說起來,這(zhe)個“踅(xue)”字(zi)也是(shi)有一段故事(shi)的,“踅(xue)”字(zi)本身是(shi)個冷(leng)僻字(zi),清(qing)代合(he)陽(yang)有人(ren)編(bian)了(le)一本《土音(yin)(yin)雜(za)字(zi)》,出(chu)于好(hao)心,找了(le)一個古音(yin)(yin)又(you)讀“xué”的“頁”字(zi)來為“踅(xue)”字(zi)注音(yin)(yin)。但(dan)不想知(zhi)知(zhi)道這(zhe)個古音(yin)(yin)的人(ren)實(shi)在太少了(le),結(jie)果弄(nong)巧成(cheng)拙,大家都按本音(yin)(yin)讀“yè”,而沒有人(ren)讀“踅(xue)xué”,外地(di)人(ren)到(dao)合(he)陽(yang)更是(shi)按字(zi)讀音(yin)(yin),這(zhe)樣(yang)一來,便把“踅(xue)面(mian)”弄(nong)成(cheng)“頁面(mian)”了(le),實(shi)在是(shi)一大誤會。
踅(xue)面(mian)(mian)(mian)原產地(di)在合陽(yang),相傳西漢(han)高(gao)祖三年(nian)(nian),也(ye)(ye)就是(shi)公元前204年(nian)(nian),淮(huai)陰候韓信(xin)在合陽(yang)黃河邊的(de)(de)(de)夏(xia)陽(yang)渡用(yong)(yong)木罌渡軍(jun)活捉河東魏王豹,為了解決10萬大軍(jun)吃(chi)(chi)飯問(wen)題發明(ming)(ming)了踅(xue)面(mian)(mian)(mian),距(ju)今已(yi)有(you)2200多年(nian)(nian)的(de)(de)(de)歷史。吃(chi)(chi)著(zhu)(zhu)(zhu)踅(xue)面(mian)(mian)(mian),再(zai)想(xiang)想(xiang)這個(ge)關(guan)于踅(xue)面(mian)(mian)(mian)起(qi)源的(de)(de)(de)典故,就知道(dao)當年(nian)(nian)韓信(xin)怎(zen)么發明(ming)(ming)出踅(xue)面(mian)(mian)(mian)作(zuo)為行(xing)軍(jun)打仗(zhang)的(de)(de)(de)飯食。一(yi)是(shi)踅(xue)面(mian)(mian)(mian)勁道(dao)。厚且筋大,吃(chi)(chi)在嘴里(li)耐(nai)嚼(jiao),咽在肚里(li)耐(nai)饑。二(er)是(shi)味(wei)醇(chun)。吃(chi)(chi)踅(xue)面(mian)(mian)(mian)時除了鹽、味(wei)精等其它常用(yong)(yong)調(diao)料外,要拌以豬(zhu)油和(he)(he)辣子,所以吃(chi)(chi)起(qi)來(lai)油香濃郁,辣味(wei)悠(you)長,兩者都能(neng)增進(jin)(jin)食欲。三是(shi)方便(bian)。這與(yu)(yu)踅(xue)面(mian)(mian)(mian)的(de)(de)(de)做工有(you)關(guan),我(wo)曾見(jian)過做踅(xue)面(mian)(mian)(mian)的(de)(de)(de)過程,先是(shi)和(he)(he)面(mian)(mian)(mian),在一(yi)個(ge)很(hen)大的(de)(de)(de)瓷盆里(li)倒(dao)進(jin)(jin)面(mian)(mian)(mian)粉和(he)(he)適(shi)量水,用(yong)(yong)一(yi)根粗木棒順著(zhu)(zhu)(zhu)同一(yi)方向攪(jiao),攪(jiao)得稀稠勻(yun)當了,舀一(yi)勺子倒(dao)在一(yi)張(zhang)直(zhi)徑差不多有(you)2尺多的(de)(de)(de)大鐵鏊中(zhong)心(xin),再(zai)用(yong)(yong)半月(yue)(yue)形的(de)(de)(de)木踅(xue)子從(cong)鏊心(xin)向四周一(yi)圈一(yi)圈旋(xuan)著(zhu)(zhu)(zhu)刮開(kai)攤(tan)平。