水鄉魚(yu)(yu)皮角(jiao),又叫古(gu)(gu)勞魚(yu)(yu)皮角(jiao),古(gu)(gu)勞魚(yu)(yu)皮角(jiao)是(shi)廣東省江(jiang)門市(shi)(shi)鶴山地方(fang)傳統技藝,江(jiang)門市(shi)(shi)市(shi)(shi)級非物質文(wen)之一。2021年2月9日經(jing)江(jiang)門市(shi)(shi)人民(min)政(zheng)府批(pi)(pi)準(zhun)古(gu)(gu)勞魚(yu)(yu)皮角(jiao)入選(xuan)江(jiang)門市(shi)(shi)第(di)八批(pi)(pi)市(shi)(shi)級非物質文(wen)化遺(yi)產(chan)(chan)代表(biao)性項目名(ming)錄。水鄉魚(yu)(yu)皮角(jiao)原產(chan)(chan)及盛(sheng)產(chan)(chan)地為古(gu)(gu)勞上升之升平墟(xu)。遠近馳(chi)名(ming),吃者(zhe)云集。其(qi)特色皮薄餡靚(jing),小巧玲瓏(long)。味道鮮(xian)美,價格便(bian)宜,經(jing)濟實惠(hui)。
古勞魚(yu)(yu)皮(pi)(pi)角(jiao)制作選(xuan)料(liao)上(shang)乘(cheng),造工(gong)(gong)精細(xi):魚(yu)(yu)肉選(xuan)自當地產(chan)的鮮活鯇(huan)魚(yu)(yu),拌以肥瘦參半的豬肉,另加冬菇、馬蹄、陳皮(pi)(pi)、胡(hu)椒、蔥花等十多種配料(liao)搗(dao)制;外皮(pi)(pi)粉料(liao)用(yong)一級生粉與澄面,絕不含(han)糊。片皮(pi)(pi)、搗(dao)餡(xian)(xian)、包餡(xian)(xian),全用(yong)傳(chuan)統手(shou)工(gong)(gong)藝,角(jiao)皮(pi)(pi)特別注(zhu)重(zhong)刀工(gong)(gong),要薄而(er)不破,滑而(er)不爛(lan)。包好后,置小蒸籠中,上(shang)鍋用(yong)猛(meng)火蒸熟(shu)。食時(shi),置豉碟(die)備用(yong);端放桌(zhuo)上(shang),香(xiang)氣撲(pu)鼻,芳香(xiang)醉人(ren),未(wei)動筷而(er)早(zao)傾倒矣(yi)。
相傳明初(chu)洪武年間(jian),地屬肇(zhao)慶府古(gu)勞都的(de)圍墩水(shui)鄉(xiang),正值是古(gu)勞圍興建之(zhi)年代,朝廷派(pai)官員巡(xun)視(shi)督(du)修。當時,肇(zhao)慶州府的(de)州官巡(xun)督(du)“廣橋(qiao)”市(shi)集(ji)(即現(xian)雙橋(qiao)參篤(du)堤段靠(kao)龍古(gu)公(gong)路有(you)一(yi)(yi)小(xiao)集(ji)市(shi)稱為“廣橋(qiao)市(shi)集(ji)”,后(hou)遷移至現(xian)雙橋(qiao)圩市(shi)集(ji)),那(nei)時的(de)廣橋(qiao)市(shi)集(ji),前是黃沙灘,后(hou)是橫海浪,只有(you)一(yi)(yi)間(jian)打鐵鋪(pu),一(yi)(yi)間(jian)紡線店,一(yi)(yi)間(jian)小(xiao)食茶水(shui)店(稱之(zhi)為“驛站”)。
時(shi)值晌午,州(zhou)官此時(shi)甚覺口干舌燥,更兼饑腸響如鼓,吃(chi)欲頓起,于是(shi)便入(ru)店(dian)(dian)(dian)(dian)(dian)詢問店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)可(ke)有進食(shi)(shi)(shi)之(zhi)物,以(yi)解燃(ran)眉(mei)之(zhi)急.店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)一(yi)看,是(shi)個當(dang)官的(de)(de),況且來(lai)頭不小(xiao)(xiao),隨從一(yi)群,店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)不敢怠(dai)慢(man),馬上讓座,沏茶遞水,忙(mang)得不可(ke)開交,心(xin)里盤算著不知拿什么(me)來(lai)招呼(hu)這位(wei)大員(yuan),臉(lian)上顯露出“巧(qiao)婦(fu)難(nan)為無(wu)米(mi)之(zhi)炊”的(de)(de)神情。正當(dang)為難(nan)之(zhi)時(shi),店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)見(jian)(jian)大水缸里恰好養有兩(liang)條四斤來(lai)重的(de)(de)鯇魚(yu)(yu),于是(shi)靈機一(yi)動,一(yi)種“美食(shi)(shi)(shi)”在店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)腦(nao)海形成(cheng),他一(yi)邊囑咐小(xiao)(xiao)二招呼(hu)客人,一(yi)邊到廚房動手劏魚(yu)(yu),只見(jian)(jian)店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)手腳