刀(dao)切面是一種既常(chang)見又普通的(de)飯食(shi),可以說家(jia)家(jia)會做,人人常(chang)吃(chi),但(dan)乳山市育(yu)黎(li)鎮制作的(de)刀(dao)切面卻(que)獨具風味,在境內外頗有名氣。
育黎(li)鎮位于乳山西(xi)北部,距市(shi)區(qu)約18公里,是境內(nei)較大的(de)(de)集鎮之一。這里制作的(de)(de)刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian)配(pei)料講究(jiu)(jiu),做工精細(xi)(xi)(xi),非普通刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian)可比。育黎(li)刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian)之所以優于普通刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian),有不少獨到(dao)之處。其(qi)(qi)一,講究(jiu)(jiu)刀(dao)(dao)法(fa),做工精細(xi)(xi)(xi),刀(dao)(dao)切(qie)的(de)(de)面(mian)(mian)(mian)(mian)(mian)條細(xi)(xi)(xi)而均(jun)勻,可與現時的(de)(de)機切(qie)面(mian)(mian)(mian)(mian)(mian)相媲美(mei)。其(qi)(qi)二,講究(jiu)(jiu)配(pei)料,普通刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian)調(diao)面(mian)(mian)(mian)(mian)(mian)只兌(dui)水(shui)、堿,外無它料,而育黎(li)刀(dao)(dao)切(qie)面(mian)(mian)(mian)(mian)(mian)在調(diao)面(mian)(mian)(mian)(mian)(mian)時,除了兌(dui)水(shui)、堿外,還要(yao)加摻加食(shi)鹽、雞(ji)蛋(dan)等其(qi)(qi)它配(pei)料,并且(qie)配(pei)料比例因季(ji)節而異,做出的(de)(de)面(mian)(mian)(mian)(mian)(mian)條淡(dan)黃滑嫩,韌(ren)而不斷。其(qi)(qi)三,煮時講究(jiu)(jiu)火候,火候適(shi)中(zhong)煮成(cheng)的(de)(de)面(mian)(mian)(mian)(mian)(mian)條“清而不爛”。面(mian)(mian)(mian)(mian)(mian)條出水(shui)后澆上不同材質、味(wei)道鮮美(mei)的(de)(de)鹵(lu)湯,吃起來別具風味(wei)。
舊時(shi),因同行相爭互(hu)相保密,育(yu)黎(li)刀(dao)切面(mian)只有本鎮幾家(jia)飯(fan)館會做。如(ru)今(jin)這(zhe)獨特的(de)面(mian)藝秘訣已公(gong)開,育(yu)黎(li)刀(dao)切面(mian)的(de)調面(mian)配料比例及制作方法已流傳于社會。每(mei)當古歷逢五、十育(yu)黎(li)集,大(da)街兩旁出(chu)售育(yu)黎(li)刀(dao)切面(mian)者(zhe)最多(duo)。
