最遲始于明代,被譽為“云腿”的云南省地方特產,因產于宣威而得名,宣威市的傳統名特產品,屬中國三大名腿之一
宣(xuan)威(wei)火腿,云南(nan)省地方特(te)產之一,因產于宣(xuan)威(wei)而(er)得名。它的主要特(te)點是:形(xing)似琵琶,只大骨(gu)小,皮(pi)薄肉(rou)厚肥瘦適中;切開斷(duan)面,香氣濃郁(yu),色澤鮮(xian)艷,瘦肉(rou)呈(cheng)(cheng)鮮(xian)紅(hong)色或玫瑰(gui)色,肥肉(rou)呈(cheng)(cheng)乳白色,骨(gu)頭略(lve)顯桃紅(hong),似血氣尚(shang)在(zai)滋潤(run)。其品質優良,足(zu)以(yi)代(dai)表云南(nan)火腿,故常稱“云腿”。
云(yun)腿(tui)(tui)位(wei)列中國(guo)特(te)產有(you)“三(san)腿(tui)(tui)”之(zhi)(zhi)名,不僅(jin)行銷(xiao)國(guo)內,且(qie)在東南(nan)亞等地享有(you)盛名。云(yun)腿(tui)(tui)講究“四秘(mi)(mi)”之(zhi)(zhi)法,形成了一套獨特(te)體系。“割秘(mi)(mi)”是(shi)割腿(tui)(tui)時(shi)講究刀功(gong),把豬后腿(tui)(tui)割成“琵琶式(shi)”,油膜必(bi)剔除干凈。“腌(a)(a)秘(mi)(mi)”是(shi)講究乘鮮(xian)腌(a)(a)即(ji)所謂“血腿(tui)(tui)”,雖隔(ge)一夜,必(bi)失其美味(wei)(wei)。用云(yun)南(nan)磨黑鹽與(yu)川鹽腌(a)(a)成風味(wei)(wei)有(you)所不同,前者色(se)艷(yan),后者味(wei)(wei)香(xiang)(xiang)。鹽分合(he)適,云(yun)腿(tui)(tui)可藏二三(san)年(nian),其味(wei)(wei)由香(xiang)(xiang)轉(zhuan)甜,極其美妙。“藏秘(mi)(mi)”是(shi)講究保藏。“食秘(mi)(mi)”是(shi)講究各種吃法。云(yun)腿(tui)(tui)腌(a)(a)制(zhi)到其表(biao)面稍現綠色(se)時(shi),在三(san)個部位(wei)用大針(zhen)刺入后拔出嗅品(pin),達到“三(san)針(zhen)清香(xiang)(xiang)”說明已腌(a)(a)制(zhi)成功(gong)。此時(shi)剖開(kai),鮮(xian)紅牙白,色(se)彩誘人(ren),香(xiang)(xiang)味(wei)(wei)撲鼻,食之(zhi)(zhi)回味(wei)(wei) 。
宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)形(xing)(xing)似琵琶,身穿綠袍,三針青香無異味(wei)(wei),且富(fu)含蛋(dan)白質(zhi)、脂肪、氨基酸、微量(liang)元素(su)和(he)維生素(su)等多種營(ying)養(yang)物質(zhi)。其(qi)(qi)(qi)風(feng)(feng)味(wei)(wei)的(de)(de)(de)形(xing)(xing)成(cheng)(cheng)(cheng),除以豬(zhu)種、飼養(yang)、加(jia)(jia)(jia)工(gong)(gong)(gong)技術(shu)(shu)有關(guan)外(wai),發(fa)(fa)酵(jiao)(jiao)過(guo)程(cheng)是(shi)(shi)(shi)重要的(de)(de)(de)影響(xiang)環(huan)節,經云南(nan)省微生物研究(jiu)(jiu)的(de)(de)(de)研究(jiu)(jiu)表明,國(guo)(guo)內外(wai)種類的(de)(de)(de)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui),其(qi)(qi)(qi)主(zhu)系(xi)列成(cheng)(cheng)(cheng)份大(da)同小(xiao)異,但(dan)非主(zhu)系(xi)列成(cheng)(cheng)(cheng)份(營(ying)養(yang)成(cheng)(cheng)(cheng)份及色香味(wei)(wei))因發(fa)(fa)酵(jiao)(jiao)方(fang)法(fa)(fa)的(de)(de)(de)不(bu)(bu)同而(er)不(bu)(bu)同。