在(zai)粵西地區很(hen)多(duo)地方(fang)都有(you)做糍(ci)的習俗(su),特別(bie)是(shi)(shi)過(guo)年過(guo)節的時候,在(zai)湛江廉江市,有(you)一(yi)種(zhong)香心(xin)糍(ci),平時一(yi)般很(hen)少(shao)見,但是(shi)(shi)一(yi)到過(guo)年,走親戚(qi)的開始多(duo)了(le),各鄉鎮就會出現很(hen)多(duo)賣香心(xin)糍(ci)的檔口。
制作香(xiang)心糍(ci)的過程十分復雜(za),以(yi)大米(mi),糯米(mi),花生(sheng)仁(ren),黑芝(zhi)麻(ma),冰片(pian)糖(tang)或紅糖(tang)為(wei)原料。先將大米(mi)和糯米(mi)在清水中(zhong)浸泡(pao)數小時(shi),然(ran)后濾干水打成(cheng)(cheng)(cheng)粉(fen)末。搓成(cheng)(cheng)(cheng)棍(gun)棒狀煮熟(shu)(shu),再(zai)搓成(cheng)(cheng)(cheng)餅(bing)皮(pi),同(tong)時(shi)把炒熟(shu)(shu)的花生(sheng)仁(ren)、黑芝(zhi)麻(ma),加(jia)上冰片(pian)糖(tang)一起碾碎(sui)成(cheng)(cheng)(cheng)餡料。用餅(bing)皮(pi)包起餡料便成(cheng)(cheng)(cheng)了(le)香(xiang)心糍(ci)。
