨熟,擺放在菜式兩(liang)邊即成(cheng)。
8、豆腐丸
豆(dou)腐(fu)(fu)(fu)丸是(shi)這道菜的(de)(de)總稱,它可以分(fen)為三(san)大(da)類。第一(yi)(yi)類是(shi)水(shui)煮豆(dou)腐(fu)(fu)(fu)丸,將(jiang)(jiang)豆(dou)腐(fu)(fu)(fu)搗碎后(hou)(hou),拌入地(di)瓜(gua)粉及肉丁(ding)、筍丁(ding)、香(xiang)菇(gu)(gu)丁(ding),伴(ban)以佐料,待(dai)(dai)湯(tang)水(shui)煮沸后(hou)(hou),用(yong)湯(tang)匙一(yi)(yi)個一(yi)(yi)個舀(yao)入鍋(guo)內,待(dai)(dai)豆(dou)腐(fu)(fu)(fu)丸浮上水(shui)面,便(bian)可食用(yong),此菜常作(zuo)家(jia)肴(yao)(yao);第二類是(shi)清蒸豆(dou)腐(fu)(fu)(fu)丸。將(jiang)(jiang)豆(dou)腐(fu)(fu)(fu)搗碎后(hou)(hou),調入肉丁(ding)、地(di)瓜(gua)粉及其它佐料和(he)捏(nie)(nie)成丸,放入蒸籠蒸熟,伴(ban)入調料食用(yong),味道鮮美(mei),并能充饑;第三(san)類是(shi)年(nian)節(jie)(jie)佳肴(yao)(yao),最著名的(de)(de)可算是(shi)寧(ning)(ning)化的(de)(de)“松(song)丸子(zi)(zi)”。寧(ning)(ning)化人在正月初一(yi)(yi)和(he)立春時(shi)辰必吃“松(song)丸子(zi)(zi)”,取其“松(song)”之意,即吃了“松(song)丸子(zi)(zi)”人可一(yi)(yi)年(nian)輕(qing)(qing)輕(qing)(qing)松(song)松(song),所以,它是(shi)客(ke)家(jia)人年(nian)節(jie)(jie)中常用(yong)的(de)(de)菜肴(yao)(yao)。“松(song)丸子(zi)(zi)”主料豆(dou)腐(fu)(fu)(fu),配以炒(chao)熟的(de)(de)花(hua)生米、蔥頭、地(di)瓜(gua)粉、香(xiang)菇(gu)(gu)丁(ding)、荸薺丁(ding)等(deng)等(deng),捏(nie)(nie)成圓(yuan)球狀(zhuang),投入油鍋(guo)中炸至黃色(se),撈(lao)起瀝干備用(yong)。待(dai)(dai)春節(jie)(jie)期間,有客(ke)來訪時(shi),作(zuo)為整個酒席的(de)(de)最后(hou)(hou)一(yi)(yi)道菜,獻給親友,祝愿他們(men)在新一(yi)(yi)年(nian)里事事如意,輕(qing)(qing)輕(qing)(qing)松(song)松(song)。
