名稱來歷
龍(long)(long)(long)窖(jiao)(jiao)(jiao)醬(jiang)菜(cai)(cai)因龍(long)(long)(long)窖(jiao)(jiao)(jiao)山(shan)而得名,主要(yao)包括榨菜(cai)(cai)和蘿卜兩個(ge)品(pin)種(zhong)(zhong)。據考證龍(long)(long)(long)窖(jiao)(jiao)(jiao)山(shan)是(shi)瑤文化的(de)發(fa)源(yuan)地(di)(di),位于湖南(nan)省臨(lin)(lin)湘市(shi)(shi)區(qu)東(dong)南(nan),一直是(shi)醬(jiang)菜(cai)(cai)的(de)主產區(qu),以盛產龍(long)(long)(long)窖(jiao)(jiao)(jiao)醬(jiang)菜(cai)(cai)出名。臨(lin)(lin)湘龍(long)(long)(long)窖(jiao)(jiao)(jiao)山(shan)屬幕阜(fu)山(shan)余脈,山(shan)林面積10.5萬畝(mu),最(zui)高峰海拔1261.1米(mi),山(shan)勢高峻、澗深洞長、蜿(wan)蜒(yan)百里,是(shi)為避難(nan)秘地(di)(di)、世(shi)外桃源(yuan)。瑤胞(bao)們在這里留下了(le)令人嘆為觀(guan)止的(de)文化遺跡。這個(ge)“養在深閨(gui)人未(wei)識”的(de)瑤族理想(xiang)家園(yuan)“千家峒”原來就(jiu)在湖南(nan)臨(lin)(lin)湘,遺存的(de)大量石器和種(zhong)(zhong)植物(wu)種(zhong)(zhong),龍(long)(long)(long)窖(jiao)(jiao)(jiao)山(shan)脈內(nei)家家戶戶都(dou)有腌制蔬菜(cai)(cai)的(de)傳統習(xi)慣。龍(long)(long)(long)窖(jiao)(jiao)(jiao)山(shan)脈在臨(lin)(lin)湘境內(nei)蜿(wan)蜒(yan)起伏,龍(long)(long)(long)窖(jiao)(jiao)(jiao)水(shui)源(yuan)現已成為臨(lin)(lin)湘市(shi)(shi)的(de)飲(yin)用(yong)取水(shui)源(yuan),不僅惠澤臨(lin)(lin)湘市(shi)(shi)內(nei),還輻射到周邊的(de)縣(xian)區(qu),龍(long)(long)(long)窖(jiao)(jiao)(jiao)醬(jiang)菜(cai)(cai)就(jiu)是(shi)這些燦爛歷史文化的(de)一種(zhong)(zhong)延(yan)續。
歷史淵源
龍(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)(cai)生(sheng)(sheng)產(chan)歷史悠久,最早可追溯到(dao)神(shen)農嘗百草的(de)傳(chuan)說,一日(ri)來(lai)到(dao)洞(dong)(dong)庭湖(hu)東畔,幕阜山(shan)余脈一處(chu)(chu)(今湖(hu)南臨湘龍(long)窖(jiao)(jiao)山(shan)),但見瀑布(bu)飛瀉(xie),林木(mu)蔥郁,奇花異草滿(man)山(shan)遍(bian)野,甚感(gan)(gan)好山(shan)好景,環顧(gu)山(shan)野住民,卻是饑不裹腹,哀鴻(hong)遍(bian)野,神(shen)農氏(shi)百思不得(de)其解(jie),看此處(chu)(chu)土地(di)肥沃,氣候宜人,但是百姓(xing)生(sheng)(sheng)活(huo)卻十分艱辛。尋(xun)人細問(wen),原來(lai)此處(chu)(chu)確實物(wu)產(chan)豐富,但每到(dao)春末夏初,正是青(qing)(qing)黃不接之時,冬季作(zuo)物(wu)已衰敗(bai),春季作(zuo)物(wu)尚未長(chang)成,人們無處(chu)(chu)取食,神(shen)農氏(shi)了解(jie)原委后,就在山(shan)野找一石洞(dong)(dong)暫居下來(lai),隨村(cun)民一起日(ri)出而作(zuo),日(ri)落(luo)而息,大量(liang)種植(zhi)谷物(wu)與蔬(shu)菜(cai)(cai)(cai),待到(dao)豐收之時,教村(cun)民將(jiang)(jiang)(jiang)谷物(wu)曬干(gan)囤積,將(jiang)(jiang)(jiang)蘿卜、榨菜(cai)(cai)(cai)等蔬(shu)菜(cai)(cai)(cai)采摘(zhai)灑鹽置于(yu)石洞(dong)(dong)中扎緊保存。到(dao)來(lai)年(nian)青(qing)(qing)黃不接時,開窖(jiao)(jiao)取菜(cai)(cai)(cai),則醬(jiang)香(xiang)撲鼻,菜(cai)(cai)(cai)體完好,從此鄉(xiang)民無食物(wu)之憂(you)。當地(di)村(cun)民為感(gan)(gan)謝神(shen)農氏(shi)恩德(de),便將(jiang)(jiang)(jiang)神(shen)農氏(shi)當年(nian)所居石洞(dong)(dong)稱(cheng)為“龍(long)窖(jiao)(jiao)”,將(jiang)(jiang)(jiang)神(shen)農氏(shi)窖(jiao)(jiao)藏之法(fa)所得(de)的(de)蔬(shu)菜(cai)(cai)(cai)稱(cheng)之為“龍(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)(cai)”。從此以后家家戶(hu)戶(hu)都(dou)將(jiang)(jiang)(jiang)吃不完的(de)蔬(shu)菜(cai)(cai)(cai)按(an)此法(fa)進(jin)行儲藏蔬(shu)菜(cai)(cai)(cai),“龍(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)(cai)”也從此流傳(chuan)至今。
