2020年6月(yue)19日,貴(gui)州省(sheng)市(shi)場監管局發(fa)布了(le)關于(yu)端(duan)午節食用粽子的消費(fei)提示(shi),提醒消費(fei)者在選購、烹飪、儲存和食用粽子等環節中需要注意的事項。
一、選擇正規渠道購買具有清晰標識的粽子產品
消(xiao)費(fei)(fei)者在選(xuan)(xuan)購粽(zong)(zong)(zong)子(zi)時(shi)(shi)應從(cong)正規渠道購買。粽(zong)(zong)(zong)子(zi)的(de)尖角容易刺(ci)破(po)軟包裝(zhuang)材料,一旦破(po)損(sun),易造成細(xi)菌侵(qin)入從(cong)而引起粽(zong)(zong)(zong)子(zi)變質。因此消(xiao)費(fei)(fei)者在挑選(xuan)(xuan)時(shi)(shi),需(xu)查看真空包裝(zhuang)粽(zong)(zong)(zong)子(zi)、塑料袋(dai)或鋁箔(bo)袋(dai)粽(zong)(zong)(zong)子(zi)的(de)包裝(zhuang)是(shi)否(fou)完(wan)好,要(yao)(yao)注(zhu)意觀察包裝(zhuang)袋(dai)是(shi)否(fou)有破(po)損(sun)、漏氣或脹袋(dai)等現象。還(huan)要(yao)(yao)鼻聞粽(zong)(zong)(zong)子(zi)是(shi)否(fou)有霉味等其(qi)它異味,清(qing)香味濃郁的(de)粽(zong)(zong)(zong)子(zi)食(shi)用時(shi)(shi)風味更好。同(tong)時(shi)(shi),要(yao)(yao)注(zhu)意觀察粽(zong)(zong)(zong)子(zi)外(wai)包裝(zhuang)是(shi)否(fou)有印刷(shua)清(qing)晰(xi)的(de)廠名、廠址及生產日期(qi)(qi)和保(bao)質期(qi)(qi)等。尤其(qi)是(shi)新鮮粽(zong)(zong)(zong)子(zi),由于其(qi)保(bao)質期(qi)(qi)較(jiao)(jiao)短,要(yao)(yao)盡(jin)可能挑選(xuan)(xuan)出廠時(shi)(shi)間較(jiao)(jiao)近的(de)產品。
二、不過度追求粽葉顏色,注意煮熟煮透粽子
粽(zong)(zong)(zong)葉(xie)過(guo)度鮮綠,并不真實(shi)自然。粽(zong)(zong)(zong)葉(xie)經過(guo)高溫蒸煮(zhu)后綠色(se)會褪去一些,略發黃,屬正常現象(xiang)。消費者在購買粽(zong)(zong)(zong)子時,不要過(guo)于追求粽(zong)(zong)(zong)葉(xie)的顏色(se)。一般(ban)情況(kuang)下,墨綠、黃綠、淡黃都是正常的。
新(xin)鮮粽(zong)(zong)(zong)子、速(su)凍粽(zong)(zong)(zong)子的粽(zong)(zong)(zong)葉應(ying)包(bao)裹(guo)完好(hao),棕體應(ying)形狀完整,無露米、變形現象,粽(zong)(zong)(zong)線(xian)捆扎松(song)緊適度。很(hen)多含有雜糧或雜豆的粽(zong)(zong)(zong)子,需要較長的蒸煮(zhu)(zhu)時間(jian)(jian)才能煮(zhu)(zhu)熟煮(zhu)(zhu)透。冷粽(zong)(zong)(zong)子因(yin)淀粉返(fan)生、脂肪凝固(gu)等原因(yin)不(bu)宜直接食用(yong),否則影(ying)響粽(zong)(zong)(zong)子的口感及風(feng)味(wei),特別是肉餡粽(zong)(zong)(zong)子等含油脂較高,更(geng)應(ying)當煮(zhu)(zhu)熟煮(zhu)(zhu)透后食用(yong)。煮(zhu)(zhu)制時間(jian)(jian)可參考產品(pin)包(bao)裝(zhuang)上(shang)的說明。
三、分類存放,少量購買,隨包隨吃
粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)分(fen)新(xin)(xin)鮮粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)、速凍粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)、真空包(bao)裝粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(常溫(wen)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)),不(bu)(bu)同的(de)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)類別,應采用(yong)(yong)不(bu)(bu)同的(de)儲存(cun)(cun)方(fang)法。