特色面點
劉(liu)(liu)長(chang)興(xing)(xing)的(de)面(mian)點主要(yao)有:薄(bo)皮(pi)(pi)蟹(xie)黃(huang)小籠包(bao)(bao)子、五仁饅頭、大肉(rou)面(mian)、鱔魚面(mian)和(he)熏魚面(mian)等。其中最(zui)為(wei)著名(ming)(ming)(ming)(ming)的(de)是薄(bo)皮(pi)(pi)蟹(xie)黃(huang)小籠包(bao)(bao)子,它的(de)特(te)點是:選用(yong)(yong)黃(huang)多肥(fei)鮮的(de)河蟹(xie),不用(yong)(yong)黃(huang)少瘦(shou)而欠(qian)鮮的(de)江蟹(xie);選用(yong)(yong)體(ti)重七八十斤現宰(zai)的(de)豬肉(rou),三成(cheng)(cheng)肥(fei)七成(cheng)(cheng)瘦(shou),放就蟹(xie)黃(huang),用(yong)(yong)手(shou)工(gong)斬成(cheng)(cheng)肉(rou)糜,加入適量(liang) 佐料,調制(zhi)成(cheng)(cheng)餡(xian);選用(yong)(yong)上(shang)等面(mian)粉加入適量(liang)清水(shui),拌(ban)和(he)搓(cuo)揉透徹,手(shou)工(gong)搟制(zhi)成(cheng)(cheng)皮(pi)(pi),皮(pi)(pi)薄(bo)均(jun)勻(yun)有勁(jing),四(si)張皮(pi)(pi)僅有一兩四(si)錢重;包(bao)(bao)餡(xian)時同時均(jun)勻(yun)地包(bao)(bao)上(shang)一份蟹(xie)肉(rou),捏出的(de)花(hua)紋均(jun)在24個左右;入鍋蒸熟(shu)后,花(hua)紋清晰,提起(qi)透明放下(xia)發亮,鮮美至極,被人們譽(yu)為(wei):“劉(liu)(liu)長(chang)興(xing)(xing)一絕(jue)(jue)(jue)”。實際上(shang)何止是“劉(liu)(liu)長(chang)興(xing)(xing)一絕(jue)(jue)(jue)”,應當(dang)說是南京一絕(jue)(jue)(jue)。1947年,蔣介石在介壽(shou)堂(今市工(gong)人文化宮)舉行六十壽(shou)慶時,派專車去(qu)劉(liu)(liu)長(chang)興(xing)(xing)面(mian)館,請高(gao)手(shou)姚(yao)慶林、趙伯良等四(si)人,去(qu)做薄(bo)皮(pi)(pi)蟹(xie)黃(huang)小籠包(bao)(bao)子。自(zi)此(ci),劉(liu)(liu)長(chang)興(xing)(xing)面(mian)館的(de)名(ming)(ming)(ming)(ming)聲轟動(dong)了南京,海內(nei)外都有了知名(ming)(ming)(ming)(ming)度(du)。九十年代,臺灣著名(ming)(ming)(ming)(ming)影星秦(qin)漢、相(xiang)聲大師馬季都慕名(ming)(ming)(ming)(ming)而來(lai),品嘗之(zhi)后,贊口不絕(jue)(jue)(jue),留下(xia)了“天下(xia)第(di)一包(bao)(bao)”的(de)美譽(yu)。
今日傳承
1958年,劉長興面館遷(qian)入現址后,在(zai)老一(yi)代名廚姚(yao)慶林(lin)等人的傳帶下,一(yi)代新秀(xiu)頗具實力(li)。繼承和發展了傳統特(te)色,增加了花(hua)色品(pin)種(zhong),增設了全(quan)市獨(du)有的點心酒席和包(bao)子(zi)宴席,提(ti)高了薄皮小籠包(bao)子(zi)的質(zhi)量。它的特(te)色產(chan)(chan)品(pin)“薄皮小籠包(bao)”以其“薄皮色白(bai),鹵多味美”在(zai)一(yi)九(jiu)(jiu)(jiu)八九(jiu)(jiu)(jiu)年榮獲(huo)國家商業部(bu)名特(te)小吃(chi)(chi)“金鼎(ding)獎”,一(yi)九(jiu)(jiu)(jiu)九(jiu)(jiu)(jiu)六(liu)年被國內(nei)貿(mao)易部(bu)認證(zheng)為(wei)“中(zhong)華名小吃(chi)(chi)”,“香菇蒸餃”,“螃蟹(xie)包(bao)”等九(jiu)(jiu)(jiu)個(ge)品(pin)種(zhong)亦(yi)因制作(zuo)工藝獨(du)特(te)精細,榮獲(huo)江(jiang)蘇省(sheng)貿(mao)易廳“特(te)色大眾小吃(chi)(chi)”金牌。1985年被評為(wei)江(jiang)蘇省(sheng)優質(zhi)產(chan)(chan)品(pin);1989年又榮獲(huo)商業部(bu)頒發的金鼎(ding)獎。
如今的劉長興,經常供應各種包子、餃子、面條、中西菜肴、中西糕點,共有近百個花色品種。。
