始建于明隆慶年間,以經營魯菜起家,集宮廷/山東/清真三大菜系精華為一體的的知名餐館
“劉(liu)伶不比渴(ke)淚如,豪飲堆求酒滿壺(hu),去去且尋(xun)謀一醉(zui),稱西道有柳泉居”。這是舊(jiu)時張笑成的《北京風俗雜詠續編》中一首題為“柳泉居”的竹枝詞。
柳泉居飯(fan)莊是一(yi)家(jia)經(jing)營(ying)(ying)地(di)道京(jing)(jing)味(wei)菜肴(yao)的(de)(de)飯(fan)店(dian),始建于明(ming)隆慶年(nian)間(約1568年(nian)),擁有(you)(you)400多年(nian)的(de)(de)歷史。柳泉居原址在護國(guo)寺西(xi)口(kou)路東,是一(yi)家(jia)經(jing)營(ying)(ying)黃酒的(de)(de)酒館(guan)。因當時小店(dian)的(de)(de)院內有(you)(you)一(yi)棵碩大的(de)(de)柳樹(shu),樹(shu)下有(you)(you)一(yi)口(kou)甜(tian)冽清澈的(de)(de)泉眼井,用這口(kou)井的(de)(de)水釀出的(de)(de)酒味(wei)道醇香(xiang)無比(bi),因此(ci)享譽京(jing)(jing)都。黃酒館(guan)起初本無店(dian)名,因一(yi)個偶然的(de)(de)事件(jian),得名人題(ti)字便(bian)列入經(jing)傳。
相傳在明代,嘉靖皇(huang)帝十分寵信奸臣嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song),說:世上(shang)沒(mei)有殺嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)的(de)刀、斬(zhan)他(ta)的(de)劍。到(dao)穆宗繼位(wei)后,決(jue)心要鏟除奸臣,殺死(si)嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song),無(wu)奈先皇(huang)有言在先,只得(de)罷免了嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)的(de)官(guan)職,給了他(ta)一(yi)只銀飯碗,讓他(ta)茍且活著。北(bei)京人都(dou)恨嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song),在他(ta)被罷官(guan)后一(yi)直(zhi)無(wu)人接濟他(ta),于是(shi)嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)便(bian)(bian)開始沿街(jie)乞討(tao)。一(yi)天,他(ta)又(you)渴(ke)又(you)餓(e),走到(dao)一(yi)家(jia)黃(huang)酒館前再也(ye)走不動了。這家(jia)黃(huang)酒館的(de)掌柜是(shi)個山東人,經營自(zi)釀(niang)的(de)黃(huang)酒十分地道。嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)聞(wen)到(dao)酒香,便(bian)(bian)央求掌柜的(de)賞(shang)他(ta)酒喝。掌柜的(de)一(yi)眼便(bian)(bian)看出手捧銀碗的(de)嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song),早就聽說嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)寫得(de)一(yi)手好字(zi),便(bian)(bian)取來(lai)紙硯筆墨說道:賞(shang)酒可(ke)以,但(dan)你要為(wei)我這小(xiao)(xiao)店(dian)題幾(ji)個字(zi)。嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)稍加(jia)思索便(bian)(bian)題寫了“柳(liu)泉居(ju)”三(san)個字(zi)。這以后不久嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)便(bian)(bian)餓(e)死(si)街(jie)頭,“柳(liu)泉居(ju)”三(san)個字(zi)竟成了嚴(yan)(yan)(yan)(yan)嵩(song)(song)(song)(song)(song)的(de)絕(jue)筆,而這家(jia)小(xiao)(xiao)店(dian)也(ye)因此聞(wen)名京城。
