簡介
天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou),創(chuang)辦(ban)于1927年(nian)(nian)(nian)(nian)(nian)(nian)秋,初名武津天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou),由蘇州(zhou)(zhou)陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)出資創(chuang)建。陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)的祖父川江清(qing)(qing)末任(ren)蘇州(zhou)(zhou)知府,民國(guo)初遷居杭(hang)(hang)(hang)州(zhou)(zhou)。他(ta)以唐(tang)代(dai)詩人(ren)(ren)(ren)宋之問(wen)“桂子(zi)月(yue)中落(luo),天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)云外(wai)飄(piao)”的名句為該(gai)店(dian)命名。據傳,當年(nian)(nian)(nian)(nian)(nian)(nian)陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)曾以重金(jin)酬謝為“天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)”取名提(ti)出想法的書生(sheng)。后來(lai),天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)聲明遠揚(yang)(yang),又有人(ren)(ren)(ren)譽之為“國(guo)色天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)”、“天(tian)(tian)下第(di)一(yi)香(xiang)(xiang)(xiang)(xiang)(xiang)”。天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)開業之初,生(sheng)意不(bu)是(shi)(shi)特(te)別好(hao),陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)受(shou)到來(lai)西(xi)(xi)湖游玩的客(ke)(ke)(ke)人(ren)(ren)(ren)喜(xi)歡尋購(gou)杭(hang)(hang)(hang)州(zhou)(zhou)土(tu)特(te)產,如絲綢織錦、龍(long)井茶、天(tian)(tian)竺筷的啟示,就決定以經(jing)(jing)營(ying)(ying)(ying)杭(hang)(hang)(hang)州(zhou)(zhou)風(feng)味(wei)為特(te)色。因此改名為武津天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou),以標榜其特(te)色。陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)聘請(qing)杭(hang)(hang)(hang)州(zhou)(zhou)名廚(chu)能師(shi),廣(guang)搜杭(hang)(hang)(hang)州(zhou)(zhou)傳統風(feng)味(wei)于一(yi)家。1929年(nian)(nian)(nian)(nian)(nian)(nian),杭(hang)(hang)(hang)州(zhou)(zhou)舉(ju)辦(ban)西(xi)(xi)湖博(bo)覽會(hui),國(guo)內(nei)外(wai)賓(bin)客(ke)(ke)(ke)紛紛進入天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou),天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)的杭(hang)(hang)(hang)幫菜(cai)頗受(shou)贊譽。此后,天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)在(zai)(zai)上海(hai)、香(xiang)(xiang)(xiang)(xiang)(xiang)港(gang)開設(she)“天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)杭(hang)(hang)(hang)菜(cai)館(guan)”,至今(jin),香(xiang)(xiang)(xiang)(xiang)(xiang)港(gang)地區、美國(guo)和東南亞(ya)一(yi)些國(guo)家仍有餐館(guan)使用“天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)”的招(zhao)牌(pai),經(jing)(jing)營(ying)(ying)(ying)杭(hang)(hang)(hang)州(zhou)(zhou)特(te)色菜(cai)。