潮汕豬雜湯的做(zuo)法

步驟:
1、豬(zhu)小(xiao)(xiao)腸用(yong)紅(hong)薯淀(dian)粉、鹽、醋放在盤子(zi)里抓洗,用(yong)清(qing)水漂清(qing),再(zai)用(yong)筷子(zi)把小(xiao)(xiao)腸翻一(yi)個面(mian)用(yong)同樣的(de)辦法(fa)把小(xiao)(xiao)腸洗干凈;
2、在鍋里加(jia)入生姜、料(liao)酒把小腸煮熟切斷備用;
3、少許油(you)(you)下鍋(guo)(guo),五(wu)花(hua)肉切小(xiao)(xiao)塊放在炒鍋(guo)(guo)里煸出油(you)(you),下豬心片、生(sheng)姜、蔥白爆(bao)香,放入小(xiao)(xiao)腸(chang)段翻炒。
4、用料酒悶一會加腌雪(xue)菜、水;水開以后先放豬血(xue)燒開,再(zai)加入豬肝(gan)片;
5、豬(zhu)肝片剛剛熟了,就馬上(shang)關(guan)火加鹽、雞粉調味、胡椒粉;
6、裝盤加香菜點綴。
