上海德(de)興(xing)(xing)(xing)面(mian)(mian)(mian)館原名(ming)德(de)興(xing)(xing)(xing)館,始創(chuang)于(yu)一(yi)八(ba)(ba)七八(ba)(ba)年,是以蘇錫(xi)邦面(mian)(mian)(mian)點(dian)享譽申(shen)城的百年老店。其燜肉秘(mi)方(fang),據說來(lai)自宮廷御廚,德(de)興(xing)(xing)(xing)館在(zai)原汁原味的基礎(chu)上進一(yi)步拓(tuo)展(zhan)傳統口味。目前,裝修一(yi)新的德(de)興(xing)(xing)(xing)面(mian)(mian)(mian)館環境古樸典雅,供(gong)應(ying)(ying)品種已由(you)“面(mian)(mian)(mian)”向本幫桌(zhuo)菜(cai)(cai)和(he)大眾小(xiao)吃發展(zhan),從傳統特(te)色湯(tang)麺、鮮(xian)肉月餅、粽子等,到紅燒鮰魚、八(ba)(ba)寶(bao)辣醬等中檔(dang)菜(cai)(cai)肴一(yi)應(ying)(ying)俱全。此外,德(de)興(xing)(xing)(xing)面(mian)(mian)(mian)館還增設外賣部,供(gong)應(ying)(ying)切面(mian)(mian)(mian)、餛飩(tun)皮和(he)餡、鮮(xian)肉、素(su)菜(cai)(cai)包子、芝麻薄(bo)脆餅、德(de)興(xing)(xing)(xing)燜蹄、爆(bao)魚、素(su)鴨等現燒現賣的熟(shu)食和(he)糕點(dian)。
德興(xing)面(mian)館(guan)以(yi)面(mian)點(dian)、澆(jiao)頭、湯料(liao)優(you)質取勝,自制面(mian)條(tiao),軟(ruan)韌(ren)爽(shuang)滑,久(jiu)煮不(bu)糊(hu)。其蘇錫(xi)幫特(te)色澆(jiao)頭麺有(you)紅(hong)二(er)鮮(xian)大面(mian)、鱔(shan)鴛鴦大面(mian)、燜(men)蹄(ti)二(er)鮮(xian)大面(mian)等40多種(zhong)(zhong)品種(zhong)(zhong)和節(jie)令冷麺(“大”是(shi)長壽(shou)的(de)意(yi)思)。其聞名(ming)遐邇的(de)燜(men)肉(rou)(rou)、燜(men)蹄(ti)、爆魚、爆鱔(shan)四大系(xi)列面(mian)交頭,前二(er)種(zhong)(zhong)肉(rou)(rou)質鮮(xian)嫩酥軟(ruan),入(ru)口即化(hua);后(hou)兩種(zhong)(zhong)咸(xian)甜適(shi)度,原(yuan)汁(zhi)原(yuan)味,軟(ruan)、鮮(xian)、香(xiang),獨有(you)風(feng)味。上(shang)乘菜肴是(shi)上(shang)海風(feng)味紅(hong)燒(shao)鮰魚,八寶辣醬(jiang),油爆河蝦等更(geng)是(shi)別具一格(ge)。德興(xing)鮮(xian)肉(rou)(rou)月(yue)餅06年至今連年榮獲上(shang)海名(ming)特(te)優(you)月(yue)餅,精選(xuan)豬腿肉(rou)(rou),秘制原(yuan)汁(zhi)原(yuan)味醬(jiang)料(liao)調配,口感較(jiao)佳,深受消費者喜愛(ai)。
