天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou),創辦于1927年(nian)(nian)(nian)秋(qiu),初(chu)(chu)名武(wu)(wu)津天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou),由蘇州(zhou)(zhou)(zhou)陸(lu)冷(leng)年(nian)(nian)(nian)出資創建(jian)。陸(lu)冷(leng)年(nian)(nian)(nian)的(de)祖(zu)父川江(jiang)清末任蘇州(zhou)(zhou)(zhou)知府(fu),民國(guo)初(chu)(chu)遷居(ju)杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)。他以(yi)唐代詩人(ren)(ren)宋(song)之(zhi)問“桂子月中(zhong)落,天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)云(yun)外飄”的(de)名句為該(gai)店(dian)命名。據傳,當年(nian)(nian)(nian)陸(lu)冷(leng)年(nian)(nian)(nian)曾以(yi)重金酬謝為“天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)”取名提出想法的(de)書生。后(hou)(hou)來(lai)(lai),天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)聲明遠揚(yang),又(you)有人(ren)(ren)譽之(zhi)為“國(guo)色天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)”、“天(tian)(tian)(tian)(tian)(tian)(tian)(tian)下(xia)第一(yi)(yi)(yi)香(xiang)(xiang)(xiang)(xiang)”。天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)開業(ye)之(zhi)初(chu)(chu),生意(yi)不(bu)(bu)是(shi)特(te)(te)(te)別好,陸(lu)冷(leng)年(nian)(nian)(nian)受到(dao)來(lai)(lai)西湖(hu)游玩(wan)的(de)客(ke)(ke)(ke)人(ren)(ren)喜歡(huan)尋購(gou)杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)土(tu)特(te)(te)(te)產,如絲綢織錦、龍井(jing)茶、天(tian)(tian)(tian)(tian)(tian)(tian)(tian)竺筷的(de)啟示,就決定以(yi)經(jing)營杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)風味(wei)為特(te)(te)(te)色。因(yin)此改名為武(wu)(wu)津天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou),以(yi)標榜其特(te)(te)(te)色。陸(lu)冷(leng)年(nian)(nian)(nian)聘(pin)請杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)名廚能師,廣(guang)搜杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)傳統風味(wei)于一(yi)(yi)(yi)家。1929年(nian)(nian)(nian),杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)舉辦西湖(hu)博覽會,國(guo)內(nei)外賓客(ke)(ke)(ke)紛紛進入天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou),天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)的(de)杭(hang)(hang)(hang)(hang)幫(bang)菜(cai)(cai)頗受贊譽。此后(hou)(hou),天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)在上海、香(xiang)(xiang)(xiang)(xiang)港開設“天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)杭(hang)(hang)(hang)(hang)菜(cai)(cai)館”,至今,香(xiang)(xiang)(xiang)(xiang)港地(di)區(qu)、美國(guo)和東南(nan)亞(ya)一(yi)(yi)(yi)些(xie)國(guo)家仍有餐館使用“天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)”的(de)招牌,經(jing)營杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)特(te)(te)(te)色菜(cai)(cai)。天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)地(di)杭(hang)(hang)(hang)(hang)城久居(ju)正宗杭(hang)(hang)(hang)(hang)菜(cai)(cai)首席,在海外亦可謂(wei)香(xiang)(xiang)(xiang)(xiang)飄萬(wan)里。 發展1931年(nian)(nian)(nian),陸(lu)冷(leng)年(nian)(nian)(nian)聘(pin)請杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)飲食業(ye)行家孟永(yong)(yong)泰(tai)經(jing)營,數年(nian)(nian)(nian)后(hou)(hou),孟永(yong)(yong)泰(tai)積聚財力(li),從陸(lu)冷(leng)年(nian)(nian)(nian)手中(zhong)盤過“天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)”獨家經(jing)營。孟永(yong)(yong)泰(tai)是(shi)紹興人(ren)(ren),他善(shan)于揣摩顧客(ke)(ke)(ke)的(de)心理,經(jing)營方式(shi)靈活。當時來(lai)(lai)杭(hang)(hang)(hang)(hang)的(de)游客(ke)(ke)(ke)大(da)多(duo)是(shi)上海人(ren)(ren),他便用魚、蝦、蟹、禽等(deng)鮮貨為原(yuan)料,制(zhi)作上講究清鮮脆嫩,很適(shi)合上海游客(ke)(ke)(ke)的(de)口味(wei)。他還兼(jian)營川、徽、蘇菜(cai)(cai)、以(yi)廣(guang)招來(lai)(lai)客(ke)(ke)(ke),并聘(pin)用技術好的(de)廚師按特(te)(te)(te)長(chang)分工掌(zhang)廚。同時不(bu)(bu)惜工本整(zheng)修門面,建(jian)起了玻璃養魚池,活殺現烹吸(xi)引顧客(ke)(ke)(ke)。孟永(yong)(yong)泰(tai)還建(jian)立蔬菜(cai)(cai)、家禽基地(di),使時令佳肴不(bu)(bu)斷應(ying)(ying)市(shi)(shi),因(yin)而成(cheng)為杭(hang)(hang)(hang)(hang)城的(de)名樓(lou)(lou)。當時天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)是(shi)杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)第一(yi)(yi)(yi)家購(gou)置電(dian)器(qi)冰(bing)箱的(de)菜(cai)(cai)館。夏(xia)令時節,天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)自制(zhi)“冰(bing)豆腐”供應(ying)(ying)食客(ke)(ke)(ke),震(zhen)動杭(hang)(hang)(hang)(hang)城。店(dian)主(zhu)有堅持薄利多(duo)銷(xiao)的(de)原(yuan)則,時常坐在大(da)堂觀察顧客(ke)(ke)(ke),聽取顧客(ke)(ke)(ke)對菜(cai)(cai)肴質量的(de)直接反(fan)映(ying)。一(yi)(yi)(yi)時間,“要(yao)劃(hua)船,西湖(hu)六碼頭;要(yao)吃菜(cai)(cai),杭(hang)(hang)(hang)(hang)州(zhou)(zhou)(zhou)天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)”的(de)俚語不(bu)(bu)脛而走,名揚(yang)滬杭(hang)(hang)(hang)(hang)寧(ning),生意(yi)越(yue)做越(yue)大(da)。該(gai)店(dian)原(yuan)設在教仁街(今郵電(dian)路)南(nan)側,1956年(nian)(nian)(nian)遷至鬧市(shi)(shi)區(qu)的(de)解放路井(jing)亭橋邊,1981年(nian)(nian)(nian)7月改建(jian)成(cheng)三層樓(lou)(lou),面積達2000余(yu)平方米,一(yi)(yi)(yi)次(ci)可接待賓客(ke)(ke)(ke)1000余(yu)人(ren)(ren)。天(tian)(tian)(tian)(tian)(tian)(tian)(tian)香(xiang)(xiang)(xiang)(xiang)樓(lou)(lou)經(jing)營的(de)杭(hang)(hang)(hang)(hang)共,口味(wei)純(chun)正,特(te)(te)(te)色鮮明。東坡肉(rou)、西湖(hu)醋魚、龍井(jing)蝦仁、叫(jiao)化童雞、干炸響鈴、油燜春筍(sun)、鮮栗(li)炒(chao)子雞、春筍(sun)炒(chao)步魚、火踵(zhong)神(shen)仙鴨等(deng)均為該(gai)店(dian)的(de)拿手菜(cai)(cai)。