麻利(li),先(xian)把魚(yu)(yu)放血干凈(jing),三(san)下五落二剝(bo)下魚(yu)(yu)皮(pi)(pi),切(qie)好魚(yu)(yu)肉,剁成(cheng)肉團,后(hou)把魚(yu)(yu)皮(pi)(pi)切(qie)成(cheng)長(chang)(chang)寬(kuan)二寸小(xiao)(xiao)塊(kuai),兩(liang)條魚(yu)(yu)共(gong)切(qie)三(san)十八塊(kuai),把已(yi)調好味(wei)料的(de)(de)魚(yu)(yu)肉團按分量放在小(xiao)(xiao)魚(yu)(yu)皮(pi)(pi)之(zhi)中(zhong),再(zai)用(yong)五寸長(chang)(chang)的(de)(de)短線(xian)縫合魚(yu)(yu)皮(pi)(pi),線(xian)尾塞入(ru)角(jiao)肉之(zhi)中(zhong),留寸把長(chang)(chang)線(xian)頭以(yi)便進食(shi)(shi)(shi)。一(yi)切(qie)工序完畢,店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)將三(san)十八只魚(yu)(yu)角(jiao)分兩(liang)碟(die)加火蒸(zheng)熟,熟后(hou)的(de)(de)魚(yu)(yu)皮(pi)(pi)角(jiao)其形象似水鄉河涌里長(chang)(chang)著的(de)(de)水菱角(jiao),色澤(ze)晶白,凸顯魚(yu)(yu)紋,活(huo)靈活(huo)現,出第(di)一(yi)碟(die)熱騰(teng)騰(teng)的(de)(de)魚(yu)(yu)皮(pi)(pi)水菱角(jiao)共(gong)十九只呈(cheng)現于州(zhou)官前(qian)面,官員(yuan)一(yi)看、一(yi)聞,呆住(zhu)(zhu)了,他迫(po)不及待(dai)地伸手往碟(die)里拿角(jiao),店(dian)(dian)(dian)(dian)(dian)主(zhu)(zhu)(zhu)笑而阻之(zhi)曰:“大人且慢(man)”,接著教其吃(chi)角(jiao)之(zhi)順(shun)序:先(xian)用(yong)手拈住(zhu)(zhu)角(jiao)的(de)(de)線(xian)頭,然(ran)后(hou)往裝有佐料味(wei)的(de)(de)小(xiao)(xiao)碟(die)點(dian)一(yi)下,再(zai)進食(shi)(shi)(shi),一(yi)角(jiao)完之(zhi)可(ke)剩一(yi)線(xian)。
州官恍然(ran),隨(sui)即拈住角的(de)線(xian)頭,一(yi)口一(yi)只后把線(xian)高舉說:“世間一(yi)絕,象(xiang)形(xing),美味,口齒留香(xiang),線(xian)不(bu)長(chang)但(dan)長(chang)久。”接著風卷殘(can)云(yun)將一(yi)碟(die)(die)魚皮水菱角一(yi)掃而光,余味未盡再(zai)上一(yi)碟(die)(die),州官連下兩城,共吃了(le)三十八只角。而裝(zhuang)有佐料的(de)小碟(die)(die)卻原封不(bu)動,那些隨(sui)從跟班在旁站立(li),只有垂涎抹嘴角的(de)權(quan)利(li)。
當店主詢問(wen)州(zhou)官(guan)(guan)吃(chi)后味覺(jue)如何,州(zhou)官(guan)(guan)笑(xiao)而(er)(er)問(wen)店主貴姓,答鄙(bi)人(ren)姓關(guan),州(zhou)官(guan)(guan)笑(xiao)道,好姓,隨即叫人(ren)備文房(fang)四寶,寫下一幅對聯(lian)贈給店主,上(shang)聯(lian)為“佳肴(yao)清甜爽脆韌”,下聯(lian)為“廣橋(qiao)一線魚皮(pi)(pi)(pi)角(jiao)(jiao)”。橫額“關(guan)注”(主)。從(cong)此,廣橋(qiao)“魚皮(pi)(pi)(pi)角(jiao)(jiao)”名(ming)聲風靡,遠播海內外(wai),來品嘗圍墩“魚皮(pi)(pi)(pi)角(jiao)(jiao)”的人(ren)絡繹不(bu)絕(jue),人(ren)們(men)常(chang)說:“沒吃(chi)上(shang)魚皮(pi)(pi)(pi)角(jiao)(jiao)者不(bu)算到(dao)過圍墩水(shui)鄉”。可想而(er)(er)知,“魚皮(pi)(pi)(pi)角(jiao)(jiao)”此水(shui)鄉美食品牌,已深深地(di)烙印在人(ren)們(men)腦海之(zhi)中。水(shui)鄉人(ren)善變,求變,在“魚皮(pi)(pi)(pi)角(jiao)(jiao)”的啟迪之(zhi)下,不(bu)斷(duan)創出(chu)本(ben)地(di)美食,如“魚皮(pi)(pi)(pi)干蒸”、“魚皮(pi)(pi)(pi)餛吞”、“魚皮(pi)(pi)(pi)蝦餃(jiao)”、“釀鯪(ling)魚”等。
時(shi)過境(jing)遷(qian),廣橋市(shi)集已不(bu)復存在,但(dan)廣橋魚(yu)皮角(jiao)卻又在雙橋圩(wei)(市(shi))發揚光大,魚(yu)皮角(jiao)的外(wai)衣亦以米粉衣代(dai)替(ti),但(dan)其中(zhong)之韻味(wei)猶(you)存,美(mei)味(wei)有過之而(er)無不(bu)及。