端午節氣,天氣比較(jiao)(jiao)(jiao)炎熱,且(qie)南方(fang)地區濕度較(jiao)(jiao)(jiao)高,粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)營養(yang)豐富,含水量(liang)較(jiao)(jiao)(jiao)高,在(zai)這樣的(de)環(huan)境中(zhong)(zhong)容易酸敗,霉菌(jun)等微(wei)生物極(ji)易生長繁殖。常溫(wen)下,不(bu)(bu)能將粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)悶(men)放(fang)(fang)(fang)(fang)在(zai)不(bu)(bu)透(tou)氣的(de)塑料(liao)袋(dai)中(zhong)(zhong),新(xin)(xin)鮮粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)因保質期短,每(mei)次要(yao)(yao)少(shao)量(liang)購買,即(ji)時食(shi)(shi)用(yong)(yong),如能在(zai) 2-3 天內食(shi)(shi)用(yong)(yong)完,可(ke)放(fang)(fang)(fang)(fang)置在(zai)冰箱(xiang)中(zhong)(zhong)冷(leng)藏(zang);如要(yao)(yao)存(cun)(cun)放(fang)(fang)(fang)(fang)多(duo)日,宜放(fang)(fang)(fang)(fang)入冷(leng)凍格凍藏(zang)。常溫(wen)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)可(ke)直接放(fang)(fang)(fang)(fang)在(zai)室內陰涼處存(cun)(cun)放(fang)(fang)(fang)(fang),也(ye)可(ke)在(zai)冰箱(xiang)冷(leng)藏(zang)室存(cun)(cun)放(fang)(fang)(fang)(fang),不(bu)(bu)建(jian)議在(zai)冰箱(xiang)冷(leng)凍室存(cun)(cun)放(fang)(fang)(fang)(fang),以防止包(bao)裝袋(dai)凍裂。如果是自制粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi),最好使(shi)用(yong)(yong)新(xin)(xin)鮮粽(zong)(zong)(zong)(zong)(zong)葉(xie),隨包(bao)隨吃(chi)(chi)。包(bao)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)時手要(yao)(yao)干(gan)(gan)凈(jing)衛(wei)生,食(shi)(shi)材、粽(zong)(zong)(zong)(zong)(zong)葉(xie)、加工器具等要(yao)(yao)清洗(xi)干(gan)(gan)凈(jing),以保證(zheng)制作過程安全衛(wei)生。自制粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)可(ke)用(yong)(yong)高壓(ya)鍋、小火(huo)燜煮等方(fang)式,確保粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)蒸(zheng)熟煮透(tou)后再(zai)(zai)食(shi)(shi)用(yong)(yong)。沒吃(chi)(chi)完的(de)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)需要(yao)(yao)放(fang)(fang)(fang)(fang)冰箱(xiang)冷(leng)藏(zang)或冷(leng)凍,再(zai)(zai)次食(shi)(shi)用(yong)(yong)時須徹底加熱。
四、科學食用,尤其對糖尿病患者等特殊人群
粽子大多屬(shu)于(yu)高(gao)糖(tang)(高(gao)淀粉)、高(gao)能量的(de)食物,食用時,最好(hao)搭配(pei)一些蔬菜(cai)、水果(guo)、湯羹等(deng),既均(jun)衡(heng)營養,又有助(zhu)消化。有糖(tang)尿(niao)病、三高(gao)、肝膽等(deng)疾病的(de)患者一定要(yao)控(kong)制食用量。即使是身體健康的(de)人一次也不宜(yi)過(guo)量食用,以免引起胃腸負擔過(guo)重(zhong),造成消化不良。另外,端午期間,要(yao)注意吃(chi)動平衡(heng),享受美食的(de)同(tong)時,也要(yao)適(shi)量運動。
