1、看色(se)澤:良質(zhi)豆(dou)腐干,呈乳白色(se)或淺黃(huang)色(se),有光(guang)澤;次質(zhi)豆(dou)腐干,比正常豆(dou)腐干的顏(yan)色(se)深;劣質(zhi)豆(dou)腐干,色(se)澤呈深黃(huang)色(se)略微發紅或發綠,無光(guang)澤或光(guang)澤不均勻。
2、看質(zhi)地(di)(di):良質(zhi)豆腐干(gan)(gan),質(zhi)地(di)(di)細膩,邊角(jiao)整齊,有一定的彈(dan)性(xing),切開處擠壓不(bu)出水(shui)(shui),無雜質(zhi);次質(zhi)豆腐干(gan)(gan),質(zhi)地(di)(di)粗糙(cao),邊角(jiao)不(bu)齊或(huo)缺(que)損,彈(dan)性(xing)差且易被折粘,切口處可(ke)擠壓出水(shui)(shui)珠;劣質(zhi)豆腐干(gan)(gan),質(zhi)地(di)(di)粗糙(cao)無彈(dan)性(xing),表面粘滑,切開時(shi)粘刀,切口擠壓時(shi)有水(shui)(shui)流出。
3、嘗味(wei)(wei)(wei)道:良(liang)質(zhi)豆(dou)腐(fu)干(gan),具有(you)豆(dou)腐(fu)干(gan)特(te)有(you)的(de)清香氣味(wei)(wei)(wei),無其他異味(wei)(wei)(wei),滋(zi)味(wei)(wei)(wei)純正(zheng),咸淡適口;劣質(zhi)豆(dou)腐(fu)干(gan),有(you)餿味(wei)(wei)(wei)、腐(fu)臭味(wei)(wei)(wei)、酸(suan)味(wei)(wei)(wei)、苦澀味(wei)(wei)(wei)等不良(liang)滋(zi)味(wei)(wei)(wei)。