據(ju)說踅(xue)面(mian)(mian)(mian)的(de)(de)(de)名子就是(shi)由那個(ge)半月(yue)(yue)形的(de)(de)(de)木踅(xue)子而得的(de)(de)(de)。但(dan)街上(shang)也(ye)(ye)有(you)把(ba)“踅(xue)面(mian)(mian)(mian)”寫作(zuo)“旋(xuan)面(mian)(mian)(mian)”的(de)(de)(de),想(xiang)必也(ye)(ye)與(yu)(yu)一(yi)圈一(yi)圈地(di)旋(xuan)著(zhu)(zhu)(zhu)刮攤(tan)有(you)關(guan)。烙熟后一(yi)張(zhang)張(zhang)搭(da)在外面(mian)(mian)(mian)涼冷(leng),再(zai)切成寬窄與(yu)(yu)薄厚相當的(de)(de)(de)條形,碼得整整齊齊,這樣(yang)能(neng)保(bao)質(zhi)三、五(wu)天,吃(chi)(chi)時只需在開(kai)水鍋里(li)滾(gun)一(yi)下(xia)即可(ke)。相對于其他飯食,踅(xue)面(mian)(mian)(mian)的(de)(de)(de)三個(ge)特(te)點(dian)都更有(you)利(li)于行(xing)軍(jun)打仗(zhang),漢(han)高(gao)祖能(neng)穩坐天下(xia),其中(zhong)也(ye)(ye)有(you)踅(xue)面(mian)(mian)(mian)的(de)(de)(de)一(yi)份功勞。
如今,社(she)會發展(zhan)了(le)(le),人(ren)(ren)(ren)們生活水平(ping)提(ti)高了(le)(le),吃(chi)(chi)踅(xue)面(mian)(mian)(mian)(mian)也(ye)稍有(you)(you)講究了(le)(le)。踅(xue)面(mian)(mian)(mian)(mian)都(dou)(dou)在(zai)(zai)(zai)小飯館(guan)里(li)賣,且(qie)大多同時經營(ying)面(mian)(mian)(mian)(mian)皮、米線等(deng)其(qi)(qi)他小吃(chi)(chi),也(ye)不再現場(chang)直播,而是(shi)前堂用餐(can),后面(mian)(mian)(mian)(mian)都(dou)(dou)隔了(le)(le)操作間(jian)。桌凳也(ye)換成了(le)(le)青(qing)一(yi)(yi)(yi)色的(de)(de)(de)(de)專用于餐(can)館(guan)的(de)(de)(de)(de)高桌、高凳。人(ren)(ren)(ren)們也(ye)更不用象(xiang)行軍打仗那樣(yang),在(zai)(zai)(zai)吃(chi)(chi)飯上(shang)計較時間(jian)長(chang)短,何況(kuang)超(chao)市里(li)各種各樣(yang)的(de)(de)(de)(de)方便(bian)面(mian)(mian)(mian)(mian)讓(rang)人(ren)(ren)(ren)能挑花眼。但踅(xue)面(mian)(mian)(mian)(mian)仍然受人(ren)(ren)(ren)青(qing)睞。自(zi)己沒(mei)有(you)(you)在(zai)(zai)(zai)合(he)(he)陽(yang)呆過,不知踅(xue)面(mian)(mian)(mian)(mian)的(de)(de)(de)(de)故鄉合(he)(he)陽(yang)人(ren)(ren)(ren)是(shi)不是(shi)非(fei)常愛吃(chi)(chi)踅(xue)面(mian)(mian)(mian)(mian)。而在(zai)(zai)(zai)華(hua)陰(yin)(yin)(yin),我(wo)所熟知的(de)(de)(de)(de)人(ren)(ren)(ren)沒(mei)有(you)(you)不喜歡(huan)踅(xue)面(mian)(mian)(mian)(mian)的(de)(de)(de)(de)。