黃姚黃精(jing)酒的(de)獨特之處(chu),在于九制黃精(jing)獨特技(ji)藝,處(chu)理黃精(jing)是(shi)(shi)要經(jing)過(guo)(guo)九蒸(zheng)十曬(shai)的(de)復(fu)(fu)雜過(guo)(guo)程,新(xin)鮮采挖(wa)來(lai)的(de)黃精(jing),先用山泉水煮(zhu)(zhu)6~8個小時(shi),煮(zhu)(zhu)透了才(cai)能取出來(lai),放(fang)到太陽(yang)底下曬(shai)。曬(shai)了兩天(tian)之后,再煮(zhu)(zhu)第(di)二次。經(jing)過(guo)(guo)反復(fu)(fu)多次蒸(zheng)煮(zhu)(zhu)和晾曬(shai),直至軟熟(shu)變(bian)黑。第(di)一、第(di)二次蒸(zheng)煮(zhu)(zhu),實際(ji)上(shang)就是(shi)(shi)煮(zhu)(zhu)的(de)過(guo)(guo)程,后面的(de)7次才(cai)是(shi)(shi)真(zhen)正意義上(shang)的(de)蒸(zheng)。這(zhe)個工序看起來(lai)簡單,但是(shi)(shi)整個過(guo)(guo)程一點不(bu)能馬(ma)虎(hu),每次都必須把(ba)黃精(jing)曬(shai)得透干,否(fou)則(ze)最后出品的(de)黃精(jing)口感、味道都會受到影響。
