1、江蘇南京板鴨
南京板(ban)鴨(ya)馳(chi)名(ming)中(zhong)外。在我國一(yi)直都有(you)北烤鴨(ya),南板(ban)鴨(ya)的美(mei)譽,板(ban)鴨(ya)色香味(wei)俱全,外形飽滿,體(ti)肥(fei)皮(pi)白,肉質(zhi)細嫩緊密,是有(you)名(ming)的江蘇三寶之一(yi),很受當地人(ren)的喜愛。板(ban)鴨(ya)是用(yong)鹽鹵腌制風干而成,分臘板(ban)鴨(ya)和(he)春板(ban)鴨(ya)兩種(zhong)。南京板(ban)鴨(ya)外形飽滿,體(ti)肥(fei)皮(pi)白,肉質(zhi)細嫩緊密,食(shi)之酥、香回味(wei)無窮。
2、江西南安板鴨
南(nan)安(an)板鴨是(shi)(shi)江南(nan)省(sheng)著名的特產(chan)。外形美觀,色(se)(se)澤白凈,皮薄肉(rou)(rou)(rou)嫩(nen),尾油豐滿(man),骨脆可(ke)嚼(jiao),味香(xiang)可(ke)口,誘(you)人食欲。成為國內外市場上的臘味珍品。制作方法(fa)是(shi)(shi)用大余(yu)特產(chan)“大余(yu)麻鴨”生鴨腌制而(er)成。南(nan)安(an)板鴨皮色(se)(se)奶白,瘦(shou)肉(rou)(rou)(rou)醬色(se)(se),咸淡適中。將鴨腌制曬干后,需食時,放(fang)在鍋內蒸熟即可(ke)。具有瘦(shou)肉(rou)(rou)(rou)甘香(xiang)、肥(fei)肉(rou)(rou)(rou)不膩(ni)的特點。
3、福建建甌板鴨

4、四川建昌板鴨
建昌(chang)板(ban)鴨(ya)主產在西(xi)昌(chang)、德昌(chang)等縣、市,具有體大(da)、膘肥、油多、肉嫩、氣香、味(wei)美等特點。據歷史記(ji)載,元、明兩(liang)代,西(xi)昌(chang)原名(ming)建昌(chang),以出產板(ban)鴨(ya)著稱(cheng),故名(ming)建昌(chang)板(ban)鴨(ya)。