隨著歷史的變(bian)遷(qian)(qian),百年(nian)間“京(jing)城三居(ju)(ju)”到1935年(nian)僅存柳(liu)(liu)泉居(ju)(ju)一家(jia)。偽中央政府(fu)1940年(nian)南遷(qian)(qian)后(hou)黃酒業(ye)衰,柳(liu)(liu)泉居(ju)(ju)漸改為(wei)專營北京(jing)風味菜肴餐館(guan)。1949年(nian)店址(zhi)遷(qian)(qian)至新街口(kou)南大(da)街,北京(jing)解放后(hou)該店曾易名“平安食(shi)堂”、“永進(jin)食(shi)堂”。1978年(nian)恢復了“柳(liu)(liu)泉居(ju)(ju)”字號。老舍(she)先生(sheng)的力作《四世同堂》、《正紅旗下》,均(jun)以此館(guan)做(zuo)為(wei)素材和背景。
1984年,柳(liu)泉居重整“門臉”,經(jing)營面積(ji)由1982年的225平(ping)方米增至450平(ping)方米。一(yi)樓經(jing)營大眾食品,可同時接(jie)待180人就餐(can)。二樓設三間(jian)雅間(jian)和一(yi)大廳,承接(jie)聚餐(can)宴(yan)會。溥杰先生(sheng)題寫的“即壽(shou)而康”、“瓊樓勝境”和胡(hu)絜青女士題寫的匾額使其熠熠生(sheng)輝。
八九十年代,柳(liu)泉居的(de)老經理(li)楊興儒身先士卒勤懇敬業,從廚(chu)(chu)40余年的(de)特(te)級技師王德福及其(qi)徒弟特(te)級技師張鐵元領(ling)灶主廚(chu)(chu),帶(dai)領(ling)干(gan)部員(yuan)工,以其(qi)風味(wei)特(te)色菜點(dian),周到禮貌服務,為企業帶(dai)來(lai)了穩定的(de)經濟(ji)效益。
2001年,在經理屈德森的(de)帶領(ling)下柳(liu)泉(quan)(quan)居重新進行裝修(xiu)改(gai)造,就餐(can)環境得(de)到了改(gai)善,一(yi)(yi)樓大(da)廳(ting)經改(gai)修(xiu)后(hou)(hou)變得(de)更人性化。重張之際請來漫(man)畫大(da)師李濱(bin)聲,特作“民俗四(si)畫”致(zhi)喜。大(da)酒(jiu)缸、醉(zui)(zui)八仙、舊京(jing)喜堂、壽堂等。二樓由原(yuan)來的(de)三個雅(ya)間(jian)改(gai)造成“聚賢(xian)廳(ting)”、“福壽廳(ting)”、“醉(zui)(zui)仙廳(ting)”、“和(he)禧廳(ting)”、“溢(yi)香廳(ting)”、“柳(liu)音廳(ting)”六個雅(ya)間(jian)。改(gai)造后(hou)(hou)的(de)柳(liu)泉(quan)(quan)居不僅在形象上煥然一(yi)(yi)新,還(huan)在菜(cai)(cai)(cai)肴的(de)結構上重新進行了調(diao)整。新添(tian)了部分菜(cai)(cai)(cai)品(pin),如(ru)咸蛋黃(huang)炒雪蟹(xie)、萬福肉(rou)、蔥燒(shao)遼參、炸篷(peng)蝦段(duan)、炒鱔魚糊、扒(ba)白菜(cai)(cai)(cai)等,并重新恢復(fu)了黃(huang)酒(jiu)生意,有特制“柳(liu)泉(quan)(quan)黃(huang)”、圓壇紹(shao)興老酒(jiu)、花雕、十年陳釀、女兒紅、狀元酒(jiu)。與黃(huang)酒(jiu)配(pei)套(tao)的(de)酒(jiu)菜(cai)(cai)(cai)有醉(zui)(zui)蟹(xie)、酥魚、京(jing)豆(dou)(dou)醬、茴香豆(dou)(dou)、水晶(jing)肉(rou)、芥末墩兒等。
柳泉居經過幾百(bai)年的發展,成為經營北京風味菜肴的特(te)色飯莊,不少(shao)社會名(ming)流常常光顧。
