安(an)鋪年(nian)(nian)糕是(shi)(shi)廣(guang)東省湛江廉江市(shi)安(an)鋪的(de)(de)傳統特色美食,年(nian)(nian)糕和安(an)鋪一(yi)樣都是(shi)(shi)有(you)(you)歷史(shi)性的(de)(de),安(an)鋪年(nian)(nian)糕有(you)(you)著(zhu)悠(you)久的(de)(de)歷史(shi)。很久以前,每逢過年(nian)(nian),安(an)鋪人都會做(zuo)“駝衣(yi)仔”。制作方式十分簡單,就(jiu)是(shi)(shi)將(jiang)糯米、片糖、面粉做(zuo)成(cheng)面團,然后(hou)加入花生和椰子(zi)絲(si),有(you)(you)咸味也有(you)(you)甜(tian)味,最后(hou)用(yong)(yong)葉子(zi)包起來,蒸熟(shu)即成(cheng)。過年(nian)(nian)時,老百(bai)姓就(jiu)會拿給家人吃或者送朋友,但保質期(qi)頂多是(shi)(shi)2天。上世紀50年(nian)(nian)代后(hou),“駝衣(yi)仔”變成(cheng)“大米乙”,制作方式相似,用(yong)(yong)爐火(huo)炊熟(shu)。直到(dao)上世紀80年(nian)(nian)代,“大米乙”逐漸變成(cheng)“年(nian)(nian)糕”。傳統的(de)(de)年(nian)(nian)糕也是(shi)(shi)采用(yong)(yong)糯米、白砂糖和花生油等材料(liao)制作而成(cheng)。不同(tong)的(de)(de)是(shi)(shi),年(nian)(nian)糕的(de)(de)味道香滑可口,使用(yong)(yong)真空包裝(zhuang),保質期(qi)可以達到(dao)60天。
安鋪年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao)有黃(huang)、白(bai)兩色,象征金(jin)銀(yin),年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao)又稱“年(nian)(nian)(nian)(nian)(nian)(nian)年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao)”,與“年(nian)(nian)(nian)(nian)(nian)(nian)年(nian)(nian)(nian)(nian)(nian)(nian)高(gao)(gao)”諧(xie)音,寓意著人(ren)們(men)的工作和生活(huo)一年(nian)(nian)(nian)(nian)(nian)(nian)比一年(nian)(nian)(nian)(nian)(nian)(nian)提高(gao)(gao)。所(suo)以前人(ren)有詩(shi)稱年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao):“人(ren)心多好高(gao)(gao),諧(xie)聲制(zhi)食(shi)品,義取年(nian)(nian)(nian)(nian)(nian)(nian)勝年(nian)(nian)(nian)(nian)(nian)(nian),籍以祈(qi)歲諗”,“年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao)寓意稍(shao)云深,白(bai)色如銀(yin)黃(huang)色金(jin)。年(nian)(nian)(nian)(nian)(nian)(nian)歲盼(pan)高(gao)(gao)時時利,虔誠默祝(zhu)望(wang)財臨(lin)。”現在安鋪過年(nian)(nian)(nian)(nian)(nian)(nian)送禮大(da)家(jia)(jia)都會選擇傳統的安鋪年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao),過年(nian)(nian)(nian)(nian)(nian)(nian)家(jia)(jia)家(jia)(jia)戶(hu)戶(hu)都會挑上年(nian)(nian)(nian)(nian)(nian)(nian)糕(gao)作為(wei)大(da)家(jia)(jia)送禮的佳品。
