大足(zu)特產“寶頂牌冬菜”歷經幾代(dai)人的不懈努力逐(zhu)漸由(you)小做大。為適應時代(dai)的發(fa)展,產業(ye)(ye)的需求,由(you)家庭式作(zuo)坊到成立重慶(qing)市鼎翔農(nong)業(ye)(ye)發(fa)展有限公司(si)。冬菜“白露播種,立春收獲”,整個種植過程不使用農(nong)藥、化肥,是(shi)綠色(se)食(shi)品(pin)。因(yin)其(qi)生長(chang)季節(jie)在冬季,所以稱(cheng)(cheng)為“冬菜”。“冬菜”制作(zuo)工藝復雜, 嫩尖腌制,需裝(zhuang)壇密(mi)封,日曬夜露,自然發(fa)酵三年后才窖熟開壇。制作(zuo)過程不加任(ren)何香精,色(se)素(su)。成品(pin)色(se)澤黑褐油潤,濃香撲鼻,鮮嫩脆爽,素(su)有 "七里(li)香","菜味(wei)精" 之美(mei)稱(cheng)(cheng)。
2018年(nian)(nian)公(gong)司(si)(si)在大(da)足(zu)區龍棠大(da)道投資新建(jian)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)博(bo)(bo)物館,整個博(bo)(bo)物館分兩期建(jian)設(she)總投資預計5500萬元,2020年(nian)(nian)8月完成(cheng)(cheng)(cheng)一(yi)期的(de)建(jian)設(she),實際投入資金2500萬元,博(bo)(bo)物館是集“產(chan)(chan)(chan)、學、研、觀光旅游”一(yi)體的(de)綜合性建(jian)筑,投入使用(yong)后將更有(you)(you)力的(de)帶動冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)產(chan)(chan)(chan)業(ye)的(de)發展。公(gong)司(si)(si)固(gu)定資產(chan)(chan)(chan)3500多萬元,年(nian)(nian)產(chan)(chan)(chan)值(zhi)5000萬元,生產(chan)(chan)(chan)經(jing)營面積(ji)一(yi)萬余(yu)(yu)平(ping)方米(mi),四年(nian)(nian)期以上的(de)半(ban)成(cheng)(cheng)(cheng)品(pin)(pin)(pin)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)800余(yu)(yu)噸,價(jia)值(zhi)近(jin)千萬元;現(xian)有(you)(you)員工(gong)50人,其中技(ji)(ji)術(shu)骨干8人,各種生產(chan)(chan)(chan)、檢(jian)測機器設(she)備30余(yu)(yu)臺(套(tao)),年(nian)(nian)生產(chan)(chan)(chan)加工(gong)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)及(ji)系列(lie)調味(wei)品(pin)(pin)(pin)能(neng)力達(da)3000噸;依(yi)托“公(gong)司(si)(si)+種植(zhi)戶(hu)+農戶(hu)”的(de)模(mo)式,公(gong)司(si)(si)擁有(you)(you)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)原(yuan)料種植(zhi)基地(di)5個,面積(ji)6000余(yu)(yu)畝,可(ke)年(nian)(nian)產(chan)(chan)(chan)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)尖原(yuan)料2500余(yu)(yu)噸。近(jin)幾年(nian)(nian)來(lai),我公(gong)司(si)(si)依(yi)托西南大(da)學食品(pin)(pin)(pin)學院的(de)支持,加大(da)了對冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)從原(yuan)料種植(zhi),半(ban)成(cheng)(cheng)(cheng)品(pin)(pin)(pin)發酵,半(ban)成(cheng)(cheng)(cheng)品(pin)(pin)(pin)深加工(gong)的(de)科(ke)技(ji)(ji)攻關。其中,在半(ban)成(cheng)(cheng)(cheng)品(pin)(pin)(pin)深加工(gong)方面,已開始擺脫過去(qu)只賣成(cheng)(cheng)(cheng)品(pin)(pin)(pin)原(yuan)料,產(chan)(chan)(chan)品(pin)(pin)(pin)附加值(zhi)低(di)的(de)局面,開發生產(chan)(chan)(chan)了原(yuan)味(wei)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)、下飯菜(cai)(cai)(cai)、風味(wei)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(調味(wei)類冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai))以及(ji)禮品(pin)(pin)(pin)盒冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)三大(da)系列(lie)共計20余(yu)(yu)種產(chan)(chan)(chan)品(pin)(pin)(pin)推向市場,受到廣大(da)消費者(zhe)的(de)好評。