用餐(can)時分,隨便(bian)走進哪個踅(xue)面(mian)(mian)(mian)(mian)館(guan),都(dou)(dou)幾乎(hu)座(zuo)無(wu)虛席,食(shi)(shi)者無(wu)論(lun)男婦老幼,不分尊(zun)卑貴賤。不僅小攤小店(dian)里(li)有(you)(you),星級賓館(guan)飯店(dian)里(li)踅(xue)面(mian)(mian)(mian)(mian)也(ye)是(shi)食(shi)(shi)譜里(li)小吃(chi)(chi)的(de)(de)(de)(de)代表品類,每宴賓客,華(hua)陰(yin)(yin)(yin)人(ren)(ren)(ren)必以踅(xue)面(mian)(mian)(mian)(mian)為(wei)特色小吃(chi)(chi)待之(zhi)。不僅如此,我(wo)還聽說一(yi)(yi)(yi)些(xie)遠離(li)家(jia)鄉在(zai)(zai)(zai)外地干事的(de)(de)(de)(de)華(hua)陰(yin)(yin)(yin)人(ren)(ren)(ren)一(yi)(yi)(yi)旦回澄,顧不上(shang)奔家(jia)里(li),先(xian)要(yao)到街上(shang)找一(yi)(yi)(yi)家(jia)踅(xue)面(mian)(mian)(mian)(mian)館(guan),飽餐(can)一(yi)(yi)(yi)頓(dun)久違的(de)(de)(de)(de)踅(xue)面(mian)(mian)(mian)(mian),平(ping)日里(li)和同事們出去吃(chi)(chi)飯,他們也(ye)常常以踅(xue)面(mian)(mian)(mian)(mian)為(wei)首選,有(you)(you)時候(hou)即使一(yi)(yi)(yi)塊兒享(xiang)用其(qi)(qi)他飯食(shi)(shi),當中必有(you)(you)人(ren)(ren)(ren)嘆曰:哎呀!好(hao)些(xie)日子都(dou)(dou)沒(mei)有(you)(you)吃(chi)(chi)踅(xue)面(mian)(mian)(mian)(mian)了(le)(le)。每當這(zhe)個時候(hou),我(wo)就想,踅(xue)面(mian)(mian)(mian)(mian)雖生在(zai)(zai)(zai)合(he)(he)陽(yang),但也(ye)在(zai)(zai)(zai)華(hua)陰(yin)(yin)(yin)扎(zha)了(le)(le)根(gen),而且(qie)這(zhe)根(gen)扎(zha)在(zai)(zai)(zai)了(le)(le)華(hua)陰(yin)(yin)(yin)人(ren)(ren)(ren)的(de)(de)(de)(de)心(xin)里(li),讓(rang)在(zai)(zai)(zai)外的(de)(de)(de)(de)游子魂牽夢(meng)縈,讓(rang)幾乎(hu)所有(you)(you)的(de)(de)(de)(de)華(hua)陰(yin)(yin)(yin)人(ren)(ren)(ren)都(dou)(dou)有(you)(you)一(yi)(yi)(yi)個共(gong)同的(de)(de)(de)(de)飲(yin)食(shi)(shi)愛好(hao),在(zai)(zai)(zai)華(hua)陰(yin)(yin)(yin)若要(yao)論(lun)起飲(yin)食(shi)(shi)文化來,我(wo)看華(hua)陰(yin)(yin)(yin)踅(xue)面(mian)(mian)(mian)(mian)當是(shi)首選的(de)(de)(de)(de)飯食(shi)(shi)之(zhi)一(yi)(yi)(yi)。

