潮汕豬(zhu)雜湯的做(zuo)法

步驟:
1、豬小(xiao)腸用紅薯淀(dian)粉、鹽(yan)、醋放在盤子里抓洗,用清(qing)水(shui)漂清(qing),再用筷(kuai)子把小(xiao)腸翻一個面(mian)用同樣的辦法把小(xiao)腸洗干(gan)凈;
2、在鍋里加(jia)入生(sheng)姜、料酒把小腸煮熟切斷(duan)備用;
3、少許油下鍋,五花肉切小塊放(fang)在炒鍋里(li)煸出油,下豬(zhu)心片、生姜(jiang)、蔥白爆香(xiang),放(fang)入小腸(chang)段翻炒。
4、用料(liao)酒悶一會加腌雪菜、水(shui)(shui);水(shui)(shui)開(kai)以后(hou)先(xian)放豬(zhu)血燒開(kai),再加入(ru)豬(zhu)肝(gan)片;
5、豬肝片剛(gang)剛(gang)熟了,就(jiu)馬上(shang)關(guan)火加鹽(yan)、雞粉調味、胡椒(jiao)粉;
6、裝盤加(jia)香菜(cai)點綴。
