7、上湯桂花魚
桂(gui)花魚(yu)(yu)又名鱖魚(yu)(yu),皮滑骨(gu)少(shao),肉質鮮(xian)嫩,盛產(chan)于新(xin)豐江(jiang)水庫中,為(wei)東江(jiang)名菜(cai)。 選用萬綠湖特產(chan)桂(gui)花魚(yu)(yu)精(jing)(jing)心制作(zuo),刀工精(jing)(jing)細,魚(yu)(yu)色乳白,口感鮮(xian)美,清甜嫩滑。 原料:桂(gui)花魚(yu)(yu) 1 條(約 1 斤 2 )、南絲 2 兩、淡湯 2 斤半、鹽、味精(jing)(jing)、胡椒(jiao)粉(fen)適量、姜(jiang)片(pian)。
制作:1、先(xian)將桂花魚(yu)(yu)去鱗、宰凈、起肉、切成塊、魚(yu)(yu)骨(gu)斬(zhan)塊; 2、起鑊,將魚(yu)(yu)肉拉油(you),魚(yu)(yu)骨(gu)煎透加(jia)入二湯滾成奶白色,起鑊放(fang)入碟瓷(ci)上,把菜遠煨熟,擺放(fang)在菜式兩邊即(ji)成。
8、豆腐丸
豆(dou)腐(fu)丸(wan)(wan)(wan)是這道(dao)(dao)菜(cai)(cai)的(de)(de)總(zong)稱,它可以(yi)(yi)分為(wei)三(san)大類。第一(yi)(yi)(yi)類是水(shui)煮豆(dou)腐(fu)丸(wan)(wan)(wan),將(jiang)豆(dou)腐(fu)搗(dao)碎后(hou),拌入(ru)(ru)地(di)瓜(gua)粉(fen)及肉(rou)丁(ding)(ding)、筍(sun)丁(ding)(ding)、香(xiang)菇丁(ding)(ding),伴以(yi)(yi)佐料,待湯(tang)水(shui)煮沸后(hou),用湯(tang)匙(chi)一(yi)(yi)(yi)個一(yi)(yi)(yi)個舀入(ru)(ru)鍋(guo)(guo)內,待豆(dou)腐(fu)丸(wan)(wan)(wan)浮上水(shui)面,便可食用,此(ci)菜(cai)(cai)常(chang)作家肴(yao);第二類是清蒸豆(dou)腐(fu)丸(wan)(wan)(wan)。將(jiang)豆(dou)腐(fu)搗(dao)碎后(hou),調入(ru)(ru)肉(rou)丁(ding)(ding)、地(di)瓜(gua)粉(fen)及其(qi)它佐料和捏(nie)成(cheng)丸(wan)(wan)(wan),放入(ru)(ru)蒸籠(long)蒸熟(shu),伴入(ru)(ru)調料食用,味道(dao)(dao)鮮(xian)美,并(bing)能充饑;第三(san)類是年(nian)節(jie)(jie)佳肴(yao),最(zui)著(zhu)名的(de)(de)可算(suan)是寧(ning)(ning)化(hua)的(de)(de)“松(song)丸(wan)(wan)(wan)子”。寧(ning)(ning)化(hua)人在(zai)正(zheng)月初一(yi)(yi)(yi)和立春(chun)時(shi)辰必吃(chi)(chi)“松(song)丸(wan)(wan)(wan)子”,取其(qi)“松(song)”之(zhi)意(yi),即吃(chi)(chi)了“松(song)丸(wan)(wan)(wan)子”人可一(yi)(yi)(yi)年(nian)輕輕松(song)松(song),所以(yi)(yi),它是客家人年(nian)節(jie)(jie)中(zhong)常(chang)用的(de)(de)菜(cai)(cai)肴(yao)。“松(song)丸(wan)(wan)(wan)子”主(zhu)料豆(dou)腐(fu),配(pei)以(yi)(yi)炒熟(shu)的(de)(de)花(hua)生米、蔥頭、地(di)瓜(gua)粉(fen)、香(xiang)菇丁(ding)(ding)、荸(bi)薺丁(ding)(ding)等(deng)等(deng),捏(nie)成(cheng)圓球狀,投入(ru)(ru)油(you)鍋(guo)(guo)中(zhong)炸至(zhi)黃色(se),撈起(qi)瀝干備用。待春(chun)節(jie)(jie)期間,有(you)客來訪時(shi),作為(wei)整個酒(jiu)席的(de)(de)最(zui)后(hou)一(yi)(yi)(yi)道(dao)(dao)菜(cai)(cai),獻給親友,祝愿他們在(zai)新一(yi)(yi)(yi)年(nian)里事事如意(yi),輕輕松(song)松(song)。