吃(chi)踅面時(shi)豬(zhu)油必(bi)不(bu)(bu)(bu)可少(shao),蕎面調上豬(zhu)油,才(cai)(cai)軟和好吃(chi)。外地(di)人(ren)一(yi)是嫌蕎面看起來黑,其貌不(bu)(bu)(bu)揚;二是怕不(bu)(bu)(bu)熟;三是對(dui)紅油辣椒(jiao)望而(er)生(sheng)畏,但(dan)若吃(chi)上一(yi)碗,便覺味美可口,咬(yao)到(dao)嘴(zui)里筋,吃(chi)到(dao)肚里香,方(fang)知合陽人(ren)為什么對(dui)踅面感情(qing)極深。合陽人(ren)不(bu)(bu)(bu)分男(nan)女(nv)老(lao)少(shao),都喜(xi)食(shi)踅面,上會趕集,少(shao)不(bu)(bu)(bu)了(le)兩(liang)碗踅面,一(yi)個(ge)個(ge)吃(chi)得滿嘴(zui)紅油,即使是穿著入時(shi)的大姑娘小媳婦也絲毫不(bu)(bu)(bu)覺難為情(qing),反(fan)而(er)卻覺得這才(cai)(cai)吃(chi)出味兒來了(le)。逢到(dao)過春節(jie),許多家都是專(zhuan)門訂做(zuo)幾十斤,準備好紅油辣椒(jiao),以便招待親(qin)朋好友(you);碰到(dao)接待外地(di)來客,踅面更是飯桌上必(bi)不(bu)(bu)(bu)可少(shao)的保(bao)留(liu)節(jie)目。
制作(zuo)(zuo)好的(de)踅(xue)面(mian)(mian)好比方便面(mian)(mian)。吃(chi)時在(zai)開(kai)水鍋浸泡兩(liang)分鐘,撈出(chu),放(fang)進碗(wan)里,加少許(xu)粉(fen)魚(yu)(yu)(yu),調鹽、醋、蔥(cong)花(hua)、花(hua)椒(jiao)(jiao)(jiao)面(mian)(mian),再淋上辣(la)椒(jiao)(jiao)(jiao)油(you)及熟豬油(you)即成。粉(fen)魚(yu)(yu)(yu)講(jiang)究用(yong)綠豆(dou)粉(fen)制作(zuo)(zuo),這是最好的(de)。用(yong)小麥面(mian)(mian)、玉米面(mian)(mian)也行。但通常(chang)多(duo)用(yong)紅薯(shu)面(mian)(mian)制作(zuo)(zuo)粉(fen)魚(yu)(yu)(yu)。合(he)陽盛產(chan)優(you)質紅薯(shu),干甜適(shi)口,制作(zuo)(zuo)粉(fen)魚(yu)(yu)(yu)也不(bu)錯(cuo)。合(he)陽人吃(chi)踅(xue)面(mian)(mian),喜歡多(duo)放(fang)辣(la)椒(jiao)(jiao)(jiao)油(you)和豬油(you),這樣,吃(chi)起來,又(you)(you)綿,又(you)(you)潤,又(you)(you)辣(la),香味濃烈,頗(po)覺過(guo)癮(yin)。也可以伴(ban)著(zhu)喝一碗(wan)粉(fen)魚(yu)(yu)(yu)湯。有(you)干有(you)稀,符合(he)衛生營(ying)養(yang)要求(qiu)。而且蕎麥又(you)(you)有(you)清熱(re)利尿之(zhi)功效(xiao),當地(di)群眾在(zai)原來簡單(dan)食用(yong)的(de)基礎上也進行了一些改(gai)進,把大(da)餅切成細條,吃(chi)時在(zai)鍋里稍煮(zhu),撈出(chu)來加上調料,更加好吃(chi)。
在合(he)陽各地(di)都可以吃到踅(xue)(xue)面,坊(fang)鎮踅(xue)(xue)面被稱為正宗,高手輩出,每逢集日,數十家踅(xue)(xue)面各呈民彩(cai)。近(jin)半個(ge)世紀來則(ze)以田茂林的(de)踅(xue)(xue)面最為出名。
