就是(shi)冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)節(jie)氣(qi)時吃的面(mian)條。俗話說,“吃了(le)冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)面(mian),一(yi)天(tian)(tian)長(chang)(chang)一(yi)線(xian)”,冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)面(mian)一(yi)天(tian)(tian)長(chang)(chang)一(yi)線(xian)是(shi)什么意思?這句話的意思是(shi)冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)這天(tian)(tian),白晝最短,過(guo)了(le)冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)后,每(mei)天(tian)(tian)日照時間多一(yi)點(dian),白天(tian)(tian)變長(chang)(chang)一(yi)點(dian)。冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi),為一(yi)年中陰氣(qi)最盛(sheng)、陽氣(qi)最弱之季(ji),因此冬(dong)(dong)至(zhi)(zhi)(zhi)(zhi)也是(shi)適合進補的季(ji)節(jie),用上(shang)羊肉、牛肉、雞肉燉(dun)湯,煮上(shang)碗(wan)熱氣(qi)騰(teng)騰(teng)的面(mian)條,既滋補又(you)御寒(han)還(huan)飽(bao)腹(fu)。
每年12月22日(ri)前后是二(er)十四節氣的"冬至(zhi)(zhi)",太(tai)陽黃經(jing)達270度,冬至(zhi)(zhi)是反映季(ji)節變化(hua)的節氣之一(yi)。冬至(zhi)(zhi)這天(tian)(tian),太(tai)陽光直射南回(hui)歸線(xian),是北半(ban)球(qiu)白天(tian)(tian)最短、黑夜(ye)最長(chang)的一(yi)天(tian)(tian),北極圈以內,則終(zhong)日(ri)為夜(ye)。過(guo)了冬至(zhi)(zhi),太(tai)陽直射位置將逐(zhu)(zhu)漸(jian)向(xiang)北移動,北半(ban)球(qiu)的白天(tian)(tian)就會逐(zhu)(zhu)漸(jian)增長(chang)了,所(suo)謂"吃了冬至(zhi)(zhi)面(mian),一(yi)天(tian)(tian)長(chang)一(yi)線(xian)",所(suo)表達的就是這個意(yi)思。
牛肉雞蛋面
原料:面條鹵(lu)牛肉(rou)片(pian)鹵(lu)雞蛋青菜(cai)油鹽
制作:燒鍋水,水煮(zhu)開后(hou)下入(ru)準備好(hao)的(de)面(mian)條(tiao),將面(mian)條(tiao)煮(zhu)至(zhi)六,七熟,加入(ru)鹵(lu)好(hao)的(de)雞蛋和牛肉片(pian)繼續煮(zhu)上(shang)一(yi)分鐘(zhong);放入(ru)青菜進鍋去煮(zhu)至(zhi)變色,最后(hou)加入(ru)少許鹽(yan)和胡椒粉(fen)調味即可。
雞蛋掛面
用料:掛面1份(fen)、雞蛋1個、青菜適量、鹽適量、芝麻油適量、醬油2勺、香醋1勺、小蔥適量。
做法步驟:
1、煎一(yi)個荷(he)包蛋盛出備用;
2、將(jiang)鍋中放入適量的水,開(kai)(kai)大火燒,水開(kai)(kai)后放入面條(tiao);
3、面條(tiao)快(kuai)熟了時放(fang)入(ru)(ru)小青菜,撒少許鹽,放(fang)入(ru)(ru)蔥花和適量的芝麻油,2勺醬油和1勺香醋;
4、面條煮好后盛入碗中,倒入適量的面湯,攪拌均勻(yun)后擺(bai)上青菜(cai);
5、最后放上雞蛋,這(zhe)樣冬(dong)至(zhi)面就做好了。
