食材:石雞、石耳、高湯、料(liao)酒、精鹽、姜片(pian)、味精
做法:
1、將活(huo)石雞宰(zai)殺,洗凈,斬成(cheng)塊(kuai)。
2、石耳洗凈(jing),備用。
3、鍋上火,加高湯(tang),下石雞用調(diao)料調(diao)味,猛火燒(shao)開后改用小火燉熟,加入(ru)石耳,起鍋裝入(ru)水(shui)盅內即可(ke)。
注意事項:
1、石(shi)雞選(xuan)用新鮮入菜,石(shi)耳要擇(ze)洗(xi)干凈。
2、小火慢(man)燒成菜,方能滋味(wei)可口(kou)。
清代乾(qian)隆(long)年間(jian)北(bei)京劇壇4個戲班(ban)(ban)。即三慶班(ban)(ban)、四喜班(ban)(ban)、和(he)春班(ban)(ban)、春臺班(ban)(ban)。多以安(an)徽(hui)(hui)籍藝人為主,故名四大徽(hui)(hui)班(ban)(ban)。
乾隆五十五年(1790),為(wei)(wei)給乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)帝弘歷祝(zhu)壽,從(cong)徽(hui)州地(di)(di)區征召(zhao)了以戲(xi)(xi)(xi)(xi)曲藝人高朗(lang)亭為(wei)(wei)臺柱(zhu)的三(san)慶班入京,是為(wei)(wei)徽(hui)班進(jin)京演出之始。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)帝大壽之際,百(bai)官朝(chao)拜(bai),京城萬人空巷。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)爺心情甚歡,宣三(san)慶班為(wei)(wei)其表演其徽(hui)劇精華之作《三(san)國志》。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)爺看(kan)的如癡如醉,被戲(xi)(xi)(xi)(xi)里面的情節(jie)深深吸引。不知不覺中,已經(jing)到(dao)了用膳的時間。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)帝入戲(xi)(xi)(xi)(xi)已深,隨手招(zhao)來(lai)身邊的宦(huan)官問(wen)道(dao)(dao)“此(ci)(ci)(ci)戲(xi)(xi)(xi)(xi)為(wei)(wei)何戲(xi)(xi)(xi)(xi)?”,宦(huan)官答到(dao)“此(ci)(ci)(ci)戲(xi)(xi)(xi)(xi)為(wei)(wei)徽(hui)戲(xi)(xi)(xi)(xi)”。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)帝又問(wen)“此(ci)(ci)(ci)地(di)(di)有(you)何美食?”宦(huan)官答到(dao)”徽(hui)州雙(shuang)石”。當(dang)即命(ming)領班進(jin)獻(xian)美食。領班讓(rang)跟(gen)隨進(jin)京的王(wang)(wang)廚(chu)子進(jin)獻(xian)一道(dao)(dao)徽(hui)州特產。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)爺嘗(chang)過后龍顏大悅,問(wen)道(dao)(dao)“此(ci)(ci)(ci)為(wei)(wei)何物?味道(dao)(dao)如此(ci)(ci)(ci)鮮美”,王(wang)(wang)廚(chu)子答到(dao)”石蛙燉(dun)石耳”。乾(qian)(qian)(qian)(qian)(qian)隆(long)(long)帝感(gan)嘆“天下竟有(you)如此(ci)(ci)(ci)美食,滑而不膩,沁人心脾(pi)”。當(dang)即宣布王(wang)(wang)廚(chu)子加官進(jin)爵,成為(wei)(wei)宮(gong)廷御廚(chu)。命(ming)此(ci)(ci)(ci)湯為(wei)(wei)“龍王(wang)(wang)湯”為(wei)(wei)宮(gong)廷御膳。此(ci)(ci)(ci)后“龍王(wang)(wang)湯”成為(wei)(wei)皇家(jia)貢品。
王(wang)御廚當時給(gei)乾隆爺(ye)燉湯(tang)的配方也(ye)傳承到王(wang)氏后(hou)代中,至今王(wang)家已成為(wei)第8代傳人(ren),據野史(shi)記(ji)載(zai)當(dang)時進獻抓(zhua)取石(shi)蛙的地方在黃山市休寧縣源芳村一個深(shen)潭(tan)旁,故美其名曰“龍(long)王潭(tan)”。