炒踅面(mian)更是(shi)做(zuo)為(wei)一(yi)盤美味(wei)菜肴(yao)出現(xian)在豪華酒店的菜譜里。東門大(da)酒店張師(shi)傅(fu)做(zuo)的炒踅面(mian)五彩斑(ban)斕,酥潤可口,韻味(wei)悠長(chang),嚼到嘴里筋,咽(yan)到肚里香。“長(chang)壽(shou)(shou)菜”——炒踅面(mian):龜壽(shou)(shou)延(yan)年(nian)(老人過(guo)壽(shou)(shou)時(shi),一(yi)只千(qian)年(nian)壽(shou)(shou)龜栩(xu)栩(xu)如生(sheng)昂首(shou)在你(ni)的面(mian)前);富貴滿園(yuan)(中年(nian)人過(guo)生(sheng)日時(shi),一(yi)朵牡(mu)丹(dan)花(hua)盛(sheng)開(kai)在你(ni)的生(sheng)命里);太(tai)陽(yang)花(hua)開(kai)(孩子過(guo)生(sheng)日時(shi),一(yi)朵太(tai)陽(yang)花(hua)燦爛(lan)在你(ni)的心(xin)田)。
炒踅(xue)面做(zuo)法很簡單。用料:干散(san)的踅(xue)面、雞蛋、辣(la)椒(jiao)、卷心菜(cai)、西紅柿等蔬菜(cai)。把熟油熱(re)至(zhi)4、5成,先倒入蔥(cong)姜蒜爆(bao)炒,再放(fang)入花(hua)椒(jiao)面、辣(la)椒(jiao)面,接著放(fang)入黃(huang)豆芽(ya)、紅、綠辣(la)椒(jiao)絲炒至(zhi)7、8成,最后倒入踅(xue)面,加高湯翻(fan)炒裝盤。
踅面(mian)一(yi)年四季都能進食,“夏吃(chi)解(jie)乏困,冬食驅冷寒”,蕎面(mian)能消暑利尿(niao),有(you)解(jie)乏除(chu)濕的藥效,常(chang)吃(chi)可(ke)以降血脂,平血壓,治便秘(mi),調胃潤腸,既治病,又保健,可(ke)謂是“長壽面(mian)”。隨著(zhu)人們對蕎麥天然保健作用的認(ren)識,踅面(mian)必(bi)將(jiang)風靡全國(guo),走向世界。
踅(xue)(xue)面(mian)是(shi)家(jia)鄉(xiang)的(de)(de)味道,是(shi)家(jia)鄉(xiang)人(ren)兒(er)時(shi)的(de)(de)“情結”。猶記兒(er)時(shi)跟隨父母(mu)去趕集(ji)的(de)(de)情景,口饞,總想吃點什么,父母(mu)便帶我們姐弟踅(xue)(xue)過(guo)來,踅(xue)(xue)過(guo)去,最終(zhong)還(huan)是(shi)停到最便宜(yi)的(de)(de)“踅(xue)(xue)面(mian)”攤前一飽(bao)口福(fu)。農民(min)的(de)(de)父母(mu)親(qin)窮啊,買(mai)不起時(shi)更多的(de)(de)時(shi)候許諾下次趕集(ji)時(shi)讓(rang)(rang)吃碗(wan)踅(xue)(xue)面(mian)——兒(er)時(shi)的(de)(de)“奢侈飯(fan)”,因此長大了(le)(le),有(you)錢(qian)了(le)(le),可還(huan)是(shi)惦(dian)(dian)記兒(er)時(shi)的(de)(de)“踅(xue)(xue)面(mian)”,就(jiu)是(shi)走(zou)出(chu)去多少年,走(zou)出(chu)去多么遠,仍然惦(dian)(dian)記。它已經深深地在家(jia)鄉(xiang)人(ren)的(de)(de)心里扎了(le)(le)根,讓(rang)(rang)在外(wai)的(de)(de)游子也(ye)魂牽夢縈。走(zou),咥(xi)踅(xue)(xue)面(mian)哈(ha)。離(li)家(jia)的(de)(de)游子或者在外(wai)打工的(de)(de)一旦(dan)回(hui)家(jia),路過(guo)街(jie)上先找(zhao)一家(jia)踅(xue)(xue)面(mian)店,咥(xi)兩(liang)碗(wan)家(jia)鄉(xiang)的(de)(de)踅(xue)(xue)面(mian),飽(bao)餐一頓。平日(ri)里和同事們出(chu)去吃飯(fan),也(ye)常常以踅(xue)(xue)面(mian)為首選,有(you)時(shi)候即使一塊兒(er)享(xiang)用其(qi)他飯(fan)食,當中有(you)人(ren)必嘆:哎(ai)呀!好些日(ri)子都沒有(you)吃踅(xue)(xue)面(mian)了(le)(le)。