關于龍(long)窖(jiao)(jiao)醬菜(cai)制作(zuo)的(de)歷史十(shi)分久(jiu)遠,已無從考證,據臨湘(xiang)鄉間(jian)盛傳的(de)民間(jian)傳說在三國時(shi)期就有(you)早期龍(long)窖(jiao)(jiao)醬菜(cai)制作(zuo)過程和故事的(de)記載(zai):公元208年,三國東吳大(da)將黃(huang)蓋(gai)(gai)臨危受命,秘密進(jin)駐下(xia)雋(jun)縣(今湖南省臨湘(xiang)市)。這里(li)湖泊浩渺,湖垸眾多,黃(huang)蓋(gai)(gai)在此(ci)操練(lian)水軍(jun),當時(shi)軍(jun)需(xu)物資潰乏,既備戰(zhan)又(you)(you)備荒,將士(shi)們(men)生產大(da)量糧1蔬(shu),以(yi)應戰(zhan)時(shi)之(zhi)需(xu)。為戰(zhan)備需(xu)要(yao)他們(men)將蔬(shu)菜(cai)進(jin)行腌制,用土壇裝好(hao),和黃(huang)泥密封,埋于山(shan)邊(bian)湖畔,經七七四十(shi)九天后取出,將士(shi)食之(zhi)味口(kou)頓開,士(shi)氣大(da)振。三國相爭,都以(yi)真龍(long)天子自居,因此(ci)軍(jun)中(zhong)以(yi)龍(long)為名窖(jiao)(jiao)藏(zang),此(ci)地又(you)(you)靠近(jin)龍(long)窖(jiao)(jiao)山(shan),因此(ci)得(de)名龍(long)窖(jiao)(jiao)醬菜(cai)。
但根據現可(ke)查證(zheng)的資料(liao)可(ke)追溯到(dao)宋代(dai),宋代(dai)范致(zhi)明《岳(yue)陽風(feng)土記》:“龍(long)窖山(shan)在(臨(lin)湘)縣(xian)東南,按(an)鄂(e)州崇陽縣(xian),雷家(jia)洞、石門洞,山(shan)極深遠。其間居(ju)民(min)謂之鳥(niao)鄉,語言侏離(li),以耕畬為業(ye),磨豆(dou)腌(a)菜為食(shi)。非市(shi)鹽茶(cha)不入城市(shi)邑,亦無貢賦,蓋(gai)山(shan)瑤人也。”再(zai)是宋馬子(zi)嚴《岳(yue)陽甲志》:“龍(long)窖山(shan)在巴(ba)陵北,山(shan)實峻極。山(shan)有雷洞,有石門之洞,山(shan)瑤居(ju)之,自(zi)耕而(er)食(shi),植(zhi)蔬植(zhi)豆(dou),自(zi)織(zhi)而(er)衣”。
據(ju)康熙《臨湘縣志(zhi)》記載:黃蓋湖產醬菜(cai),曰龍窖,歲(sui)貢九(jiu)壇。
生產地域地理特征
該地(di)域位于(yu)湖南省東(dong)北部(bu),長江中游南岸,地(di)處(chu)北緯29°10′~29°52′、東(dong)經113°15′~113°45′。地(di)處(chu)北亞熱帶(dai)氣候帶(dai),屬于(yu)亞熱帶(dai)季風性濕(shi)潤氣候,氣候溫(wen)和濕(shi)潤,雨(yu)量充沛,四季分明。春季溫(wen)暖,陰濕(shi)多雨(yu),常(chang)為春雨(yu)綿綿,麻雨(yu)稀稀的天(tian)(tian)氣。夏無酷暑,盛吹南風。秋季涼(liang)爽(shuang),時有小雨(yu)。冬季冷濕(shi)無嚴寒,平均氣溫(wen)小于(yu)或(huo)等(deng)于(yu)0℃,每年不超(chao)過5天(tian)(tian),晴(qing)朗天(tian)(tian)氣,時有小雨(yu)。這種氣候條(tiao)件十(shi)分適宜農作物(wu)、蔬(shu)菜、豆類的生長,也為醬(jiang)菜發酵提供了天(tian)(tian)然的環境。
因(yin)長(chang)期受自然因(yin)素(su)和人為因(yin)素(su)等(deng)(deng)(deng)影響,擬保(bao)護區域內內紅(hong)壤和黃(huang)棕壤,土層深厚,養分豐(feng)富,呈酸性及(ji)弱(ruo)酸性,有(you)(you)(you)機含(han)量較高,十(shi)分有(you)(you)(you)利(li)于榨菜(cai)和蘿卜等(deng)(deng)(deng)蔬菜(cai)的(de)生長(chang)。土壤富含(han)養分量及(ji)水平分別為:有(you)(you)(you)機質31.5 g/kg、有(you)(you)(you)效(xiao)磷17 mg/kg、速效(xiao)鉀69mg/kg、全氮2.0 g/kg、堿解氮189 mg/kg,特(te)別有(you)(you)(you)利(li)于種植(zhi)蔬菜(cai)等(deng)(deng)(deng)植(zhi)物。新鮮(xian)的(de)蔬菜(cai)原料,特(te)定(ding)環境下的(de)傳統(tong)工藝,使龍窖醬(jiang)菜(cai)鮮(xian)嫰爽脆的(de)獨(du)有(you)(you)(you)風味。