天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)地杭(hang)(hang)(hang)城(cheng)(cheng)久居正宗杭(hang)(hang)(hang)菜(cai)首席,在(zai)(zai)海(hai)外(wai)亦可謂香(xiang)(xiang)(xiang)(xiang)(xiang)飄(piao)萬(wan)里。 發展1931年(nian)(nian)(nian)(nian)(nian)(nian),陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)聘請(qing)杭(hang)(hang)(hang)州(zhou)(zhou)飲食業行家孟(meng)(meng)永(yong)(yong)泰(tai)經(jing)(jing)營(ying)(ying)(ying),數年(nian)(nian)(nian)(nian)(nian)(nian)后,孟(meng)(meng)永(yong)(yong)泰(tai)積聚財力,從陸(lu)冷(leng)(leng)年(nian)(nian)(nian)(nian)(nian)(nian)手(shou)中盤(pan)過(guo)“天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)”獨家經(jing)(jing)營(ying)(ying)(ying)。孟(meng)(meng)永(yong)(yong)泰(tai)是(shi)(shi)紹興人(ren)(ren)(ren),他(ta)善于揣摩顧(gu)(gu)客(ke)(ke)(ke)的心理,經(jing)(jing)營(ying)(ying)(ying)方式(shi)靈(ling)活。當時來(lai)杭(hang)(hang)(hang)的游客(ke)(ke)(ke)大(da)多是(shi)(shi)上海(hai)人(ren)(ren)(ren),他(ta)便用魚(yu)、蝦(xia)、蟹、禽等(deng)鮮貨為原料,制作(zuo)上講究清(qing)(qing)鮮脆(cui)嫩,很適合上海(hai)游客(ke)(ke)(ke)的口味(wei)。他(ta)還(huan)兼營(ying)(ying)(ying)川、徽、蘇菜(cai)、以廣(guang)招(zhao)來(lai)客(ke)(ke)(ke),并(bing)聘用技術好(hao)的廚(chu)師(shi)按(an)特(te)長(chang)分(fen)工掌廚(chu)。同時不(bu)惜工本整修門面,建起了玻璃養魚(yu)池,活殺現烹吸引顧(gu)(gu)客(ke)(ke)(ke)。孟(meng)(meng)永(yong)(yong)泰(tai)還(huan)建立蔬菜(cai)、家禽基地,使時令(ling)佳肴不(bu)斷應(ying)(ying)市,因而成為杭(hang)(hang)(hang)城(cheng)(cheng)的名樓(lou)。當時天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)是(shi)(shi)杭(hang)(hang)(hang)州(zhou)(zhou)第(di)一(yi)家購(gou)置電器冰箱的菜(cai)館(guan)。夏令(ling)時節(jie),天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)自制“冰豆(dou)腐”供(gong)應(ying)(ying)食客(ke)(ke)(ke),震動杭(hang)(hang)(hang)城(cheng)(cheng)。店(dian)主(zhu)有堅持薄利多銷的原則,時常坐在(zai)(zai)大(da)堂觀察顧(gu)(gu)客(ke)(ke)(ke),聽取顧(gu)(gu)客(ke)(ke)(ke)對菜(cai)肴質量的直接反映。一(yi)時間,“要(yao)劃船,西(xi)(xi)湖六碼頭(tou);要(yao)吃菜(cai),杭(hang)(hang)(hang)州(zhou)(zhou)天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)”的俚語不(bu)脛而走,名揚(yang)(yang)滬杭(hang)(hang)(hang)寧,生(sheng)意越(yue)做(zuo)越(yue)大(da)。該(gai)店(dian)原設(she)在(zai)(zai)教仁(ren)街(今(jin)郵(you)電路)南側,1956年(nian)(nian)(nian)(nian)(nian)(nian)遷至鬧市區的解放路井亭(ting)橋(qiao)邊,1981年(nian)(nian)(nian)(nian)(nian)(nian)7月(yue)改建成三層樓(lou),面積達2000余平方米,一(yi)次(ci)可接待賓(bin)客(ke)(ke)(ke)1000余人(ren)(ren)(ren)。天(tian)(tian)香(xiang)(xiang)(xiang)(xiang)(xiang)樓(lou)經(jing)(jing)營(ying)(ying)(ying)的杭(hang)(hang)(hang)共,口味(wei)純正,特(te)色鮮明。東坡(po)肉、西(xi)(xi)湖醋魚(yu)、龍(long)井蝦(xia)仁(ren)、叫(jiao)化童雞、干炸響鈴、油燜(men)春(chun)筍、鮮栗炒子(zi)雞、春(chun)筍炒步魚(yu)、火(huo)踵(zhong)神仙鴨等(deng)均(jun)為該(gai)店(dian)的拿手(shou)菜(cai)。