其(qi)(qi)(qi)它外(wai)地(di)(di)人通(tong)過(guo)來宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)學(xue)習,可以利用(yong)(yong)其(qi)(qi)(qi)加(jia)(jia)(jia)工(gong)(gong)(gong)技術(shu)(shu),但(dan)是(shi)(shi)(shi)所(suo)加(jia)(jia)(jia)工(gong)(gong)(gong)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)不(bu)(bu)在(zai)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)貯存、發(fa)(fa)酵(jiao)(jiao)或用(yong)(yong)外(wai)地(di)(di)鮮腿(tui)(tui)(tui)在(zai)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)加(jia)(jia)(jia)工(gong)(gong)(gong)腌制、貯存都(dou)是(shi)(shi)(shi)形(xing)(xing)不(bu)(bu)成(cheng)(cheng)(cheng)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)的(de)(de)(de)。如昭通(tong)、四川(chuan)、緬甸(dian)曾經派人來宣(xuan)(xuan)(xuan)(xuan)(xuan)學(xue)習宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)加(jia)(jia)(jia)工(gong)(gong)(gong)技術(shu)(shu),回(hui)(hui)去(qu)后(hou)如法(fa)(fa)加(jia)(jia)(jia)工(gong)(gong)(gong),但(dan)因氣候、水土等條(tiao)件不(bu)(bu)同,無法(fa)(fa)腌制出宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui);在(zai)外(wai)地(di)(di)工(gong)(gong)(gong)作的(de)(de)(de)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)人回(hui)(hui)老家,都(dou)要帶(dai)一點鮮豬(zhu)肉和(he)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)回(hui)(hui)工(gong)(gong)(gong)作所(suo)在(zai)地(di)(di),是(shi)(shi)(shi)因宣(xuan)(xuan)(xuan)(xuan)(xuan)境內所(suo)產(chan)(chan)鮮豬(zhu)肉肉質(zhi)滋(zi)嫩(nen),味(wei)(wei)道鮮美;而(er)帶(dai)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)則要選發(fa)(fa)酵(jiao)(jiao)成(cheng)(cheng)(cheng)熟(shu)的(de)(de)(de)老腿(tui)(tui)(tui),否則因氣候、水土環(huan)境的(de)(de)(de)改(gai)變,好(hao)腿(tui)(tui)(tui)變成(cheng)(cheng)(cheng)壞腿(tui)(tui)(tui)。就是(shi)(shi)(shi)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)周(zhou)(zhou)邊鄰近地(di)(di)區(qu)所(suo)產(chan)(chan)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui),加(jia)(jia)(jia)工(gong)(gong)(gong)腌制方(fang)法(fa)(fa)一樣,也因氣候、水土不(bu)(bu)同而(er)在(zai)品(pin)質(zhi)上(shang)始終(zhong)與(yu)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)有很(hen)大(da)差距,尤其(qi)(qi)(qi)是(shi)(shi)(shi)色香味(wei)(wei)上(shang)差距相當明顯,因此這些周(zhou)(zhou)邊鄰近地(di)(di)區(qu)所(suo)產(chan)(chan)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui),一直以來都(dou)要冠以宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)頭銜,才賣得出去(qu)。這說明了(le)(le)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)營(ying)養(yang)風(feng)(feng)味(wei)(wei)的(de)(de)(de)形(xing)(xing)成(cheng)(cheng)(cheng),主(zhu)要是(shi)(shi)(shi)在(zai)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)特(te)殊的(de)(de)(de)地(di)(di)域氣候環(huan)境條(tiao)件下,經過(guo)風(feng)(feng)干,發(fa)(fa)酵(jiao)(jiao)成(cheng)(cheng)(cheng)熟(shu)而(er)形(xing)(xing)成(cheng)(cheng)(cheng)的(de)(de)(de)。宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)的(de)(de)(de)理化指(zhi)標,外(wai)觀形(xing)(xing)狀,營(ying)養(yang)風(feng)(feng)味(wei)(wei)決定了(le)(le)其(qi)(qi)(qi)質(zhi)量(liang)特(te)色。宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)腌制時只用(yong)(yong)食(shi)用(yong)(yong)鹽,不(bu)(bu)加(jia)(jia)(jia)任何食(shi)品(pin)添加(jia)(jia)(jia)劑,其(qi)(qi)(qi)理化指(zhi)標優于國(guo)(guo)標,特(te)別(bie)是(shi)(shi)(shi)亞硝酸鹽含量(liang)很(hen)低,成(cheng)(cheng)(cheng)為(wei)宣(xuan)(xuan)(xuan)(xuan)(xuan)腿(tui)(tui)(tui)的(de)(de)(de)一特(te)異性。宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)火(huo)(huo)(huo)(huo)腿(tui)(tui)(tui)的(de)(de)(de)精加(jia)(jia)(jia)工(gong)(gong)(gong)產(chan)(chan)品(pin)美觀大(da)方(fang),營(ying)養(yang)豐富(fu),風(feng)(feng)味(wei)(wei)獨特(te),質(zhi)量(liang)上(shang)乘,食(shi)用(yong)(yong)方(fang)便。是(shi)(shi)(shi)宣(xuan)(xuan)(xuan)(xuan)(xuan)威(wei)(wei)(wei)(wei)(wei)(wei)(wei)(wei)人民根 宣(xuan)(xuan)威火腿具有鮮(xian)、酥、脆(cui)、嫩、香(xiang)(xiang)甜(tian)等特(te)點,一直以營(ying)養(yang)(yang)豐富,肉質滋(zi)嫩,油而不(bu)(bu)膩,香(xiang)(xiang)味(wei)(wei)(wei)濃郁(yu),咸香(xiang)(xiang)回(hui)甜(tian)著(zhu)稱于世,被消費者視為名(ming)饋贈親朋好(hao)友(you)的(de)珍貴禮(li)品,而在競(jing)爭日(ri)漸劇烈的(de)食品市場中(zhong)(zhong)扎(zha)根開花(hua),經(jing)久不(bu)(bu)衰。這并非偶(ou)然,而是(shi)由(you)其自(zi)身(shen)的(de)香(xiang)(xiang)味(wei)(wei)(wei)、營(ying)養(yang)(yang)價值及(ji)風味(wei)(wei)(wei)特(te)色所決(jue)定的(de)。香(xiang)(xiang)氣經(jing)昆明醫學(xue)院鑒定出43個芳香(xiang)(xiang)化合(he)物,包括(kuo)烴類(lei)7個,醛類(lei)15個、酮類(lei)2個、醇及(ji)酚(fen)類(lei)7個、脂類(lei)6個、呋喃類(lei)4個、其它2個;據北京營(ying)養(yang)(yang)研究所及(ji)云南(nan)省(sheng)科學(xue)院測試中(zhong)(zhong)心(xin)營(ying)養(yang)(yang)朊分析報(bao)告和測試分析結(jie)果表明,宣(xuan)(xuan)威火腿內(nei)含19種(zhong)氮(dan)基(ji)酸(其中(zhong)(zhong)8種(zhong)人體不(bu)(bu)能(neng)合(he)成的(de)必需氨基(ji)酸全部含有),11種(zhong)維(wei)生素(su)(su),9種(zhong)微量元(yuan)素(su)(su)。
宣(xuan)威(wei)火腿(tui)經久(jiu)不衰,主要是取決于其色(se)香味美,營養豐富(fu),風(feng)味獨(du)特。而宣(xuan)威(wei)火腿(tui)的形成(cheng),又取決于宣(xuan)威(wei)獨(du)特的地域地理氣候環境
1920年,宣威浦在(zai)庭兄 弟將宣和公司改(gai)為大有恒(heng)公司。1923年在(zai)廣(guang)州舉(ju)辦的全國各地食(shi)品比賽會上,獲得各界(jie)人(ren)士的好評(ping)。以宣威火腿(tui)制成“云腿(tui)”罐頭(tou)的工廠,也(ye)取(qu)名(ming)為“德和罐頭(tou)廠”,從此宣威火腿(tui)名(ming)聲(sheng)大振,遠銷東南亞和港澳地區,現在(zai)還出口日本(ben)和歐美一(yi)些國家(jia)。
